I'm not keen on tofu, but have found a tasty nutritious meal while here in Goa.

It's a masala omelette.

Eggs whisked, then add finely chopped tomato, onion and green chilli as it starts to cook - absolutely delicious and good for gut health too, my daily breakfast here in Goa, atop one slice of wholemeal toast spread with two triangles of processed cheese.

Tofu is a funny thing as it has no flavor by itself .... But what you pare with it ... like the Tofu parmigiana brings lots of flavor. .....Other times i make it and dip it in my homemade Hummus.

...::: For dinner I am going to fix Tofu Parmigiano.... emoticon ... I have not made it with tofu before but it looks very tasty and simple to make with very affordable calories!...:: And yesterday, I purchased a Tofu press, which is really cool so I plan to be making more tofu dishes soon.

Dinner last night was a homemade chicken Madras, with peppers, onions and boiled rice, no fat added and served with cucumber raita. I added no fat and the cucumber raita was made with fat free plain yoghurt, as was the Madras, during cooking and at the end.

Easy lunch at work:
raw veggies with light cream cheese
veggie burger
fruit

It's low cal, but quite filling. I have nuts or fruit for mid-afternoon snack.

I eat the same breakfast daily, Special K Nourish with milk, coffee with Splenda and a bit of coffee cream. If I want a change, a hot cereal, I have oatmeal.

This morning I had:
2 Small whole grain pancakes
5 blueberries
1 tsp sugar free syrup
1 tsp butter
I sugar free fruit cup
1 cup milk
2 turkey sausage
434 calories

I'm starting small. Trying to revamp my thinking and get me focused on being healthy (again).

January goal: track my food
