I hear all of you. It's ME and only ME who can choose to control my cravings and choose wisely. I just don't always do it. As a result, I'm no longer in ketosis and have to start all over again.

I'm addicted to carbs, too so I know exactly what you mean, Holly. I'm like a drug addict who can't get enough once I take that bite.

I wish they had a brain surgery that works as well as the weight loss surgery because my brain is my worst enemy!!

Well your will power in abstaining when you bake it and smell it every day is incredible Holly. I get misty when I walk out of Walmart and smell Subway baking their loaves of bread.

I miss it, but I like fitting in smaller clothes. And feeling healthier. And knowing I am doing the right thing for myself.

Wanda..i plan ahead. birthday? i make myself a keto mug cake. i even split it and frost and fill it with keto buttercream. its different, special, and i dont feel like i missed something.
i'm scared. yeah. scared. to ever be over 300 again. heck, to be over anything but what i am. thats what keeps me from having stuff. trust me i'm no saint. i have to bake bread...rolls..all the time. the smell KILLS me I want some so bad. I cant tell you the number of times i've thought..just one small taste wont hurt. but i know. i KNOW me. one taste will be one slice, then half a loaf, then oh hell i blew today might as well have all the stuff i havent had. and i'm not exaggerating.
for me, its much like an alcoholic with booze. one taste and done...
i'm an addict. a carb addict. so its none or i'm back in it. and i dont ever want to be there again.

I agree with you James - I view a special dinner as something more elaborate than I would usually cook. Ribeyes, prime rib, scallops - I love those and rarely cook them myself. And any salad that someone else makes is a salad I like to eat.

We are having a family dinner on Sunday - my husband is grilling steaks, I'm making broccoli and salad and a family recipe cake (special frosting that takes hours to make) for my brother in law's birthday. Everyone will eat keto until dessert, then I will abstain. It's getting much easier to just say no.

I think there are too many special occasions. On my own birthday we often go to a restaurant, and I don't view it as "its my birthday, so I'm gonna eat things I usually don't eat".

I view it as "its my birthday, so I'm gonna eat expensive food", and that expensive food ends up being:
- steak
- well prepared veggies
- a fancy coffee, maybe with some whiskey or similar in it

Still very low carb.

If you are at an occasion with family and there is:
- mashed potatoes
- regular sugar filled soft drinks
- breaded chicken
- a selection of desserts

then this is another story. But you still have the final say in what you eat.

Holly I wish I could get my brain to think they way you do so that I could stay on track better. I go along great, then a special occasion happens and I fall off the wagon. My brain is still over 300 lb and wants to eat that way, even though it has been 8.5 years since my surgery.

For those of you new to this team, perhaps wondering about how "safe" it is to cut out a major food group, carbs, let me tell you that its perfectly safe. It may not be normal, but that is because food high in carbs have a very long shelf life, and are "practical" for that reason.

If someone put a bowl of white sugar in the pyramids, 3000 years ago, would we be able to eat it safely today? Probably. What about meat or veggies? Probably not.

I figure if the bacteria leave it alone, so should I. But have a look here on Wikipedia about carbohydrates:

Down on that page (not a site promoting eating Keto or anything else) it says:
"Carbohydrates are a common source of energy in living organisms; however, no single carbohydrate is an essential nutrient in humans. Humans are able to obtain all of their energy requirement from protein and fats, ..."

So this team focuses on the nutrients.

Well used to live in Edmonton in Canada, in the middle of the prairies. The prairies these days are just huge wheat fields, ... not Keto, not Keto.

Now I live just outside of that city, not in the wheat fields, but in an area with sandy hills. The farmers figured out this would be a bad place to grow wheat, not flat, and all that sand. So they never cut down the trees.

There are hills, and fir tress, and deer, but no bears. The most dangerous four legged creatures here are squirrels. My wife thinks its the coyotes that I should watch out for, but I don't think so, I want to think that they are like friendly shy dogs, its the squirrels, ... sharp little teeth.

All those berries would be so tempting. I have a small section of berries but most years they get frost before they get near being ripe. If they do ripen it's a race between my son and the birds and they don't leave anything behind that is edible.

h Sadie be so glad!! with my knee its hard for me to work. When i was doing rangering i walked ALL the time. hiking in the mountains doing backwoods education, or days with seeing noone..but when my knee went that all stopped.
I actually talked to a friend of mine that is a true full time all the time career ranger..and asked if maybe he would help me with some shorter hikes..i'd like to try again, but would need someone with me that knows CPR and can be calm if my good knee dislocates. Hes big into search and rescue so i think he would be great and i'd be really comfortable with him. so we will see..in that calm time between summer and hunting season when the rangers get a lull....
i just finished painting and putting centers in 350 candy forget me nots i made for a wedding friday. i'm heading for the pool.
and my sad of the day...just went to the blueberry farm up the road and bought another 8 quarts. its so freaking hard to not have even one...they smell so good just picked and sun ripened. I dont know if i will ever get past not being able to have fruit. '
and then...i picked what is the next to last picking of raspberries yesterday. there are a few more to go, but it wont be more than another quart. i have 22 quarts in the freezer and gave away a bunch more..i think i ended up with about 40 quarts. and i took a little walk across to my wild blackberry patch across the street...and oh. my. lord. the canes are LOADED. bending over to the ground..but not too many ripe. i picked what there was and got about half a quart...but the next few days and weeks there are going to be quarts and quarts of them..sigh. again. to the freezer. theres some days i really wish i could break keto and just have some..but i know better.

Sounds like the keto cupcake business is good this week Holly 😁🎂

I retired my Fitbit tracker. I have the opposite problem of most people. I have trouble sitting still. A very slow day was over 20,000 steps. Most days were 30,000 to 40,000 steps. I started getting pain in a foot and my husband was pushing me to sit down more and take a rest. It got to the point if I didn't hit 30, 000 steps I felt guilty. So no more Fitbit for me and my foot is doing much better.

Good Morning. Thanks Holly & James your recipes are SUPER!
Today I made Holly's pancakes for the first time. They came out great! I think they taste more like a crepe. I made four large ones and treated as a crepe. Fresh Blueberries and whipped cream on top. I gave two to DH and two for me. OMG. To my surprise DH liked them too.
I need to get a waffle iron now so I can test out James waffles too. I will eat the waffles with butter but I am sure my DH will use two waffles to make an ice cream sandwich, oh well.

Yes, I can walk and walk. I usually walk between 8,000 - 10,000 steps daily. I wear a FitBit tracker and it is set to my personal step size. That is how I know it is correct. I usually get those fireworks in the afternoon. They go off at 8,000 steps. This is something that I started doing years ago because every time I try and do other types of exercise I usually end up hurting myself- pulled muscles/tendons, back ache etc. So I only walk but I walk a lot. I always wonder if I didn't walk this much would I be much much larger?? I think so.

My favorite thing to do is walk on a beach for miles and miles. But I haven't done that for awhile since I now live in the mountains. I hoping to do that at the NJ shore in August before the summer ends.

Great idea Holly - I have a vivofit garmin, no fireworks on mine. Since I've gotten it - around 3-4000 a day.

I'm trying for 6000, then 7000 etc until I get up to 10000. But for now, only 3 days a week. My poor feet.

On the other hand - congrats on your keto cupcake menagerie!! That's a great uptake in business!!

we dont realize how much we DONT walk. i remember getting my first "real" pedometer. i thought it was broken. 2000 steps? that CANT be right. took it back. got another. even less!!! these things dont work. then i got my spark tracker. same thing again. i had to finally admit i THOUGHT i was moving but i wasnt.
now my kids got me a fitbit blaze last Christmas, since the sparktrackers no longer are supported anywhere. and i MAKE it work. i look at it at noon..if i havent done 5 k i get up off my cake decorating stool and get there..and if the fireworks on the thing havent gone off by 7 pm telling me i've made 10k steps i go out and walk on my track till they do.
KD i know the sore...when i do the fairs i have to walk a lot more...when i went to disney the first day i thought i wasnt going to make the rest of the days. but every day i did it got a little better...
I still need to step it up (see what i did there?) and thats my fall goal.

on another note. yesterday one of the keto coaches posted that i was shipping her order of keto cupcakes today...and oh. my. goodness. i got FLOODED!!! so i'm off to the store for ingredients...gonna be a long, long week...!!

Wow Kathleen - are you used to walking that much? I did 16,924 steps on Saturday. Most of it was a 6 mile hilly walk with ladies who like to go fast.

I'm SO SORE. From my calves to my hips. Everything aches. I gave my self Sunday off, and today I'm going to walk at least 2 miles.

I'm increasing my mileage as safely as I can, and still get off my tuchus and go.

We have been enjoying lots of squash and ripe tomatoes from the garden also.

I love to make zoodles with the squash (eat them raw) topped with diced tomato, diced cucumber, mozzerella cheese, basil leaves and toss with EVOO & vinegar. Taste like you are eating cold spaghetti salad.

I had my Keto pancakes again (James recipe). I took two out of freezer and put into microwave for a minute. Perfect! Butter and cinnamon on top. I don't have a waffle iron (yet) but they sure do look delicious.

Saturday was a good day for me. I walked 18,000 steps ( 9 Miles) while we were out for the afternoon checking out a new casino built in the Catskill NY. It was a fun day.

james not on the evenly cooked..they are almost like crepes they are so thin for pancakes..so they cook fast and well..thats why i didnt think they would be ok in the waffle maker. easier..yes..i never did like flipping hotcakes!

Yes those waffles look great - and your squash recipes sound excellent as well!!

And I would fill my fridge with 77 cent chicken thighs... we get leg/thigh portions regularly at 99 cents and I do like to buy those.

More pulled pork today, along with cauliflower and cole slaw. Slow Sunday.

Holly I have been sauteing squash with everything this past week or two. I just throw it in the pan with anything. Tonight I'm going to shred a small one, drain it and see if I can fry it like a hashbrown then top it like a pizza. It may be too soft but worth a try. I don't waste anything and my two squash plants have been generous.

I hit an awesome score at the grocery store. I usually pay $1.49 per pound for chicken thighs. They had the same ones I normally buy for .77 cents a pound! I bought all 11 family packs they had. So lots of chicken and squash here.

that sounds good, too, sadie!! one of my customers brought me six small zucchinis and yellow squash. going to try making a casserole with sliced squash, cheese, cream, parmesan, chicken, and more cheese on top. i think it will work....i'll do a small one and if it wont set up i'll try another with some egg mixed in, too.
come to think of it..if i did a mix of ricotta, mozz, parm and egg, sliced the squash in half and hollowed out the seeds and put that in..hmmm. thats what i use to fill stuffed shells..yeah maybe thats what i'll do!
results to follow tomorrow, if i'm not too lazy to do it today..LOL!!

I made sushi rolls last night with a cauliflower riced mixed with cream cheese. Not bad with shrimp and avocado.

I have been on a buffalo chicken kick. I shred already roasted thigh meat in a skillet with olive oil, cook again then add Frank's hot wing sauce. Then plate, add shredded mozzerella cheese and maybe a bit of avocado, or sour cream, whatever I got on hand. Yummy if you like a bit of spice.

thanks wanda!! do what? the waffles? they are really light and fluffy. its 2 eggs and 2 ounces of cream cheese..i'd have that if i was scrambling eggs...so its no more than a normal meal. just looks like a lot more!! the bacon is very thin sliced..those 3 slices are 2 oz uncooked.

Thanks Rita!! and yes..all you said is true. i have never, ever had anything but tree trunks for legs. and still dont..but..they are now shaped different. its really odd how that happens. and no matter what my whole life from the age of 9 i had huge bazoombas...even when i lost i never lost there. with keto? yeah like someone popped a balloon..not real happy with that but...do i want that or fat?? i'm trying to embrace all the changes, including saggy skin and things...

Answer to question can you make waffles out of my cream cheese pancake recipe that has no nut flour or protein powder? Answer..yes! yes you can!!



so heres what i did.
2 oz cream cheese
2 eggs
3/4 tsp baking powder
1/2 tsp vanilla
1/2 tsp cinnamon
1/2 tblsp melted butter (i didnt melt it the bullet breaks it up enough)

whizzed it in my magic bullet. I did spray the waffle iron with olive oil..once total and did 3 batches. now..heres the thing. i dont make waffles often. so i dont know how much goo to put in..and the first one i made sure the batter went all the way to the edges. DONT. seriously. dont. it makes a mess all over the counter.
and DO leave them in longer than you think if you like them crispy. i took the first 2 out too soon. they were floppy. i left the next 2 batches in longer and they were perfect.

Wow,
I've been doing this for 3 months.
I'm down 25 lbs
I've mastered creating fat bombs.
I made it through recovery from oral surgery without cheating. :)
I've been pulling some clothes out of the back of the closet that I haven't been able to wear in years and putting them into rotation.

This way of eating has been really easy to transition into for me. It's like I've been told "All those foods you grew up eating and were told are bad for you are ok to eat." Eggs, bacon, burgers, mayonnaise, etc, etc, etc.

I'm struggling with tending towards too much protein (still).

Body changes are bewildering. I can fit into some smaller clothes, but others not so much. I think it's most likely that the cut of the clothes is to blame. Some can handle the re-arrangement of my body mass better than others. I've even had issues with a pair blue capris I used to wear. I wore them last week, I've dropped 2 more lbs. and today I can't get them on.

I am struggling with the concept that just because you loose weight until you get to xxx doesn't mean you will have the same shape as you did 20 years ago when you last weighed xxx. I hate shapewear, but supportive garments may be necessary for me to much in the way of excercise. I know that sagging is part of this process, but I need to figure out how to deal with it sooner rather than later.

Thanks KD!!! I think we are all still on our way..i dont feel done at all. I had a college reunion yesterday and i have to tell you it was pretty cool..noone knew me..when they did finally reaize it was me it wasnt the weight loss they didnt recognize me for..it was, according to most, that instead of aging i'd turned back the clock. Cant tell you how much that meant!!!

James's recipe has more structure than mine...mine makes one serving so i never have tried freezing them!!
James looks far closer to "real" than mine..most recipes i found have almond flour in them, which ups the carbs a HUGE amount..and i'm always looking for ways to save on carbs..so...thats why i make the thin ones!!

On the syrup...log cabin brand makes one. walden farms. usually a store brand. i looked at labels and got the one with the least carbs...and used it sparingly. problem is i like a lake of it, thats why i made up my own...

Richard. I'm going to post pictures. this is a tough one for me..i rarely post a pic..but if it helps anyone to see what 8 months of keto did...so be it.


edited to say: top one was NOT at my highest weight. it was about 30 pounds under. i seriously would not allow ANY pics taken of me when i was that big. that was at my sons graduation in 2010. i went down and up the same 10 pounds over and over..
sorry the second pic is sideways. doesnt give an option to flip.
and third pic is with my boys. the one on my right is the one that told me about keto and pretty much said Mom..we want you around. just try. if you dont like it stop. but please try..as you can see from the grad pic from 2010, he was large too (my whole family is) he lost 90 pounds in 9 months on keto.

All ingredients you are likely to have, except perhaps for the protein powder. I've made it with vanilla, chocolate, strawberry and plain protein powder. All good except the last one. The flavours come through in as subtle way, though vanilla gives a taste closest to regular waffles or pancakes.

I do like the batter more for waffles than pancakes, you have to make the pancakes smaller ... Same batter in the waffle maker and I don't need to give that a thought.

No idea about how well they freeze, I eat them first, but I don't see why they wouldn't do well. You might want to make a double or triple batch as the recipe I posted only makes about 8 waffles.

James, these pancakes look sooo good, they are higher than mine are. Is this recipe the same as Holly's. I am making a batch this weekend to freeze, Do they freeze well?
I am going to the grocery store tomorrow and will look for a low carb syrup. If not, butter is fine for me too.

i wish i'd ever had one KD!! i was born fat..i was a fat kid, teen, young adult...on and on.
and i never sat still...i lived at 200 MPH...i ran track. showed and trained dogs. hiked mountains. was on the swim team. woodsmens team. probably the only fat professional lifeguard ever. it didnt bother me so it was never an impediment.
amazing that something so simple as keto was the answer...

Health is so much more important than shoveling (even good tasty) food into your mouth.

But I recognize that there are those who do not need to eat keto to be healthy - so I keep my way of eating to myself, and let others do so as well.

Young, healthy revved up metabolisms... man I wish I had mine back!!

another thing proving how different we all are. i love sweet. i'd rather have dessert than anything else (and often did) but after one week on keto i didnt want it.
i do make cream cheese fudge. i make keto chocolate chip cookies once in a while, or a mug cake, but more to break the boredom. i truly dislike keto food..meat isnt my first choice of anything, i do like cheese but even that is no longer something i look forward to.
i've said it before..i had to totally change my mindset from "food is yummy, fun, social, celebratory, comforting" to "food is fuel. period".
its especially difficult when food is your livlihood. i cant even let myself think about never having another soft ice cream cone in the summer. never having another bite of warm apple pie. never having another spoon of mashed potatos. and the worst...never biting into a juicy mango.
so i just dont think about it..dont let it have any power over me. that change of mind was not easy for me..at ALL. in fact, it was the hardest thing i've ever done. my doc and i talked about it the other day at my appointment. she said..i'm sad for you. our society puts so much emphasis on food..
i'm sad for me, too. but i'll be here a lot longer because i did the mind shift...so i'm grateful i was able to.

I found my sweet cravings took about 4 months to settle down. In the first few months I would stop at a convenience store and get a chocolate bar or two, and eat them of course.

At this point, I can't even remember the last time I ate a chocolate bar. Yes I have the odd square of dark chocolate, but not a candy bar.

I'm surprised that after eating Keto for a number of months that sweet corn, and other things are still attractive.

There are some sweet things I like, such as fake maple syrup in small quantities, but mostly sweet things are unattractive to me. Sweet corn is sort of neutral in my mind, sort of attractive, but when I imagine eating it, along with all its flavours, it seems too sweet.

Similarly I do eat a little (at most 2 squares, but usually zero to one) dark chocolate, 85% cocoa. We do have a bag of 72% little individual squares in the house, and on occasion (like once a month) when I eat one of those it is unpleasantly sweet, and that is considered dark chocolate.

The last 2 weeks have been busy. I worked at our county fair 4 nights until almost midnight each night. This old woman doesn't like those late hours! No will power to stay out of the food we were selling. This week has also been busy. Meeting Monday night - again food. UGH! Went to St. Joseph, MO (*about 75 miles from here) with a friend on Tuesday for a girls day shopping - and Mexican food. Then yesterday evening dinner out with several friends to celebrate July birthdays. We packed our camper today and took it out to the lake. We won't stay out there tonight, but the weekend is calling. Campfire food is the best! It's supposed to rain. We need the rain badly, but I hope it waits until we are in bed before it starts. It is the only weekend this summer we have been able to camp. Friends we are camping with are bringing sweet corn. It is to die for on the grill. Guess I'll have to get back on track Monday. My willpower is zero!!

In the United States I think there are other syrups, and I'm sure Holly will suggest one.

I'm in Canada, and I use the "E.D. Smith" no sugar added syrup, I can't use the words "maple syrup" because no maple trees were hurt making this syrup.



My nutrition calculations show 16% of the weight is carbs.

This is higher than my 6% guideline, its too carb dense. But I just don't pour it like crazy over my waffles. I'm eating waffles this morning, what a coincidence. So plate and waffles on my digital scale, and weighing the syrup alone, 15 grams of syrup, and that makes 2.3 grams of carbs.

Now I know that the waffles themselves are almost zero and not worth worrying about, then the cream in my coffee, probably another 2 grams in my two cups of coffee.

Breakfast about 4.5 grams. Now if Holly (NIGHTSKYSTAR) has a different syrup, with no carbs, then I'd be at about 2.5 grams for breakfast, and most of that from the cream in my coffee.

Chris this is the recipe i use..from I Breathe I'm Hungry...the only thing i do different is make 6-8 pancakes because its so thin!! but they taste GREAT!

INGREDIENTS
2 oz cream cheese
2 eggs
1 tsp granulated sugar substitute (IBIH recommends)
1/2 tsp cinnamon

INSTRUCTIONS
Put all ingredients in a blender or magic bullet. Blend until smooth.
Let rest for 2 minutes so the bubbles can settle.
Pour 1/4 of the batter into a hot pan greased with butter or pam spray.
Cook for 2 minutes until golden, flip and cook 1 minute on the other side.
Repeat with the rest of the batter.
Serve with sugar free syrup (or any syrup of your choice)

I would love to have a good waffle batter that won't knock me out of ketosis. You two are making me hungry for waffles, and I would gladly clean up a big fat mess...(if waffles are really good)...LOL Let me know how they turn out Holy.

I have to admit the first time I made waffles using my pancake batter I was afraid.
- vanilla protein powder
- very very little baking powder (like 1/8 of a teaspoon)
- eggs
- oil
- heavy cream

I was very afraid I'd glue my waffle iron shut with protein powder turned into burnt cement. But it didn't happen. I used to spray oil on the waffle iron too, but now I just rely on the oil in the batter, nothing more.

Cream cheese seems to be fatty enough to work. Give it a try an let us know how it goes. After 30 seconds or so it should be firm enough to open and peek. I bet it works just fine.

I'm having my rather common breakfast, ... waffles. I make a three day batch, so today it is a brief time in the microwave (30 seconds). It doesn't take long to make a batch, total of 10 minutes, but its still nice to save the 9 minutes and 30 seconds on the other two days.

Yup, I'm a numbers guy.

Thanks James - I count you as not only an inspiration, but the voice of calm reason. I love your methodical way of looking at the numbers of keto. Sometimes we get so emotionally caught up in "dieting" that we forget it's basically a numbers game.
