I am not having too hard of a time getting the produce I need for the meal plan, but I am only cooking for one, so that frees me up. However, I am wondering how it is going to work when it is winter and all these yummy foods are out of season. Bananas are usually cheap though, and applesauce is easy and cheap year round. Also, I saw where you can put summer fruits in a blender and freeze them like popscicles. I haven't tried it yet, but it sounds yummy and would be a good way to keep them from going bad.

I have made it a habit to at least try whatever is on my meal plan. Some things that sounded awful have turned out to be new favorites (like veggie chili) and others I will never eat again! I also have learned to stretch the budget and the nutrition by buying dry beans and rice. They really don't take much to cook up, and the quality is SO much better than canned or instant. Invest in a rice cooker, though. I picked one up for about 13 dollars. I highly recommend jasmine rice. It has a wonderful texture and flavor.

I am looking forward to cooler weather so that I can take advantage of soups! Make a lot and freeze in small portions.

God has given me this day to use as I will. I can waste it or use it for good. What I do today is important because I am exchanging a day of my life for it. When tomorrow comes this day will be gone, forever leaving in its place something I have traded. I want it to be gain, not loss; good, not evil, in order that I may not regret the price I paid.

Amen to eating healthy but dreading the cost! As someone who is on a budget myself, I try to make it a goal to buy at least two veggies and fruits that I can eat every day. A good, cheap option would be to buy carrot sticks... This is my go-to on my frugal weeks! A bag can be around $2 and last all week. I like to portion mine out into baggies and eat one a day. One good option is to look in your local papers on Sunday and often local grocery stores will have one to two coupons for their fresh produce that are buy one get one free options. Scour for those and it will help immensely!

what i do to help save on money for meat (apart from eating a lot of meatless meals), I go to the store on sunday morning and most of the time some of their meat is on sale because the sale date is up in a few days. As long as you use and freeze it by then you are perfectly fine. sometimes i just freeze it and sometimes i use sunday to prepare meals ahead of time while cooking the meats and then freezing it/putting it in the fridge for the rest of the week.

Try cooking your crockpot meals on the days you are home from work and then you can put them in "ready to eat" containers for quick meal fixes during the week.

When you have a few days off in a row try to increase your water intake - just do it a little at a time eventually your body will get used to taking it in and release it on a schedule. This week I increased my water and dealt with some swelling the first few days but today I am back to normal - I also blame some of the swelling on my treadmill - doing too much too soon.

I wish I could make stuff in a cock pot, just put stuff in leave it alone. I need to learn how to do it so I wouldn't be worring all day at work that my house burned down.

And what about drinking 8 glasses of water?? What about water weight gain? Plus I work at a call service. I'm at a desk with a phone strapped to my head. I tried drinking water all day and I ended up peeing all day too. I can't do that at work, when I'm on the phone and I got 7 people waiting to talk to me. The supervisor kinda frowns when I go away to pee when its not one of my breaks.

I ended up just not drinking cokes.

I am just getting active on the site again but one thing I did learn to make on here that I loved loved loved was:

Salsa chicken - it's just chicken with salsa poured over the top and cooked in the crockpot. You can do so much with it...for dinner we put it over rice and then the next day I took left overs and made chicken tacos with whole wheat soft shells. The kind of shells I get are very high in fiber made by MISSION.

They're much like onions I guess. I cut a whole one up and put it in my vegetable soup. Yummy!

lol. Just like how a beet is what I listen to not what I eat.

What are some of your favorite recipes? I was trying to look for healthy breakfasts but they're like 12 grams of fat, 24 grams of fat. I can eat apple sauce & cheerios and it would be less fat then that.

Yeah, I was thinking of making it as a suggestion for when I make a grocery list. When they say peaches 2 inches in diameter,.... I write down Fruit!
I had to look up what a leek is... I don't think I would like it, and I don't want to buy a whole stalk of it... or whatever it's called.
Oh wow! I love how I can just "add food" to my meal plain on the recipe page. I'm gonna try the egg's and oaks tomorrow. Thanks

You can do this...Just use the meal plans as an idea - be sure to check out the recipe section. For me I turn off the SP meal options because I am such a picky eater...I do not eat fruits or veggies or should I say I only eat a very very limited selection - just too picky. I rely on V8 fusion which is a mixture of fruits and veggies in a yummy fruit flavored drink!

Don't give up and figure out what works for you!

I have been lookin at the nutrition guide. How in the world am I going to get all of that? I'm poorer then dirt! In the past, I've tried to get healthier food like a thing of grapes or strawberries or something from the grocery store and unless I eat it every other day, half of it goes bad and I would have to throw it away. -That isnt something I can do. I learned that I can get away with cutting up veggies once I bring it home and freeze them. I've tried to do it with fruit but I just don't like the taste of it. It's soft and gross feeling after I microwave it. I can't buy no 6 oz thing of yogurt. I've been getting the big tub of it and measure out 6 oz for me to eat. I tried to do the vegetarian guide, only cause I want to make meals that isn't circled around meat. I've had some good vegetarian meals and I want to pursue that. But I will eat meat. I had a hot dog at a birthday party last Saturday & I'm about to eat some turkey ground meat and rice with Mushrooms. -I'm at my mom's house, and she told me to make dinner. :-P
