I do lots of gluten free. I use heat and steam on my pans, never bake at the same time I’m using flour..use totally separate mixers, etc. a dear friend has celiac, and I know how the smallest iota can put her into severe pain. I have people with peanut allergies and it’s life or death.
Tell me what flavor cake you are looking for and I’m happy to share recopes.

Have you had to do gluten free? In our house hubby and I are gluten free, sugar free, and keto. Of course keto makes it easy to follow the other two.

My hubby has celiac disease and getting gluten free from a restaurant has been the hardest thing. Most don't seem to understand. Prior to going keto, we searched places, like a pizza place, that offers gluten free crust, but still makes it where they make regular crust and on the same pans. That can trigger an outbreak in a millisecond. Due to that, we've not been out to eat since he was diagnosed around November last year.

My daughter's birthday is coming up and I'm faced with how to make a cake that is gluten free, sugar free, low carb, yet tasty... I have no idea. LOL!

I cater to every food need, allergy need, etc in the bakery. I do vegan, vegetarian, keto. Never been asked for Paleo. I dont know much about it, so i just went and looked it up. I remember looking at it briefly when i was starting keto, because i was told maple syrup was ok on it..and i love maple syrup and harvest the sap from my trees to make maple syrup, sugar, and cream to use in the bakery.
then i saw its also zero dairy..and i decided i'd rather have butter and cheese and cream all the time than maple syrup one time. I see it also allows fruit and root veg, which would also be appealing to me, but again..butter and cheese are far more important to me than root veg and fruit.
One of my kids thought she would like to try vegetarian for a while. She made it through about 3 days, found out bacon wasnt allowed (she was 10...thought bacon came from the store not from a pig...lol) and then found out hamburgers were nixed too.
So many ways of eating. i've tried most. Keto for life, here...

There are various Ways Of Eating ( some folks abbreviate this WOE).

KETO:

My "scientific" leaning towards Keto comes from thinking of it as trying to get the most nutrition per calorie consumed, with some attention to daily minimum needs for protein and fat, and that carbohydrates just aren't needed at all. I eat some either because its it is the only way to get other things, like vitamin C, or because I just like it, such as a little bit of very dark chocolate.

VEGETARIAN:

You don't eat the flesh of any animal. You can eat animal products, like eggs. One may eat this way for religious reasons, or respect for conscious life, or environmental concerns, or other reasons. Vegetarians have trouble getting "balanced" proteins, and so often mix vegetarian protein sources in the same meal.

VEGAN:

A yet more restricted form of vegetarianism. You also don't eat animal derived things, like eggs, or dairy.

PALEO:

The idea is that people have been genetically selected to be healthy on a palaeolithic diet, because our ancestors have been weeded out from 3.3 million years ago, until about 11,000 years ago. I think to be true paleo you should eat "tip to tail", so not just the muscle meats, but skin and organs too. Perhaps Scottish haggis comes close.

SAD:

Standard American Diet. Its not much of a "standard" in the sense of begin a benchmark to meet, its just "common". Rich in red meat, dairy, artificially sweetened foods, sugar, processed carbohydrates.

While one can try to follow more than one WOE at the same time, it gets pretty hard as the overlap between diets can be very restrictive, especially when you consider dietary needs.

Lets say you want to be both Keto and Vegetarian. You need about 60 grams of protein a day, and I get the number from Wikipedia:

As a vegetarian, you would eat for example quinoa.

But to get 60 grams of protein, you need to take in over 250 grams of carbs, so not Keto at all. Eggs may be a better source of protein for vegetarians. Far fewer carbs, ... it can work, but it takes effort.

If you want to be both Keto and vegan, I don't see how this can work at all. There is no way to meet your protein needs without also consuming more carbohydrates than fits with Keto.
