My thought was to buy the tomatoes and freeze them...Then thaw them during the winter when I make my batches of vegan soups/chilis. Can I just buy a bushel, dice them, put them in freezer bags and throw them in the freezer?

I would vote freezing, unless you are already an established canner. Canning can be very time consuming, although once you have a system it gets better. You'll want to be EXTRA careful on the canning process. If anything goes wrong (bad seal, not enough heat...) you're setting yourself up for A LOT of wasted food. Look into your county extension service (every county has to have one), sometimes they offer classes on proper food storage techniques!

Freezing is easy-peasy though. Just make the soup, chili, whatever, stick it in a freezer bag, mark the date and contents and pop it in the freezer. But, make a plan for when you'll eat these yummies, or else they'll be in there all the time and you'll be in such a habit of cooking that they never get eaten!

I am shocked at how much salt is in all canned things, so I am thinking about canning or freezing my own staples. I make a lot of vegan chilis to eat in the winter. So I buy a lot of diced tomatoes, tomato puree, etc. Does anyone know what is easier...I have a freezer so I could freeze instead of can...
