Biked to work today, and walked on my break too. I should sleep deeply tonight. DH decided to bike to church tonight for the meeting he had, about 4 miles round trip. It's a good reminder that we set the example in our families. Since I've started biking to work, he's started biking with me for fun, or doing short trips on his own. I'm happy he's getting more active.

DH and I also are booking our anniversary trip this week, for the end of January. We'll be spending a week in Jamaica. We've never been out of the country so this will be an interesting experience, really looking forward to it.

Jeanne- that's it. I soaked the beef in the Dale's for a couple days in the fridge. I put a cooling rack inside a jelly roll pan, then the meat on top. Cook for 1-2 hrs, flip, finish it up. :)

Next time I will find a different recipe, Dale's ingredients aren't the best around.

Jenny, is there anything to the jerky other than the beef and seasonings (and cooked at 250?)

Beef jerky- mmmmmm!
My work computer detected malware- never happened before so beware!

MJ- I weigh everyday in the morning usually. Somete for fun I weigh at night too just to see what a daily fluctuation looks like for me. I love the science of it all! Now I can guess within ounces what my morning weight will be based on an evening weigh in. I like to see how close I can get!
Green Thai chicken curry and green beans over spinach for lunch- omg so good! Thinking breakfast for dinner maybe.

So, making beef jerky today! That's new! :) Using Dale's Steak Seasoning (it was here, might as well use it. Crappy ingredients, but low carb) and the house is smelling AMAZING! I am cooking them in the oven low (250 degrees)

woohooo Mom! Hope it's a woosh!

I haven't seen anything to do with Spark on malware. Check with whoever your Security Comp. is. I always go there, if something pops up that I'm not sure of. Actually I have ad blocker which stops a lot of those.

All the food sounds good. I went to the U-Pick place and got some cukes, green peppers and zucchini. They planted just a few of everything this year and the pickings are really slim. And tiny. I think because there's not much, people are picking everything very small.

Lunch will be eggs, either scrambled with veggies or scrambled by themselves and a salad on the side. Some study said that eating three eggs a day reduced inflammation markers (C-reactive protein) and increased some anti-inflammation marker, so I've been making a point of eating three eggs a day. Supper will probably be a hamburger and veggie concoction with zucchini, eggplant, peppers, tomatoes and onion.

Today is a busy errand day. Walked the dog, went the U-Pick place, came back and cleaned up, will go to a produce stand and get some corn for Mom on my way to physical therapy, then to Winco and on to Mom's to change the bandaid on her foot and take her dog for a walk, plus pick up apples. Then to Smith's to get some liquid spenda. That's all this morning. Nothing planned for this afternoon.

Have a great day everyone. I'm not sure about global warming. There's supposed to be a 20 degree drop between yesterday's high and Friday's high!

Good Wednesday morning, all!

I was able to take the fat off my cooled beef bone broth this morning. The broth is in the freezer in small containers which I will eventually empty into a freezer bag for ease of storing. I can't wait to make some chili this weekend using some of the meat pieces and broth.

Something different I did was saved the thin layer of fat from the bone broth and also froze it. Instead of adding butter all the time I thought the beef fat might come in handy for cooking. Is that gross? emoticon Don't have any idea if it will work but am willing to try!

Thanks. Today is grocery procurement day. I will be hunting for healthy proteins and fats and gathering up a lot of fresh greens. My healthy kitchen is almost complete. Just a couple of cupboards left to sort.
A wonderful Wednesday to you and all.

I think I eat pretty well, but all of the beer was terrible for my waist line.
Although I did have some gluten free veggie lasagna with rice noodles yesterday for lunch, which was delicious!

I am just trying to cut back on carbs, mostly beer! I had 3 large bloody marys last night and could not sleep....sigh about a cup of vodka=6 shots.

dinner last night was red curry talapia with califlower and green onions in coconut milk. it was very good, hubby liked it.
snacked on some almonds later.
Looking at recipes for tonight....
aluminum foil chicken and veggies which I got off the salad bar at whole foods.
spiral zuchini, yellow squash, shredded mixed carrots, mushrooms, some shredded butternut squash and green onions and a few colorful roasted peppers.
using grape seed oil and dijon mustard should be good.
