I made this combo for dinner yesterday and it was delicious. Loved the roasted sweet potato hummus especially.

I found a recipe so simple even my son can make it.

all of these should be no salt added if you can find it that way
1 can diced tomatoes
1 can black beans - rinsed and drained
1 can mushroom stems and pieces - rinsed and drained
1 cup frozen corn
spices to taste - I use hot spiced garlic

Put it all in a pan, heat until warm, enjoy

Alternative: Add a l/2 cup water to rinse out the tomato can and add it to the pan.
Once hot, add a 1/2 cup whole wheat couscous, stir it in, cover the pan and turn off the heat.
Let sit for 5-6 minutes, fluff, and eat.

The second version will make lunch for me for 3 days.

First, Welcome, @SNOWYOGA

Second, there are lots of books and what-all out there, but for simplicity in getting started, I recommend picking up a copy of the Engine 2 Seven Day Rescue Diet. The book has basic meal-building guidelines in picture format - both easy to use and adaptable so you don't get stuck in a rut if you don't want to. Separate builds for Breakfast, Open-faced sandwiches called Flats, Bowls, and regular recipes as well.

In your spare time (ha!) take a look at NutritionFacts.org - lots of videos and blogs. Also Engine 2 has a podcast (it might be called Plant Strong now), but I am a visual learner and cannot just listen, your mileage may vary.

Any questions, please don't hesitate to jump in and ask.

Hi I am new to this I mean i'm/we are trying to go Vegan,but not sure how to really get started I mean (need to get healthy and lose weight) So how do I count calories I mean so I can make sure we eat to get what we need vitamin wise? I'll be off my wogging (running and walking) as I had a hip injury from squatting, sitting, bending, stretching in the garden yesterday. I did it to myself really, because I didn't do my yoga stretching before doing all that strenuous work!

I remember reading that if you watch your cats and dogs, they stretch after laying down for awhile. We should do that to. I'll add, before and after work.

popping in here-
Mollie are you moving too?

We closed on a house on 3/30.
Have been cleaning our last residence and unpacking here. I too am having a drink at end of day...eventually will have my bengal spice (or tiger tea- as kids call it- they are now in their 20's)
The tea with some soymilk/nut milk and a bit of added turmeric is a kind of golden milk.. I guess- but right now end of day drink hits the spot.

Moving is a ton of work- but we are excited to have finally found a place for us. The 4 kids are all in their 20's- one almost 30-

Off to do a clean through of old house. Pack a lunch. One good thing is during this move we have been eating pretty healthy!

Right now a glass of daily wine hits the spot; by the end of the afternoon a chance to sit and relax eases the muscle tightness in my back and leg and I reckon is less harmful than a NSAID.

Spending time this weekend revamping my diet, really focussing on anti inflammatory foods. I may even venture to add a weekly serving of fatty fish until my hip injury is fully healed but regardless I definitely need to add more citrus to my daily diet. I am not really a fan of oranges but I do like grapefruit and of course I can get plenty of Vitamin C from kiwi, peppers and some of the cruciferous veggies as well..Also homemade EVOO/lemon juice salad dressing will be the norm going forward.

Apart from Sol burgers, which I eat sparingly (maybe once a month) and which are non GMO and have minimal ingredients I buy no processed plant based foods. "Fake" ground meats and sausages just turn me off. We have limited brands available here, basically Gardeina and Daiya fill the shelves at the store.
Haven't done too well with no booze but will keep working on it. I do enjoy a glass of wine at the end of the day when I sit and read before eating dinner.

I love the frozen food from PlantPure Nation, so when a new company that sells ready-to-eat veg food came along with a half-price offer, I bought some to try it. Not impressed with vegReady - they use oil and way too much sodium. Wish I could have read some of the labels before I bought it - will use it sparingly and not buy any more.

Any healthy plant based goals in mind for 2020?

I am going to take it one month at a time. For January and following Michael Greger's advice I will indulge in brassicas and legumes each day. I will also avoid all alcohol until my birthday in early February. emoticon

Has anyone tried the non-cheese Queso sold at Trader joes (and Aldis, although I've never found it). Can't find it at Publix either. I believe it is made from a recipe like Jill McKeever's Cheeze sauce (which is the bomb!)

I'm trying to remember what people used before zip lock bags, etc.. I remember paper bags at grocery stores and wax paper for wrapping around sandwiches. I don't remember what cucumbers would be stored in for the frig.

It's the same here so I am going to buy regular cucumbers from now on and simply cut away the seeds. The rest of my supermarket produce is all available unwrapped so I just carry my mesh bags with me and load up. I do buy frozen fruits and veggies however and they are in vacuum sealed plastic bags which are recyclable. CSA plans are very limited here this time of year and the local farmer's market is boutique and pricey.

Now if we could just get the suppliers to stop wrapping everything in plastic...
I try not to purchase produce wrapped in plastic, but it's almost impossible for some things. Ever seen a seedless cucumber that wasn't wrapped? Shame my son won't eat any other kind, so I just don't buy them as often any more.
I realize I should shop farmer's markets, but the only ones around here are run during the week - when I am at work. If only there was a year-round CSA that delivers - I would be willing to pay for that.

Right with you on the 3 R's. Cloth produce bags, fabric shopping bags that I keep in the car, cleaning the fridge out before I plan meals and go shopping are just a beginning of what we all can do. Beginning in January single use plastic bags will be banned here in Nova Scotia, there are a lot of folks who will be caught flatfooted!

Molliemac: I also do everything I can to use food, and other things without waste. Reduce, reuse and recycle, I always say. I try to check out my frig every few days and freeze anything before it goes bad. I make a lot of frozen lunches from leftovers. Even if something goes bad, I at least compost it so I can grow great vegetables or feed to our hens who not only make eggs but create the best compost for the vegetable garden.

As for portion sizes. They are double or more what they were even 30 years ago. Plates are larger. In the 60s a coke and a popcorn would be an 8oz cup or bottle of coke with an 8 or 16oz cup of popcorn. Compare that to the super portions now!

That practice came from our parents living through the Great Depression; food was scarce and none of it was to be wasted. I grew up with that practice but I can also say that our serving sizes were much smaller than most of us face now.

Thank you, Mrs. Livingwell, for the link to the Blue Zones website and the informative article about eating to 80% of fullness. "There is a significant calorie gap between when an American says, ‘I’m full’ and an Okinawan says, ‘I’m no longer hungry.’" That's something to reflect on.

I was brought up to clean off my plate. Even today, I have to finish off those last couple of bites... or four, or ten... I was surprised when chatting with my dad once, he mentioned out of thin air, "I wish my parents hadn't insisted I finish off my plate when I was young. Now I feel that I have to eat everything on my plate, whether I'm hungry or not." I like your idea of saving the leftovers for later.

The most significant factor in all the zones of longevity, was the constant of relationships. I need to make sure I'm spending time with people I love! There is no substitute for the good feelings you get from people who love you. And, of course, showing your love for others...

I used the method I read about (in the Blue Zones book) Okinawans eating to 80% full (hara hachi bu). I try to leave a bit of my meals and then, if hungry later, eat the remainder as a snack.
1. prevents overeating
2. Usually, we are satisfied before leaving the table, just don't know it
3. Good healthy food is already available and prepared (the 20% left)

That's a good point, Mollie. Even though I usually only eat high-quality WFPB meals, I do sometimes eat too much of them. I like to feel full (I've had enough of feeling hungry on unhealthy diets!), and thankfully, it's not hard to do on a WFPB diet. Still, a bit more self-monitoring would be a good thing.

One of the benefits of going on vacation is appreciating our home when we get back to it. I find it easier to stick to my WFPB diet and I'm better able to control my environment when I'm at home. I'm careful to "win my battles" at the grocery store and not buy what I don't want to eat.

It was nice to get away but I am happy to be home again! Just in from a very brisk morning walk, frost on the roofs and windshields here this morning but at least the sun is shining. I will be busy today hauling "stuff" to the roadside; twice a year we have large garbage pickup, it is a great time to put out items that others can use and most often nothing is left for the garbage trucks to pick up. The ultimate in recycling.

I had a wonderful staycation, managed to walk at least 5 miles every day. I chose to accept eggs for breakfast at the B&B but the breakfasts also included lots of fresh fruits , roasted veggies and fresh whole grain breads; lunch was just a snack of fruit I carried with me and dinners at local restaurants were vegan so all good on the eating side.
It is cold here, only 2C this morning so frost on windshields but gardens not affected as yet. The 5% challenge begins on Saturday and I am ready to begin. My goals are set and I am excited to be able to motivate other team members.

On a two day staycation in Annapolis Royal, Nova Scotia; no chores, no demanding pets. Just me, my feet and a yen to explore this town which was founded by Samuel de Champlain in 1641. Tomorrow I will spend the day in the Historical Gardens, 17 acres of planted bliss! Later this afternoon a long walk along the waterfront trail and then feet up for the evening and early to bed.

The friend at work I was making meals for has been laid off and I lost my accountability. I do still see him on the weekends since he is helping me get the old house de-carpeted. He says he hasn't cheated and that he feels great. I hope he's been paying close attention to his numbers an whether or not he needs the insulin.
Losing my accountability is probably the main reason I volunteered to be an EL on my 5% Challenge team WRJ&G. Having to be accountable to the team will help me keep on the path. Last week of the 5% challenge and I am planning on eating 100% plant based through the week with no treats of wine or cider allowed until Sunday. Menus and shopping done and after two days I am already sleeping much better and feeling energized.

So, Kerry, was Dr. Barnard's presentation the same as when you heard him recently? You said you were hoping it wouldn't be. I always enjoy listening to Dr. Kim Williams speak. He is very knowledgeable and motivating. It's the first time I hear the name Dr. Steven Lome. The one who has helped me the MOST and who is my go-to teacher and who's books I've read is Dr. Joel Fuhrman. His dynamic presentations are what drew me into a WFPB lifestyle. I'm convinced he saved my life and I am very grateful to him. In fact, I'm grateful for all the wonderful teachers we have in the plant-based world!

Glad you are back in the saddlle today, Countrouble. My goal today is to clean the refrigerator and back up my laptop. I am looking for a new one because this one absolutely goes bonkers every time there is an update. It's old and certainly has served it's purpose!

I'll be looking for a non-apple replacement--any suggestions?

I also need to replace my phone that is older and constantly out of memory, won't keep my contacts.

I've been semi-MIA the past two days. Evidently some time on Tuesday I accidentally hit the off button on my power strip and Wed morning my computer died before I got much of my SP stuff done. Did what I could from my phone, but that isn't much. For instance, I can't find the bonus spin or the team flags from there, so no team points for two days.
Took the computer to Geek Squad after work yesterday and when they plugged it in, it worked. Made me feel a right idiot! Got home and checked the power strip and sure enough, the whole strip was off. Turned it back on and plugged the laptop back in to charge, so this morning I was able to do most of my SP routine. Still behind on reading blogs, but I will get to those tonight.
It's Friday - have a great day and a wonderful weekend, folks.

Lately, I've been too busy for regular, formalized exercise so I have been doing indoor and outdoor chores with speed. For instance, if I am walking from the garden back to the garage for a tool, I sprint. If going up stairs, I take two at a time.... It's not ideal, but what I have to do at the moment.

I get mine directly from the FOK website. If you subscribe to the newsletter, they send a notice with a discount off the newsstand price before it hits the market. Of course, the savings are eaten up by the postage.

They are not available in my part of the world either. Lots of other sources of recipes and health tips that I can source online whenever I wish.

Well, look at it this way, Controuble, if those junk food vendors help make the whole conference happen, it'll be ok. All of the participants certainly speak out against that stuff!

And maybe, someone will progress beyond the junk and eventually be able to live a healthier lifestyle.

Like all "trade shows" it had to be sponsored so people like Beyond Burger are very eager to do just that. it is unfortunate that people are less inclined to prepare home meals, a recent article here shows that the trend to smaller homes and apartments has led to kitchens becoming less important. Some are omitting stoves completely in favour of microwaves for heating up precooked meals that stores are now offering. Ugh and a real added peril to our health.
