The sun was out today and the sky was blue. which something we hae not had since Dec 23. enjoyed a short walk out side it was still cold just that the sun was out.
went to the gym and boy am i sore tonight but back i go tomorrow. still trying to get the house tidy from the holidays trying to get my self together and back to the gym on a routine and get back to visiting with my spark family. the winter weather get me me down and am going to look into getting one of those special lights to see if that helps any . the team reading has been good for me to get back on the trail. the Christmas challenge was a hug help to me even though i did not lose much weight in December with out the challengers I know i would have gained more weight then i did 4 pounds and the odd thing was i did not gain from Thanksgiving to New years bur from 12/27 until 1/2/13 . mindless eating set in after Tom went back to Denver . Empty house and back to cooking for one was hard and i need to thank each of you my team mates for being here to support me thanks to all of you I am back and ready to give it the needed 100% thank you for your support Today i decided to join the jump challenge just to get the tips and mix them with what i find here in the 4 season challenge . its so much fun to watch my weeks numbers increase.

wow! The temps here in TN are a heat wave compared to your temps. It was in the 30s yesterday and supposed to get in the 40s by this afternoon. I'm looking forward to a quick run after work.

I totally agree that the treadmill can be boring. I usually do the elliptical, bike or rowing machine at the gym bc I don't like the treadmill. I don't have a home piece of cardio equipment other than my over energetic 3 year old. But he does give me a good calorie burn, lol.

Fran, good for you to use your PT session today. You can do it!!

I'm having a really hard time getting back on the food track after the holidays. Still catch myself in the 'indulging' mindset/excuse. gotta emoticon it! yeesh.

Well, I hope everyone has a sparky day! Stay warm!

Fran: Good for you using your gift for a personal trainer to get going! Excellent. It's cold here, too, and it can be "de-motivating", . . for sure. But you're right . . . always feel better when the work out is done, fini, complete!

Eco: Yes, and no. It's not necessarily different muscles being used when comparing walking outdoors vs. on the treadmill, but the gait and pace is different for each, so the muscles are used a little differently. I find when I use the treadmill my gluteus maximus (otherwise known as the BUTT! LOL) feels sore but not when I walk outdoors.

It's cold here too. But Mr. Spot the Wonder Dog makes sure we get out! It's different too, as we have snow on the ground so that means boots for me. That adds a little more weight (as the boots are heavier than shoes) so the pace isn't as fast as I can do with shoes, but it's a work out!

HUGS and stay warm guys! Already now (it's 7 am CST) it's 23 . . . warmer than the high yesterday! Still . . . that cold enough for me.

Love is the root of all things good in life.

When you think its been a half hour you have not even gone 10 minutes to short to watch TV a walk away and besides i don't have the needed stuff to plug in and listen to it any way . using my gift personal training tomorrow just what i need to get my self going in the new year and add those minutes work out time just read about how good lemon is for us so its on my shopping list.

It was 19 degrees out (not sure about wind chill) this morning --- a little too "invigorating" for my taste.
emoticon

Is it just me? I find it really difficult to switch gears from outside to treadmill --- and the other way around, it is difficult when the weather gets better too. It's partly in my head BUT it's a real physical change. Different muscles?

yay Team! I also love to get outside when possible. I live in the south so I don't have to deal with much snow, just mud & rain. Still have to dress properly but I enjoy running in the cold. Feels very invigorating. emoticon

Busy day today at work but I managed to walk a mile briskly & romped wtih my son. Best kind of workout is the kind with laughter & much tickling & kisses. emoticon

Have a sparky evening!!

Yesterday went shopping to get my little sister a birthday present (her birthday is on the 6th) Have to get it UPS'd to her. Logged some steps while shopping so that was a bonus.

I love getting fresh air outdoors too, evenn in the Winter. Definitel agree w/ECO . . . have to dress for the weather and be careful on the snow and ice. Fortunately in my area, there are a lot of walkers, so for the most part, the walks are clear. Glad for that! But otherwise, if it's not possible to take a good walk outside, I do my treadmill. Not ideal, but it works!

Happy Wednesday one and all. Mid week . . . already!!

The stats for NOT keeping New Year's Resolutions made me give up trying to make realistic New Year's Resolutions long ago. I guess my New Year's Resolution is to not make a New Year's Resolution! So emoticon , I kept my resolution!

The cold weather does not stop me; I just dress for the weather. But ice stops me. So does unsafe sidewalks --- I won't spend time on busy roads when drivers don't expect to see walkers and runners. It snowed here creating icy patches. Yesterday I went out in the cold and wind and discovered a favorite route is not passable for pedestrians. I might have to move to my basement treadmill and I'm checking out possible routines. The treadmill means shorter distances and less time because boredom sets in --- even with the TV.

1/1/13 is coming to a close watching the last of the Hall\mark Christmas shows for the this season but for me it continues on until 1/6/13 Little Christmas its a family tradition.
Like staryeyed i rest set streaks except for my log in one . have my goals in place and I am off on the Spark trail along with my Spark family i hope it stays crowded this year and we all will be closer to the finish line soon. happy sparking my ticker is set to count the days until my 12 walk since I am not a runner but i want a new shirt for my collection so will be in training come March think by that time the snow and ice should be off the sidewalks . Happy New Year to my Season's Warriors!

I have never kept resolutions so I did not make any this year. Perhaps I will put more focus into streaks.
Am considering rejoining weight watchers. I am wondering if I need more structure. Guess I will contemplate that a bit longer.
I love reading everyone's input and suggestions though.

Best to you all in 2013.

Happy New Year everyone!! emoticon emoticon My sister and 3 of her kids stayed at my house last night on their way back home to northern IN. We had a great time visiting and skyped with another sister. I talked to her about a spring race, and she's agreed to do a 5 or 10K with me if the dates work with her kids' school. emoticon

Like Fran, I won't be doing resolutions this year. Continuing my fitness goals & working to transition careers. My sisters & I have chosen words to represent our desires for the year. Mine is Believe. I will be Brave & show Energy to pursue my goals. Love & Integrity are Essential and I'm always Valid. Finally, my goals will Evolve but I will always Believe in myself!

I'm restarting ALL my streaks, and I hope to be like my sil who celebrated 365 days of 10 minutes per day cardio. Nothing like starting streaks on 1/1!!! emoticon emoticon

Happy New Year! Watched movies, had a fire in the fireplace, made it till midnight and had a small champagne toast. WooHOo! So, a quiet New Year, simple and perfect.

The sun is out today, so got Mr. Spot the Wonder Dog out for his walkies (yes, even though I got to bed @ midnight, he was up raring to go @ 5:30 am.) When we got back, HE headed back to bed when we got back. Smart boy!

So, keeping my perspective focused on maintenance, and progress -- not perfection!

HUGS one and all.

Hi
Happy New Year everyone how many of you plan stay up to welcome in the New Year
No plans here a quiet night at home. Still dealing with a little mindless eating. That happens when I get stressed with my self. I can sure find good reasons to stay home form the gym but come 1/2 /13 I am making my self get back in to a routine and go first thing in the morning and get it off my to do list. I found some good quotes to post around the house and get me re sparked. I have my streaks in writing just like they had me do when I first joined spark the long term goal midterm goal and short term goal all in place.

I hope you have
A year in which you cherish
The past year's memories and
Enjoy the memories you make in

Another cold gray day here in Spokane and its now snowing again not much just enough to need the windshield wipers if you are out driving around. home form church and watching foot ball and sparking along. then will have to catch up my reading of Spark news. still going with my plan of not making any Resolutions for 2013 i do have streaks in mind and the have start and end dates goals and streaks sound more sparky to me and so much to restart when a slip on the trail happens .
Need to get my Christmas Thank you notes done and in the mail and get a little Christmas gift in the mail for my brother.
Sounds like a lot of us are down with colds and flu this week. think i am coming down with one so getting the liquids in and taking it easy no need to go out in the snow. we have not had blue sky since last Sunday 12/23 when we went to see the Eagles .
heading back to the Gym soon see how i feel tomorrow so easy to talk my self out if going. before Christmas it was I had so many things to get done now i use its cold and I have a cold. need to remember how good we feel after doing a work out.
Happy New Year Team

Thank you, ECOAGE, for sharing your recipe. Butternut squash and low fat ricotta are on my grocery list for the next trip. I can't wait. If I remember correctly I prefer butternut over acorn, but there was another winter squash I got from our CSA that I really loved. Maybe a hubbard? It was sweeter and creamier than either butternut or acorn. Almost a dessert by itself. If I see one of those, I will try your recipe with it.

It's only been since finding SparkPeople that I have begun to cook a bit away from the recipes. So far I haven't had any mishaps, LOL. I am pretty much a follow the rules, follow the recipe girl! I hope to say someday that I can cook from feel. That will be an accomplishment in and of itself.

-STARRYEYED- love your login name! All the best with your interviews. The one mistake I remember making when I was interviewing was trying to be what "they" wanted me to be without being myself. It was in those instances where I found that sweet spot of being myself and at the same time showing the interviewer that I would meet and exceed their needs that I landed the most enjoyable and rewarding positions. You can do it!

FRAN533, like you, I need to get back to my Sparking. I have not been very disciplined this holiday season about nutrition or fitness. Today I did shovel snow. It was heavy and a good workout. There I was outside in 29 degree weather taking my coat off because I was too hot from the exertion. It felt wonderful though to be outside in the brisk fresh air. I think I am spoiled living in the midwest where the change of seasons keeps us on our toes and seems to set a pattern of change for our lives. Every season has it's blessings and wonders.

Racey and i just got back from our walk and are trying to get warm emoticon

. its another gray day here the sky has not been blue since the Dec 23 ! so you know its winter time. no snow since the 24th and that was not much just enough you had to brush it off the car windshield emoticon
Its time to get back to sparking 100% and not the 85% the gym was not high on my today list those four days but did get walking in and managed no mindless eating. think I did start maintenance a little early the little red note was touched think it was under the dinning room table most of the time emoticon .

I just looked up the program, and I just have to say "Very impressive." Good luck with it, Alayna, it looks like a wonderful opportunity.

I guess I learned to cook because I would hangout for hours watching the kitchen "experience". My grandmother and mother usually used the same cups and spoons so there was some consistency to the end products but every tasty meal was different. My mom never hesitated in switching ingredients based on what she happened to have available and how many cousins were around for a meal. I watched a lot of Julia Child. I like to read cookbooks for fun and basic inspiration.

The ricotta acorn squash is a longtime favorite created from a need for a quick and easy meal for myself. I keep some "basics" available and prepare meals based on my mood and the random seasonal items. I consider eggs and part-skim ricotta to be among the "basics" and acorn squash is one of the seasonal treats.

After the BIG build-up and rave reviews, I hope the squash lives up to expectations!

Oh my goodness! Soooooooo HAPPY for you that you have made it to the in-person interview stage! That's always such encouraging news! Good luck to you. You'll wow 'em.

Glad your new gear is working out for you. Enjoy in good health!

I guess I grew up being a "by the seat of my pants cook" watching my parents cook. Never really nmeasured anything and things turned up similarly each time, but not exactly the same because they would alter this or that. ALWAYS delicious.

for baking . . . well, that's another story. You do need to right amts. of leavening, shortening, etc. to make things bake as they should, so I always measure for that. Much of what I bake, though, I have committed to memory anyway. Did LOTS of baking with my Grandma, so at my age, have had lots of experience! emoticon

Holy challenge! Seems this one just started! Oh well. Onward, right!

Thanks for the clarificiation on the recipe, gail. I would have been mightly disappointed otherwise. I bought 2 acorn squash & some ricotta to try the stuffed squash. Will probably bake it later this afternoon.

I am interviewing for a program called The New Teacher Project. It's like Teach for America and places working adults without an education background in classrooms. If I make it into the program, I would have an intensive summer training then training/support throughout my first year of teaching in a high need/low income school. I have in person interviews scheduled for both Nashville & new Orleans chapters of TNTP. The acceptance rate into the program is about 20%, so it's highly selective & competitive. I will continue to do my best & be ok with the outcome whatever it is.

I have a busy day ahead of me with prepping for the interviews. I have to obtain a lot of paperwork & create/integrate my study & running schedules.

I changed my plans today because that little bit of snow was covering ice and it stayed on the ground all day. I spent a half hour clearing as much snow as I could off my driveway and walkway in the hope that early morning sunshine might clear the ice. Snow is expected later on Saturday. The lack of snow last year spoiled me!

I missed part of the conversation. Alayna, what you are interviewing to do? Are you interviewing for more than one program? I know it's some sort of educational program.

Sorry if I was confusing but to clarify: You want to combine the milk and eggs and then add that to the mashed squash. It will be puffy and fall like a souffle when baked.

Thanks so much for posting the recipe, Gail! I'm gonna buy some squash & ricotta when I shop tomorrow!! though I will have to try using just milk as well. DH cooks like Gail & barb, and I'm envious. I definitely need a recipe for the first few times I made a dish. Thanks so much for the great recipe ideas. Dinner is gonna be tasty tomorrow!! emoticon

I am gonna make the traditional southern new year's dish of greens, ham & black eyed peas. I'm extra excited for the new year because my sister & her kids will be stopping by my house for a quick visit New Year's Eve & New Year's Day!

Today, I got off work earlly & went for a quick trail jog. Tested my gps watch and determined I won't start timing till after my warm up due to pace issues. Love that I know how far I went even though I was on a trail without mile markers. emoticon

also loving my new fitbit that my MIL gave me for Christmas. I've been wearing it everyday & LOVE that I don't have to track my cardio. I track my miles & ST separate from fitness tracker, so all I have to do is press sync & I'm done! nice!! emoticon Plus DH also got a fitbit so I can compete with him. emoticon

well after my quick run in the late december drizzle, i meditated before my phone interview. The interviewer asked the exact same questions as the New Orleans interviewer, and it wasn't to my benefit. Because I knew the questions once she started to ask them, my mind would wander to how nervous I was, so I stumbled a bit & wasn't as eloquent. Forunately, the pauses & uuuuhhhs didn't hurt me because I got an email inviting me to the in person interview! yaaaaaay!!!!! emoticon emoticon

Can you believe there is only 1 day left of WREATHS? The new challenge will start on Sunday!! I thankful everyone who participated in the challenge & had fun with me on the sparkpath. emoticon emoticon emoticon emoticon

I've also added about 2 cups of (your choice but I use 1% milk) to the butternut squash and eggs mixture. It bakes into a custard-like meal. I've also turned on the heat by adding either a little chipotle and ginger powder or a little curry powder to the mixture.

Only a dusting of snow here --- not enough to shovel. I'm hoping it will melt so the streets won't be too slippery for walking.

Gail:

I cook by "feel" too. I didn't change anything in your recipe other than to add a pinch (1/8 tsp.) grated nutmeg into the mixture. Just makes the favors pop. It was delish. Next time I may sub marscapone for the ricotta, though that would definitely change the nutritional values. I could see using grated parmesan or romano as well. Gonna play with this.

Snow here today, so know my CV and ST will be snow shoveling primarily. Stretching to get ready..

HUGS!

Barb and Fran, please change my amounts if your preparations were different --- and add comments describing your personal touches!

It's not so much a recipe because I cook "by feel" rather than exact measurements. I'm guessing on exact numbers but I'm usually pretty accurate with my estimates. Use more or less of any ingredient based on your preferences. I get creative and use what I have on-hand to make a stuffing. I think acorn squash is so pretty when it's stuffed! This is a favorite way to prepare any squash. In the summer it's a good way to prepare sliced zucchini.

Gail's Ricotta Squash

Carefully cut an acorn squash in half and discard seeds and stringy pulp. Beat 2 eggs and combine with a cup of low fat ricotta (add a sprinkle of cinnamon and/or nutmeg, if desired).
Fill the squash cavity with the cheese mixture. Bake covered at 350' until squash can be pierced with a sharp knife (45-60 minutes) or zap in a covered microwave safe dish using the baked potato setting.

A butternut squash alternative: Peel with a paring knife, cut in half, remove seeds, cut into chunks, boil about 20 minutes until tender. Mash. Combine with the ricotta and egg mixture. Bake about 30 minutes.

Enjoy!

cranberry relish

3 cups cranberry
1 cup sugar (or 2/3 to 3/4 cup agave syrup) -- depends on how sweet you want it
1 cup water

Bring water and agave to a boil, then add the cranberries. Cook them on the stovetop till they start to pop. Then you can turn it down and let it simmer for a few minutes. then let it cool. It will thicken a bit.

Good year round with chicken or turkey. I actually also like it with ham.

Ladies, you have peaked my curiosity and appetite as I read through your posts about the squash with ricotta. I would love to try this recipe. Please, oh please share.

Fran, yes, I can see that New Years Streaks could be the way to go! For myself, I want to set some new goals and do a better job than in the past tracking my progress and accomplishments. I want to be able to look back at the end of 2013 and see what I have accomplished, improved, created.

My plan is to do this in the form of a journal with a personal mission statement, some reflections about each goal, and action plans/check lists to be my road map. This is still an idea in my head. I need to get on this as the New Year is just around the corner. It will be a work in progress I'm sure... Yeah! WooHoo! I love new beginnings.

Thank you everyone the time went so fast seemed like i had just picked him up at the air port and we were heading back. missed visiting with my team mates need to make a plan to get up early and Spark a little each day. One think I learned was how important this support system is as we hike along the trail.
Racey is helping me not not miss Tom I remember something mom always said when we took him to air port "At least we have each other he goes home to an empty house" now I know how he feels. I reminded my self we can visit on the phone and E mail unlike the many of the families in Newton or the those that lost family in Sandy.
This year I am not making News Years Resolutions they seem to last only a few days at the most so changing the word to a streak the same idea different working
The squash dish I made for Christmas was make with the Ricotta cheese and was so creamy it was like eating whipped yams!

I think that a variety of my squash "recipes" were written in response to one of Fran's blogs after she visited a farmer's market back in the Autumn or late late Summer. My recipes tend to be rather free form so I'm going to ask Fran or Barb to share for me.

I too am a squash fan. I missed the famous Gail squash recipe apparently! Can you reshare it ?

We have eagles & falcons here. Seeing 30 must have been a magical experience, Fran! I'm so glad you enjoyed your time with your brother & that Racey is visiting. emoticon And like Barb said, we're always here for you!!

I am starting to think about goals for 2013. Happily most of them will be "continue to" goals as I'm steady on the sparkpath.

I made the acorn squash with ricotta. Delish! LOVE acorn squash in any way shape or form. Same with butternut squash. Heck same with pumpkin for that matter! LOL

Just call me The Squash Lady. No, don't --- that sounds funny !!!

Which squash recipe is so popular? Is it the acorn squash with ricotta? I'm glad both of you and your families enjoyed one of my creations.

The stores in my area did not have cranberries!

No eagles, or falcons but we see hawks in my area.

Gail: I made your squash too and it was GONE! NO leftovers!

Fran: Glad that the visit with your brother went soo very well! Wow . . . 30 Eagles. That's awesome. We see falcons around here all the time, but no Eagles.

Awwww . . . I bet it's good to have your little "foot warmer" for a visit. Yahoo! Racey visits are so welcomed.

Happy that the cranberry relish was a hit. I made a HUGE batch, so sent some home w/Dad and some for my brother . . . they both love it. Since Bill (my brother) couldn't be here (sick) I just made up a huge care package of all the goodies for him. I am sure they're all eaten by now! LOL

Sometimes it's important to make family a priority vs. sparking. You'll get on the wagon again. We're here! Always!

HUGS to one and all.

Back sparking again to a mini leave while was home for a short visit. seems like we were on the go or i was in the kitchen while he was here. won't be back now until May for Bloomsday. we did do a lot of walking while he was here . went to the mall and watched the people rush around. Went Eagle watching and saw over 30 of them ! some were evening catching fish and watching them eat was fun. walked about five miles all together. Midnight Mass was beautiful then a quite day opening gifts going to look at Christmas lights and today the vacation came to end and after stopping at UPS it was off to the Air port. Linda Racy's mom called and said it was time for a grandma visit so my furry buddy is sleeping by my feet. time to think about fixing dinner and remembering its dinner for one Barb your relish was a hit as well as The Squash dish recipe from Gail.
Tom Paid for my gym fee for a month and wrote a lovely note in the certificate plan on asking if i can have for my goal basket we made this summer. Glad you were able to visit with John on Christmas family is so important and the fact your mom and dad were able to visit with him was wonderful. so excited about his leave next month know how much fun you will have cooking for him.
The scales was kind to when i weight in on Dec. 23 no loss but no gain not sure i will be so luck this week when i step on the scales. but it s now time to get over vacation mood and get back to the spark way of eating . but it was fun and the fudge and other home made chocolates are on in Denver and going to visit a neighbor. did not do well in Marks mini challenge my mind got side tracked and I would forget to check in and stayed the same so there is no way i will lost the 4 pounds i need to to meet the challenge by 1/2/13 since today is 12/26/12 but I am doing well on most of our challenge except daily visits to the general discussion thread while tom was home.
sounds like everyone had a good Christmas and now we are off to New Years go team we can do this

emoticon Barb. I'm so glad to hear you got to see John AND that he has leave! emoticon

My fab present was a quick invitation from the NOLA TNTP folks who I interviewed with on Saturday. I have an in person interview in New Orleans on Jan. 19th. I'm worried about paying for the travel but am excited to have made it to the in person interview stage. yay! Hopefully I can find a cheap plane ticket as I really don't want to have to take the bus which will be exhausting.....

Wish me luck!

ECO: Glad you had a wonderful holiday!

We did too. My parents came up from IL. Unfortunately the plan was that my brother was going to drive and come up as well, but he was sick, so they made the trip safely solo.

Oh I think I'm taking a break from cooking for awhile after this! LOL BUT hurray . . . I did get in some walking and lifted my free weights before they arrived, AND ate within my calorie range so my blood sugar was STABLE! WOOT!

Today . . . chillin' and just spending time with the family.

We DID get to skype with my son yesterday! ! That was the highlight for me. My parents are old (Mom 83 and Dad 85) and the last time they saw him was in July after he graduated. It has burdened me that they won't see him again, so this was a marvelous present to them to be able to see and talk with him.

My biggest present . . . John gets leave 18 January to 31 January, so I am hopeful this will come to pass! Then he can visit with the family in person!

HUGS one and all and hope you had a beautiful Christmas.

I hope everyone enjoyed the holiday. I know I did!

A coating of snow was just enough to look pretty (and give me an excuse to stay inside and relax).

Merry, merry! wishing you all peace and love. You are ALL sparktacular!

John just e-mailed. He has sentry duty, but is going to try to skype with us all tomorrow before he goes to eat and SLEEP! That would be wonderful. My parents have not seen him since his graduation in July.

Love and hugs

Did some "aerobic housecleaning" today. Usually do very well on a daily basis keeping up with things, but with baking, cooking and wrapping, things got left. So, caught up now. PHEW!

Have really consciously worked on keeping up healthy habits. It's worth it.

HUGS one and all.
