You are following an eating plan that is pretty close to my own. I'm just a little higher in protein from the sounds of it, about 70 grams a day, and though I don't avoid fat, and do indeed eat a fair bit of cheese and stuff like that, I'm not sure it is high fat.
Yes, carbs absolutely put you on a biochemical path where only more carbs will do. A vicious cycle. Sounds like you broke that cycle. Congratulations!
I suggest you track what you eat and drink. When I track I track calories, grams of fat, protein and carbs. Especially track your grams of carbs. Keep that low. In no time you have a nice list of things you like and things to avoid.
After 19 months of low carb I was still shocked at the percentage of carbs in cashews. They are off my list now. Plenty of other nuts are much lower in carbs.
