A cup of cooked cauliflower (about 250 grams worth) would have about 12 grams of carbs. So if you had 3 cups a day that would have been about 36 grams of carbs. Plus your other carbs.

I know myself, if I get 90 grams a day my blood sugar is out of control. I had that experience eating Atkins bars with 2 grams net Atkins count (TM). I thought it was 2 grams of carbs per bar, but it was 2 Atkins count, with the trade mark, not the same thing at all.

Sorry James for being all over the place with my posts! LOL

This recent high sugar episode was most likely due to me eating 1-2 cups of riced cauliflower for each meal.

The doctors told me that I went into DKA because of several factors. . .one being high blood sugar due to dehydration. I didn't know that dehydration caused high blood sugar. I googled to make sure and it's true! I was surprised that not being able to drink or eat for 3 days straight caused me to get HIGH blood sugar. . . .when my intuition would tell me my blood sugar would crash.

I was mixing up several things in my posts I think! Sorry for the confusion :)

call me slow ... OK, I am slow ... What is going on with your blood sugar? Was it up due to dehydration, and not necessarily due to food choices?

It's so counterintuitive. You figure that if you're not eating or drinking. . . .your blood sugars would tank. That's what I would think anyways. . .but that is why prolonged vomiting is dangerous for diabetics. I had no idea. I just thought I had a stomach bug and was going to ride it out. But since I didn't know, I tell people this because apparently, it's not common knowledge LOL

The zoodles were awesome! Another food I can add to my list! I sauteed it in butter, added lotsa cheese and put 2 tbs of low carb marinara.

I've decided I like zoodles and had some for dinner today. I checked the carbs on zucchini and I think I'm okay.

I knew about glucogenisis but I don't think I was getting into that zone when I was eating bacon only, my blood sugar was very low. 60s-70s.

I'm going to try to add more foods but a lot of stuff I just get nauseous over and I didn't realize this but being dehydrated jacks up your blood sugars. . .that's how I got into DKA. . .I had high blood sugar from not being able to hold down food or water for 3 days straight.

I had been in the VirtaHealth Keto plan the past few months and I was also thinking about the glucogenisis effect James was referring to.

I have never had the DKA but I understand that's more like if blood sugars were like 300 or higher and the high ketones.

Can't help you on the pork belly etc as I found I couldn't deal with fatty red meats whenever I could get beef bacon (few and far between). But adding butter over chicken, salmon, turkey etc seems to agree with my system. I get terribly constipated on a meat only diet. We're just different that way...

I hope you get some good answers!

Not sure because I buy a 3 or 4 pound chunk and smoke it..then just cut off s chink and warm it for a meal. I do know they always want to slice it for me..so I’m sure you can just cook it like bacon

When I was eating just bacon, my blood sugars were at about 70. So that's about where I want it. . .I could go a bit higher but I didn't feel as if I was hypoglycemic or anything.

I'm going back to eating just bacon and introducing some veg little by little and testing more often to see how my body tolerates it. Mt threshold for it might be low.

I had a cauliflower bowl this morning and when I tested with my keto sticks, I had less ketones than before.

I'm going to look for pork belly and see how I'm supposed to cook it. Does it have the same texture as bacon?

I'm RIGHT THERE with you on the organ meat. Maybe if I can hide it in a smoothie HAHAHAHAHA. I take a multivitamin and electrolyte supplements because I know my diet isn't varied enough to get all the nutrients I need. I am not a picky eater per se but these days a lot of food just makes me nauseous. So I eat what I can. So farm bacon comes out a clear winner because. . . .it's BACON!

It concerns me a bit because it just seems like it's full or preservatives and maybe a bit too processed. I need to find a fatty meat I can eat and actually enjoy. I kinda like chicken wings too.

I used to have BPC every morning but I seem to have lost the taste for it as in, I can't drink it without gagging. But I'm just glad that it's not hard for me to not eat carbs and that I've stated in ketosis these past several weeks.

Hi Jules!


What came to mind first was gluconeogensis. How many grams of protein are you eating per day? If it is more than 50 to 60 grams of protein (so more than about 200 grams of meat) and the body has to deal with the excess protein.

Gluconeogensis means "create new glucose" and you body can do so from excess protein. If you don't have a blood sugar problem, blood sugar goes up and insulin stores the excess glucose made, stores it away into body fat. Sort of simple, eat too many calories and you gain body fat.

For folks like you and me (type-2 diabetics), the raise in blood glucose is not handled so well by insulin, as there isn't quite enough insulin, so blood sugar goes up, and stays up when we eat excess protein.

What do you think?

Though it could be veggies too. I think you have to play with things.

Plus bacon tastes better!!!

the one thing i found on not eating veg, is that you should eat some organ meat to get the correct nutrients. yeah not me. so some take dessicated liver pills. not me either..so i just have some veg in really small quantities...

I'm betting you see a huge difference in your BS numbers cutting some of the cauliflower.

I think you might be right. The information I found listed it to be way lower, that I was getting about 5g net carbs per bowl. I might have to really limit how much of it I eat.

This is so effed up because the only reason I started adding cauliflower and zucchini is because all I was eating was bacon HAHAHAHA and I ended up messing my blood sugars up.

I'm going to go back to meat only and see how my blood sugars react. Or maybe WAY less veggies.

I dont know ANYTHING about DKA so cant comment on that.

i do think the cauliflower is your culprit on the blood sugar. A cup of raw ..and thats florets, so its not REALLY a cup with all the air space, is 5.3 grams of carbs. Ricing it, its going to be far more..if you are having 2 cups 3 times a day, even figuring it at say 14 grams, which is, i'm sure, way under what it really is, you are at 42 grams of carb...well over anyone's definition of keto. add to that another carb or 2 for the cheese...

I am not diabetic, so dont know the ins and outs of that, either. But I would say, if there is any way you can substitute the cauli, or some of it, for something else, just to test it and see if it is effecting you, that would be a starting point.

So, the old timers here know that I took myself off of all my diabetes meds after starting keto and working out. . .my A1C tests show the blood sugar numbers of someone without diabetes.

I suppose I got a bit too cocky and started not tracking my food or working out as much for a few months this past year. I'm getting my behind back in gear by testing my blood sugars every day and logging my food etc.

I know it's not really health to not vary your food, but in the past several months, I had a hard time with my appetite so all I ate was pretty much bacon. Bacon and black coffee. I was throwing ketones and my blood sugar stayed around 70.

Fast forward to this past week. I've been eating riced cauliflower with butter and cheese. (For every meal because it happens to be what I can eat for now.) and black coffee. My blood sugars have been in the 150s. I'm still throwing high levels of ketones according to my ketosticks.

I've been in DKA before and I honestly wanted someone to take me out back and shoot me. If I'm remembering things right, high ketones plus high blood sugar is the recipe for DKA, correct? What puzzled me is I don't know what is spiking my blood sugar. I have about a cup or 2 of riced cauliflower, 2 tbs butter and 1/2 cup of cheddar cheese 3 times a day. Pots and pots of black coffee.

It's just really throwing me off because I'm not eating anything "bad" and yet the high blood sugar. Can anyone throw some ideas out? I'm at a total loss.
