Tabbouli! Can't get enough, it's a staple at our house (1-3x/week usually).

Recipe is so easy & the taste is so fresh! Just make sure the parsley is nice and fresh, not tough. There are many variations, but here's the way I make it:

1 bunch of parsley, chopped *either curly or Italian are delicious
1 cucumber, peeled, seeded, then diced
1 bunch of mint leaves, chopped
1 lemon, squeezed
1 tomato, mostly seeded, then diced
2-3 green onions, chopped * you could probably use red onion too, but I would use less
1/2 c bulghar wheat

To prepare the bulghar: put into a separate bowl, add boiling water to about 1 - 2 inches above the bulghar, then cover the bowl with a plate or lid to keep the steam in. It will absorb the water & be done in 5-10 minutes, depending on the size of the grain. Drain thoroughly.

Add everything to your salad bowl, add Olive Oil & salt, pepper, and toss

A lot of times I double or triple this; you can add more or less of anything, depending on taste - it's a very forgiving recipe. The main thing for me is making sure the parsley-to-mint ratio is right.

A couple personal preference nit-picks: I like to add the mint over the cucumber & squeeze the lemon juice over that, and I also always add the salt right after throwing the tomatoes in - it really brings out their flavor!

So I was at my sister in laws and she made a really good brocolli salad and she also made some kind of salad that had black beans, olives, tomatoes, etc. These of course are non lettuce salads. Since this is a green smoothie forum I know perhaps most of you just drink veggies

Yet occasionally (especially after my visit to my sister-in-law) you want to just eat something scrumptious. What salad recipes do you just love? (Oh and yes, I mean love, can't get enough of,etc. Please share your recipes here. :P
