If you have to use canola oil, see if you can find non-GMO oil. Also, it seems like Walmart sells a brand of mayo (I can't remember the brand - I can see the label on the jar but can't remember the brand) that is made with non-GMO oil and the other ingredients were plain, simple ingredients. You might check that out as well.

Thanks MissVJS, I will try that recipe. I have decided that, due to my crazy allergies, I just have to use the oil that works for me, and that means canola or vegetable (I chose canola), as well as butter. I will try to make some mayo this weekend and see what I think. Last time I used canola I could "taste" it later (burping it up), and figured it was because my body was used to "the good stuff".....I know it's not ideal, but it's about all I can have.....

I make my own mayo all the time, but certainly do NOT consider myself an expert as I've had my share of failures. I think there was one time I was able to "save" it but I don't recall what I did. I always make sure the ingredients are room temperature; I've also found that using fresh squeezed lemon juice works a bit better than vinegar. I break the egg in my 1 pint jar, add the lemon juice (1 T.), salt (1 tsp.), mustard powder (1/2 tsp.) and paprika (dash), then I add the oil (1 c.) - usually plain olive oil although I've also used walnut oil and avocado oil. I put the immersion blender at the bottom of the jar and gradually pull it up until it's all incorporated. For some reason I've never figured out, my recipe has me slowly add another 1/4 oil to the mixture after it's all been incorporated. I've always done it this way because I'm afraid to ruin all those ingredients by adding it all at once! I seem to have the best results with olive oil and avocado oil - walnut oil has separated on me more than once. I'd love to try it with macadamia oil, but if it doesn't work - that's expensive oil!

I've wondered if the oil isn't fresh if that has something to do with the mayo not incorporating properly - I've used really fresh eggs and older eggs with equally good results, so I don't think that's it. I've also wondered if the humidity in the house makes a difference since I seem to have better results in the summer when we have the AC running 24/7 keeping the humidity low. Sometimes I think it's just a crap shoot!

budgetmaw, I tried your chicken and sausage(spinach and feta chicken and turkey) casserole last night and it was very good! Thank you for posting all of your recipes. I have easy access to 84 of them. I did change things up a bit. In addition to the califlower, I Used a bag of mixed veggies, brocolli, red peppers, green beans and mushrooms, cup of chives, 2 tablespoons of minced garlic and some dill. I also used 8 oz of cream cheese and 8 oz of shredded cheese(almond cheese from whole foods which was quite good and no one could tell any difference.)

As for possible reasons why the mayo didn't work, here's what I found:
1. Make sure the stick blender just fits in the container you're using - you don't want a container that's too wide.
2. Any drop of water will prevent emulsifying. I'm pretty sure everything was totally dry the first time. The second time maybe not.
3. Put the acid in with the egg. My recipe says to mix it in after the mayo has emulsified. It's always worked before, but that may be a reason so I'll add it before mixing next time.
4. Ingredients not at room temperature. I've read several recipes that say the egg doesn't have to be room temp, and I've always done it cold. But worth a try.

I had a New Zealand mayo I should share with you. Haven't made it for years, don't even remember what's in it, I think they call it Vegemite? Will have to look for it. I just use good ol Best foods.

That little tortoise is adorable!

Any homemade mayo experts? I've been making my own regularly since April, and sporadically before that. I used to have problems with it "breaking" when I used my blender and decided it wasn't worth the expense when I had to throw out a batch that wouldn't emulsify (is that the right word?). Anyway, after I bought a stick blender I tried again, and have never had a problem. Until tonight. First batch wouldn't get thick. Thankfully I had only used about 1/3 c. of oil at that point. Tried again and had the same thing happen. I'll Google a little, but wondered if anyone knows what causes this? Cheap oil? Something with the egg? I used Walmart's Great Value olive oil, but the last batch I made came out fine with the same brand.

Bank holiday here today. But it doesn't matter: I am in hospital.

Lungs were worsening (asthma and infection), so now in hospital. Nebulizer several times a day, more powerful antibiotic, and loading up of steroids, all aimed at reducing the swelling of my airways. Much better already.

Glad I didn't need to be incubated. The mere thought had me in a panic. Anyway, I can catch my breath now, even though I get easily winded just by getting up and walking a few steps. Progress will follow, I am sure, and I hope to be going home within 2-3 days, at the latest.

On the mend at least. Had paramedics visit at home Thursday and Saturday, and community nurse practitioner on Friday. All said I was okay and didn't need to go to hospital. By Sunday night, yesterday, I couldn't catch my breath, so called the paramedics again. And here I am.

Anyway, on the mend.

Cute new baby, MJ! His breakfast looks almost like mine! Today will be a busy planning day, since I took the weekend off to relax. But, time to plan the menus for the week and get the grocery list ready. I have been cleaning out right along and getting rid of foods that aren't healthy for me (or anyone else in the family). Some of our teammates have linked me into a lot of reading and video watching. I'm getting "smarter" all the time, and more firm in my resolve that this way of life is the correct one for me. (great BG numbers of late! I look forward to my a1c report in December!) Have a wonderful day. Stay strong!

I agree JEANNE229 I think I love animals more than people, sometimes.

Enjoying my morning coffee now, just got back from the lab. and couldn't drink it before I went. So savoring every drop.

I have a new baby! His (until gender is determined) name is "Tee Tort" he's a baby desert tortoise he's 2.5 in long. He is 13 days old today. And my goodness, he is already spoiled! He likes me holding him in my hand, he just sits and meditates. I feed him, romaine, green beans cucumbers (can a tortoise get fat?) And I just ordered some Tortoise food (recommended) on Amazon. I am going to register him with the fish and game dept. I was told it wasn't really necessary, but I am so by the book, must do everything the right way, as I am with this plan! lol He's having breakfast here.

Morning all. just sparking along. gonna be a busy week here, working over 30 min each night so I can make up time for Thursday appts (ultrasound and mammo), plus band fundraiser things, and practice, football game. Not as busy as last week, though, so that's a good thing

been trying to change things up. I get the concept of fasting, and I am good with it, but my bs seems to be raising, so I have been trying to eat breakfast every day (read it may be over stressed pancreas due to fasting?). Not seeing changes on the scale, but TOM here, so I'm ok with 1 pound gain ;)

we did good last football game, got hamburgers and wrapped them with lettuce, mayo, etc. :) that and 2 bottles of water and I was good to go! Will see how this week goes, trying to figure out "Jenny friendly" food we can throw in the cooler for the family... cheese is a given ;) but... can't do salami's etc. Will do veggies and dip for sure. Maybe some leftover chicken wings for me? DH doesn't mind lunch meat by itself, but me and the girls are more picky! LOL

Was out all day and will be gone part of day today helping my mom get to doctor office. She fell this past Friday while doing her PT therapy - and I'm surprised PT let her work out so close to a table. Hit her left temple area on table and then bounced on down to the floor. The goose egg was above her eye but yesterday all the bruising was draining on down around and past her eye and below. (As some would say - "you should see the other guy!"). She takes Coumadin anyway so we'll see what doc days about adjusting her doseage.

Really tough to hear about your horse, CalGal!! That's such a difficult decision no matter what animal, cat or horse. I feel for you.

And when my son was colicky, the midwife suggested and we used catnip oil. I still see them in the health food stores. As it turned out, a friend sent me a bottle of the wild crafted catnip for our son. I still have it but use it with our cat just for her enjoyment. Any case, he ended up not really having the colicky fits, so it's all different kids and different results and all you can do is what you can. I'm sure your daughter is appreciating the extra sleep.
