JWCOLBY,
This discussion is for posting what folks eat across the day, so that others can look in and see what others eat for breakfast, or lunch or snacks. I've opened a separate topic on Mayonnaise.

JWCOLBY, this topic "Full Day of Eating" is for folks to post what they eat in a day, to give others an idea of what eating Keto "looks like". What people eat for breakfast, lunch, dinner, snacks.

It is hard to jump into eating Keto and know what you can eat from a practical point of view.

But resistant starch in interesting, so I've created a new topic to discuss that.

Has anyone been reading about resistant starch? White potatoes cooked, then allowed to cool? Rice, cooked then allowed to cool? The cooling apparently converts about 50% of the starch to "resistant starch" which passes all the way to the colon before being digested by the biome into short chain fatty acids, i.e. Butyrate, which, I am reading, is mostly used by the colon lining as it's own energy source.

Hmmmm...

Well... soft cheeses have more carbs than hard cheeses. I was under the impression that both those were soft cheeses but I just checked the stats and they are very low in carbs. So yea, eat that!

Tonight I cook steaks for the family. Mushrooms in tons of butter, with garlic. Onions in tons of butter, with garlic. A good spinach salad with tomato, bacon bits, sunflower seeds, raspberries and blue cheese dressing.

Oh yea. What's not to like?

OMG I love triple creme Brie, its my favorite cheese. It is so soft and creamy. With all of the great foods we can have on KETO I don't understand someone who says they can't eat enough fat in a day. Really? Not a problem for me.

KATHLEEN624,
yah, "real meal". I came home from some hard yard work, sweaty, and wanting to eat something in a hurry. I went for a waffle (left over from the breakfast batch), butter and a two strawberries, but then I thought, hey, you need to eat something real too ...

So I halted that, got out the wheel of camembert, cut of 100 grams (I weighed it), and in no time at all it was back to the first thing mentioned. The camembert alone had about 25 grams of fat, my waffle had about 8 grams, then the butter on top ... probably another 5 grams. So in total about 38 grams of fat. Who said eating a lot of fat on a Keto plan was hard? Not me.

I like camembert more than brie (gosh do I sound like a cheese snob). They taste exactly the same to me, but my daughter told me there is a difference, and yes there is ... brie is softer, so it is a little harder to cut, and flows more. I like brie, because it holds together better, I can cut chunks of it and take it with me and it doesn't flow into the container.

James Yes that is exactly what that dinner was on Monday. Appetizers. We hosted a wine and cheese party here for the neighbors on Memorial Day. So that is what I ate for dinner. I was so busy preparing the buffet table for the guess' arrival I forgot to eat a real meal. So that's what I ate.

that's an interesting dinner. I have nothing against the odd glass of wine, I drink some too, but what is interesting is that it sounds more like an appetizer platter that you had.

James, I'm not worried about the scale. That often happens just before it goes down a much larger amount. And in this case, I think part of it was not drinking enough (read hardly any) water yesterday. I'm sure tomorrow will be better. Also, I haven't eaten anything other than coffee and heavy whipping cream yet today. Just not hungry yet. Lunch will come soon and I will enjoy it.

Earnie,
the scale can't be up because of 300 more calories than you were eating. Its a fluctuation for another reason.

In the CICO calculations that amounts to less than a tenth of a pound of body fat. Just stick with the higher calories and see what happens over time.

What I ate today ...

Pre-breakfast:
- cup of coffee with 25 grams of cream (I weighed the cream), 10 grams of fat

Breakfast:
- cup of coffee with cream (10 grams fat)
- 2 egg omelette (15 gram of fat) with 20 grams of shredded cheese (5 grams of fat)

Post-breakfast:
- cup of coffee with cream (10 grams of fat)

So far today, 50 grams of fat (yup, I drank 30 of it, but not like drinking cooking oil LOL)

Lunch:
- chicken vegetable soup

Supper:
- Greek style meatballs dipped in tzatziki
- Greek salad with greek dressing
- Diet Pepsi

P.S. P.S. means post script, and CICO means Calories In Calories Out, and neither of those is a TLA of which there are many (just for you MAUITN, just for you). Ironically TLA is a TLA.

James, LOL I had to go google CICO. And, you are right, I have, in the past, believed that. And I do want to lose 15 -20 pounds. However, I now just want to find a way of eating that I can sustain long term and be healthy. It isn’t important how long it takes.

MAUITN,
those numbers are more like it!

Looks like you are wanting to loose some weight, your ticker shows you want to loose 18 pounds. Its hard to get out of the CICO mindset for me. I also don't exactly believe it anymore. Like the idea of "starvation mode" where the body changes how efficiently is uses its calories, that thought alone is in some way against CICO.

Nevertheless, the back of the envelope calculation is that a bound of body fat holds 3500 calories, and a 500 calorie a day deficit will result in a pound a week of body fat loss (7 days time 500 equals 3500).

So if we do presume that at 1350, that your body really needs 1850, then you will loose a pound a week, but its just not all that simple. (I feel any moment now that Holly will jump in here and smack me on the side of the head about CICO). Plenty of members here experience that cutting calories very low is counter productive to weight loss.

My view is that if you are wanting to loose weight, then any measurable loss in a week (lets say 1/2 a pound) is a victory. For yourself, to loose 18 pounds at that rate is 36 weeks, about 8 months. I don't view it as eat Keto, loose the weight, then back to "normal". I view eating Keto as a healthy sustainable way of eating, and eat this way for that reason ... to be healthy.

James, thanks for the additional information. I did a bit better yesterday. The food was egg, sausage, coffee w HWC, Lamb chop, guacamole, olives, Salmon, mayo/dijon, butter. And the scale is down a bit this morning.
Calories 1349
Fat 111 -74%,
Net carbs 14g – 6%,
Protein 67 g – 20%.
But reading your post helped and I will work in more fat.

Kathleen, the Beef Bok Choy Soup sounds great. I will try that. Thanks.

MAUITN,
the protein looks about right. 40 to 50 is a daily minimum for women and men, then if you are a little active perhaps a little more. I personally wouldn't go above about 65 grams, no real need to. But 67 is not crazy high, not like 100 or 150. A rather reasonable goal.

Carbs, at 12 are certainly Keto range, though 20 is not really high either.

But fat at 72 looks low. A daily minimum, not even Keto is 78 grams:
en.wikipedia.org/wiki/Reference_Dail
y_
Intake

Also, Keto is typically about 85% of the calories from fat. Going with 12 grams of carbs (48 calories) and 67 grams of protein (268) calories, then those two add to 316 calories, and if that makes up 15% of the calories, then one needs about 2100 calories, and that would mean 200 grams of fat.

Even if dietary fat was to be 80% of the calories, that still means 1580 calories a day, and 140 grams of fat to go with those carb and protein numbers.

Fat is just too low.

James, when I put my numbers into a KetoKarma calculator, it showed in the 971 for calories, 67g protein, 72g fat and 12 carbs. I have a big appetite and really couldn't eat that low. So am I figuring wrong?

My food yesterday was as stated, except I had shrimp instead of salmon. I thought I had another salmon filet, but evidently ate it. I also had (not written) snacks of chicken breast & cream cheese.

I ended with 1261 calories
Net carbs 7 – 6%
84 g fat – 61%
105 g protein – 33%

So I need to reduce my protein and work on upping my fat. More meal planning.

What I ate today...

Breakfast:
Protein powder waffles with butter and peanut butter

Fried ground beef
Tomato sauce
Shredded cheese
diet cola

Looking at lunch through the eyes of the carb percentage:
Fried ground beef (0%)
Tomato sauce (8%)
Shredded cheese (1.3%)
diet cola (0%)

Yes the tomato sauce is higher than 6%, but it is in very low quantity, just enough for flavour.

Buffalo chicken wings (spicy, vinegary)
mixed salad with ranch dressing
diet cola

KATHLEEN624,
I agree with your thoughts on intermittent fasting. I've never fasted. Sometimes I've eaten late, or indeed practically forgotten to eat.

If one fasts my sense is that it shouldn't be part of a weight loss effort, but something you do for health reasons, to give the digestive system a rest, or something like that.

I make my own homemade chicken broth and beef bone broth. As I said earlier I am not sure if the broth is considered a fast breaker (I don't think so) but since it is liquid I thought I was better than me eating something solid.

These are just my own opinions here, just for the record.
I don't think IF is really necessary when following a KETO WOE. I have been slowing losing pounds by eating my three meals every day. I just wanted to try it and found that it didn't really make a difference in how I was losing pounds.

I think 12 hours is okay but if one fasts for too many hours your body will just stall. This is only my opinion, as they say you need to fuel to get the engine going.
Good Luck to you.

Hi MAUITN . I am still learning KETO but here is what I usually eat in a day.

Breakfast: 2 eggs scrambled with a little (HWC) Heavy Whipping Cream) and 1 chopped jalapeno pepper. Fried in butter. 1/2 avocado. Coffee with HWC.

Lunch: Large green salad with bacon, cucumbers, cheese, and Hard Boiled egg OR tuna or sardines, Some type of creamy dressing with fat. 1 cup of chicken broth. Lots of Water.

Dinner: 4 ounces of protein (meat, chicken or fish) cooked in butter.
Vegetables cooked with lots of butter. (1 slice of cheese if eating ground beef)

Evening: 1 cup of chicken broth before bed. Water all day long.

( I need the chicken broth to keep my salt intake up because I get muscle cramps.)

Nothing measured, but I do remember what I ate today.

Breakfast was a two egg omelette with Tex Mex cheese melted in, plus coffee with cream.

Lunch was a double patty cheese burger from Wendy's which they serve bunless, and a diet coke.

Supper was s salad with cold roast beef cut in cubes on top, plus plenty of ranch dressing.

Evening snack was a few (10 to 15) raspberries with whipped cream on top.

....

Saturday 7/1 = 808 cal, 13 net carb, 71 fat and 28 pro

I can't remember what I ate on Saturday -other than to say it was not nearly enough to meet my macros! I was Ubering in local resort town and in my car for nearly 13 hours - a very long day. Oddly enough after breakfast, I wasn't even really hungry while I was busy. I did take almonds in small baggies (portioned), 1 keto lemon cake (Nush 2 net carb), I got some cheese singles and had water. I did eat something after I got home at 1:00 am, but can't remember exactly what now - other than I did NOT eat anything that I should not have.

Sunday - July 2nd. Totals 1270 cal, 20 net carb, 99 fat, 71 pro

B: Keto cream cheese pancakes (2 eggs, 2 oz cc), 1 tsp freshly ground almond butter, 1T sf syrup

L: Greek vegetarian pizza - no crust (lunch w/mom). Toppings were mozzarella cheese, spinach, mushrooms, black olives, red onion, feta cheese, whole roasted garlic cloves, red bell peppers.

D: 2T seasoned mashed avocado, 1 piece LC bread

S: pork rinds w/melted butter, cinnamon w/stevia

today was a weird one. i ate breakfast at the hotel and i NEVER eat breakfast,...but glad i did..

breakfast--2 egg omelet cooked in butter, 3 small sausages
Lunch...7 hours after breakfast..2 oz sharp cheddar, 2 aldi beef snack sticks
supper..just now..9:30 pm..3 oz steak cooked in butter with sliced mushrooms
spinach salad..1 cup fresh spinach with 1 oz sharp cheese and olive oil ad wine vinegar
my own chocolate mousse concoction..cream cheese, cocoa powder, swerve, a spoon of sour cream, and some heavy whipping cream whizzed in my magic bullet till mousse consistancy. it was a rough weekend and this is going to be the week from hell, so i needed a treat.
i dont count much of anything, but i know i'm under 10 carbs. there were zero in breakfast, the cheese i will over estimate and say 3 carbs, and between the mushrooms (1/4 cup raw sliced) the cream cheese and cream and cocoa powder there may have been another 3, and the spinach was 3...that makes 9 total carbs. (i dont do net i do total)
so i'm good...even with all the fair food at the show and people bringing treats and being away from home. yay!

Lunch: 2 cheeseburger patties with dill pickle relish and mustard, a polish sausage with mustard, 3 dill pickle spears, 2 deviled eggs

Dinner: 7 layer salad without red onions.

I don't know my carb count for the day. I know lunch was pretty low in carbs, but my supper wouldn't have been that low because there were peas in the salad, possibly sugar in the dressing? Not sure since I didn't make it.
