James..this copy and paste from the Mayo Clinic...

Celiac disease (gluten-sensitive enteropathy), sometimes called sprue or coeliac, is an immune reaction to eating gluten, a protein found in wheat, barley and rye.

If you have celiac disease, eating gluten triggers an immune response in your small intestine. Over time, this reaction damages your small intestine's lining and prevents absorption of some nutrients (malabsorption). The intestinal damage often causes diarrhea, fatigue, weight loss, bloating and anemia, and can lead to serious complications.

In children, malabsorption can affect growth and development, in addition to the symptoms seen in adults.

There's no cure for celiac disease but for most people, following a strict gluten-free diet can help manage symptoms and promote intestinal healing.

Is celiac disease an allergic reaction to gluten? In my case eating Keto has seriously reduced my allergic reaction to cats and dogs, though if I pet a dog and rub my eyes its still pretty bad, but my breathing has greatly improved, around them.

Eating gluten is probably like me rubbing my eyes, it gets straight into your body, so eating Keto is probably not enough to help.

exactly, Renee. When i get an order for someone with celiac i disinfect an entire area, use a separate oven to bake in, use a totally different, scrubbed and disinfected mixer, and keep the G/F product in a separate cooler. 2 dear friends of mine have celiac and wont even eat out any more...they are that sensitive to it. and when they do breathe or ingest something with gluten, they are horribly ill for several days. Its a terrible thing..so sorry your husband has it.

For a restaurant to be truly gluten free to the point that a person with Celiac Disease can eat there, they have to have a separate area away from glutenous foods to prepare the foods and they have to use separate pans to cook everything on/in as well. It's not just a matter of the food itself being gluten free, the environment must be, too.

It's not just a matter of not ordering gluten free foods, unfortunately.

My husband suffered from all those symptoms, the skin issues being the worst, for a long time until he finally went to a dermatologist who did the test.

NIGHTSKYSTAR,
true enough. Maybe one just has to take the bull by the horns and tell them what you don't eat when order at a restaurant.

even worst than those. If you have Celiac disease it can knock you flat..even a small amount.

I think the problem with just saying you are gluten free is, you wont be given anything with wheat, barley, or rye, but that leaves everything else..potatos, rice, corn, etc. so i dont think i'd say gluten free.
I've found servers to be very interested...and very willing to help find keto foods for me. Many are quite knowledgeable about whats in the food. the one thing i get over and over is when i ask for oil and vinegar for a salad they always bring me balsamic. well, they did..now i know to ask for cider or wine vinegar. Balsamic is quite high in carbs, and lots contains sugar. So, by saying you need gluten free, you sure arent guaranteed you will get keto compliant food.

There are many diet fads that come and go. Gluten free can be a fad, or if you have problems with gluten you can have very real symptoms such as:
- Hives or skin rash
- Nausea, stomach cramps, indigestion
- vomiting
- diarrhea
- Stuffy or runny nose

For some, there might be a social stigma of eating Keto, or it might take a long time to describe what you don't eat. I've sometimes wondered in a restaurant if one should just tell them that you want gluten free food. Do restaurants understand that better than Keto?

Of course you can tell them your reactions are minor (if they are indeed non-existent to almost none), and then they get less worried about cross contamination.

Your thoughts?

James
