Good evening all.I recently found out I have celiac disease and realized low carb is going to make my life a lot easier.I also miss pizza a lot,so I have a recipe for cauliflower crust pizza.I make 4-5 at a time and freeze the crusts,take them out top and bake.They really do solve my pizza cravings. Diane

I have used the low carb tortillas and agree that the flat bread would work better as the tortillas don't work that well.

I did find a paleo pizza crust recipe at Marks Daily Apple site. Paleo eaters generally do not eat grain and this crust is made of almond flour. I have baked a few things made with almond flour and find that I like them. My husband and I are gluten sensitive and tend to have some problems if we eat bread, pasta and the like. I do miss pizza and have many times used portabella mushrooms as the crust, but it is just not the same.

I use the low carb tortillas or the lite low carb flatbread for a pizza crust.. The flatbread works better, has a little more body to it.

I don't know what a paleo pizza crust is, but the oopsie rolls recipe is supposed to make a decent, but not crispy crust. FWIW, kitty

So i was able to go buy the atkins book! when i started this i oogled it for phase 1, and would ask my dad questions since he used atkins back in the day.

after reading lots of post people kept says to other you need to read the book, its a must.

im only about 30 pages in and this is an interesting book! i bought the origional, i herd it was more basic and easy to follow... thats what i need!

im off work today and tomorrow so i plan on having the whole book read!

Suzanne, Great to hear from you - we've all been wondering how things are going for you.

Good that everything is going well - I think especially in early pregnancy, the hormones get so out of whack trying to adjust that it's hard to commit to anything in particular, I remember being that way - "way back when".........

Hi guys! Hope everyone is doing well. I am ending my first trimester and finally starting to feel a bit better.
For the first time in 8 years, I went totally off plan. But, I am feeling better and have been back on plan this week and think I will make it the rest of the way. The first trimester is always the hardest on me. I know sugar is the worst thing for me and the baby, so now that I feel better I think I have the determination to stay on plan.

Started a carb-controlled diet on 12/29/10. Lost 20 lbs over 4 months--woo hoo. Was within 3 lbs of my goal weight, which is smaller than I've ever been since age 11. Gradually added back fruits, yams, occasional piece of bread/or very small serving of rice or pasta and desserts once a week or less. I was within a range of three pounds of my goal for about 5 months. This past week, however, I've crept up another 2 lbs (4 lbs heavier than my lowest). So, I'm recommitting to controlling my carbs. I am doing so by cutting out sugary foods, bread, pasta, rice, and raising my protein and vegetable intake. I'm definitely craving sugar today, though, and am coming down with a cold and sore throat so don't feel too well anyway. It feels hard but I know I will enjoy my life more if I'm not ruled by sugar!

one thing we need to remember about s/f desserts and treats. if we keep them as treats, they may not be to bad, it all depends on how your body reacts.
Many people have found that some or all of the artificial sweeteners tend to stall weight loss. it's believed that the body can't recognize it as food, so the body goes by the sweet flavor and pushes out the insulin to help deal with the "sugar". that insulin, of course causes the body to store foods as fat.

Another result of that added insulin seems to be that it increases the desire/craving for sweets. be careful with them and be aware of how it affects you.

IF you get cravings after eating a s/f dessert, gum or soda reach for the hard boil eggs or meat and fill up with that and fat, perhaps as an egg or meat salad. once full you will be able to turn your back on the cravings.

to reduce the insulin levels go for a walk. LOL Hope this helps someone. Kitty

also while some folks say you should avoid them at all costs, if having a low carb sweet treat is the different between sticking with it and quiting... indulge! Sugar free jello, SF pudding (both are sold in the grocers along with the regular stuff), low carb Bryer's ice cream, SF kool aid and other drink mixes, etc.

You can also use kool aid, jello mix and/or pudding mix with heavy whipping cream to make a lucious desert! Freeze the bowl and beaters for 5-10 min, add cream and flavoring, whip til stiff. :) you can also add splenda and a small amount of unsweetened cocoa for chocolate (or use the pudding mix - do not add the whole thing! If anyone wants it I'll try to find the actual recipe)

Cool whip (limited amounts) is a nice treat with some jello.

Vanilla Bryers LC ice cream and a crushed sugar free popsickle (especially orange or raspberry) mixed in makes a great dreamcycle treat.

SF popsickles bought or home made are great!

Oh, and I also got a $2 packet of ground pork. I am going to take that and cook it "crumbled" in the frying pan, add onion and spice and a packet of stir fry veg and when it's cooked down and the water has cooked out of it I'm going to (individually on my servings as I eat them) put taco seasoned grated cheese on the top and melt it over it!

Cheese also is huge... I know you're only suppose to eat 2 oz but really if you only have it once a day on something that's MORE than enough. That's a whole 1/4 of an 8oz bag... you can probably have it on your eggs and on your dinner or lunch!

Adding the stir fry I know I say a lot but the reason is it's small chopped and blends in well and has a variety of tastes and now I know you can get different mixes at WM :) so it really helps keep the visual and taste interested and not "bored" with the same old and the onions, peppers, etc. really help to flavor the food.

RTFM, I have found the best way to stay motivated food wise is DISHES! I have a tendency to eat "food" and then I lose interest so I have to keep reminding myself to eat dishes.

Stir fry meat or chicken or shrimp with frozen stirfry veg. Add butter and soy sauce.

Quiche (with a flax seed or no crust - see oopsie rolls thread below)

Bacon pancakes (see oopsies for lots of other ideas too)

OMM (one minute muffins - see thread below)

Lasagna (get some low carb/sugar free/ or just use sparingly tomato or spaghetti sauce) with lots of cheese and slices of zuccini, egg plant, or I just read EGG - cook a flat omelet and cut into strips!!!! as the noodle replacement. Add veggies and meat to taste.

Use spaghetti squash, egg, zucchini, egg plant etc. strips and top with alfredo, low carb/sugar free spaghetti sauce, butter and egg, etc. I LOVE to take zucchini strips (thin and skinny), blanch them so they're soft but not overly limp, then fry them with butter, add 1-2 eggs (depending on how much there is) and over a LOW heat coat them all with the egg, add ham or bacon or both (optional) and top with grated parmesian!! Basically use the strips as a pasta replacement. You can try the low carb pasta too if you want and can tolerate it weight wise... some can, some can't. Grean beans are also HUGE ... you can use them as is but even better get a package of frozen julliened, let them dethaw and drain in a collander, then use for your "pasta"!

Have you tried any of the cauliflower as potato or rice recipes yet? There's even a rice pizza crust receipe!! (it's in the oopsie rolls thread below)

SOUP! This is a great time of year to start making soups... if you have a crock pot try making your own... I like to put in chicken legs with water and I throw in some garlic and onion (you can use dried/minced!) and let it cook on low from the time I go to bed til I get up in the morning. I take the legs out (use a slotted spoon-they are that drop off the bone yummy!) and use the spoon to get out any cartlidge or such that is in the broth. Transfer it to a pot while it's room temp or better - you can still use it if it gets cold but it will congeal and some people think it's gross... I think it makes it look real! Add frozen veg (you can do this whole part after work) and some of the chicken leg meat and heat til hot. SUPER easy. The cool part is there is next to no work involved!

Sauces ... use sauces!! This keeps the palate interested and makes it a meal, not a food item!

Sour cream. You can have a limited amount and when I'm super bored I'll dip my meat in it and it's a great "treat"!

There's a whole recipe section below... go and pick one recipe a day or week or do 2 or 3 this weekend!

Go to the store and find something you never ate before and get it! (take an old fashioned calorie counter book with you to look up the carbs)

Explore the sauce section at the store or find sauces in the recipe area below or look on the Atkins site.

SPICES!!!! HUGE deal!! When you are eating carbs, the carbs flavor the meat. I flavor the meat with spice. I just baked 10 chops oh, cooking in volumn helps with the work issue - I bought a flat of pork chops - 10 for $9 and put them all in the overn on aluminum foil (I don't even use a pan - just crinkle the edges up a little! zero clean up!!) 4 of them got margorie, rosemary, basil, thyme, and something else I forget, one got curry, 2 got chili powder, 2 got lemon pepper one got cumin, one was "plain" and all including the plain got salt and pepper. That way I'm eating 10 pork chops, but they are all different flavors!!

Yeah, they've been so brainwashed with carbs good fats bad they can't think for themselves!! Doesn't matter what I show them, how it's been proven wrong... they just can get over the whole indoctrinization process!!

But then I had a diabetes instructor who told the class a red blood cell lives 90 days. Uh, the average life span of a red blood cell is 120. NO I'm wrong... the fact that you can google it and my sister who is a doctor (and IS a low carb advocate) use to teach pre-med biology at U of M confirmed the 120 days makes no difference... Now if she'd said the average DIABETIC's red blood cells live about 90 days I'd have gone along with it, but like many people, the information goes in and comes out without having any interaction with the brain!

I feel like I am running out of ideas on things to eat. I could eat so many veggies but I feel like I shouldn't be eating things with carbs and the things I do eat add up so fast! It seems like all I eat is meat, cheese, eggs, salads. I'm only on day 5, any ideas??

So the medical ones don't believe in the Hyperinsulinemia? It seems to be in all the newsletters I get now, so i'd think they'd know about it. well if they don't, chalk it up to they need a few more conferences and medical conventions. LOL maybe you can get them to read the Research portion of the Atkins book? although that's already ten years old it still has a lot of stuff in there.

That's awesome Kitty!! I'm glad that stops them :) I've started telling my NONmedical friends that it's because I have hyperinsulinemia. That generally shuts them up ;) it's my medical friends I have a problem with HAHA!

I don't get nearly the criticism that many of you do because I got diabetes a few years ago and the research is that low carb lowers the insulin resistance that is such a part of type 2 diabetes.

However, I'd just tell them it's doctor recommended, even if in your own mind that doctor is Dr. Atkins or Dr. Eades or Dr. Berenstein. There's so many Drs out there that are recommending this way of eating for everybody or most people that you have quite a pick of Drs who've Recommended it.

Oh, and so funny... my one boss (I have 2) is a guy same age as me and he just started doing atkins again this week LOL! He gets lean during the basketball season and then gains it back over summer, so he always diets this time of year.

Okay, I am home now :) I had to run when I was writing the post below as the just turned 3yo was climbing UNDER the baby gate to the basement stairs (rollingmyeyes).


So... on the way home I stopped at WM and got some Atkins shakes to take to work for BFast (I have a problem eating in the morning sometimes... not awake enough I guess :) ) and some bars for a night time snack. I also got stirfry veggies, 3 different kinds!! I had no idea WM had different sets! I don't like asperagus so I didn't get that one but I got a broccoli one and then one that has the baby corn (which I'll pick out) and then a regular one :) YUM. Also pork chops and ground pork that I'm going to season and brown with some veg and put taco cheese over :)

I like to cook them with the coconut oil cause I know it's good for me... I like the taste of the butter :) Especially if I put shrimp in it!

I am constantly inundated with nutrition advice!! I work at a health care place too so they have lots of educational materials.

Triglicerides: caused by sugary foods and (bad) carbohydrates.
Solution: eat low fat.

WHAT???????? How does that even make sense? I actually read that in one of the health brochures we had!!

I told some of the health navigators about the AtoZ diet and they were shocked at the results LOL!!

I do something similar with fresh vegetables and different meats. Last night we had eggplant, zucchini, peppers, onion, garlic, and tomatoes sauteed in olive oil and fresh basil and oregano. It was delicicious.

Runtofindme - I was surprised to see the amount of carbs in foods several years ago when I first started watching. I still was eating more carbs than I should even though I realized. The problem I have noticed the past couple of weeks is I am not getting enough protein most days. I have gotten pretty good at eating low carb. And yes, I have been told this is not a healthy way to eat. What works for me, may not work for them and that is pretty much what I tell them.

Darloudasha, I do pretty much the same as you. I take a bag of frozen veggies (not necessarily the stir fry kind) and thaw them on the counter on paper towels so that the liquid will evaporate or soak into the towels. Then I put them in a skillet and "fry" them - although I usually use coconut oil rather than butter (just a choice) and will either put meat into it or have the meat alongside of it. That gives me my veggies (and carbs) and proteins as well.
I like the veggies fried so much better than steamed!! My favorite is a mixture I get from Walmart which has asparagus, green beans, broccoli, cauliflower, carrot in it.

I think I am starting to figure this out. I can't believe the carbs in some things! And I had such a misconception of "healthy food" and low carb food.

Do you ever get critisized for having this type of diet? I feel like I have to keep it a big secret because everyone that I have talked to says "No you can't do that you need your carbs for all the activity you do!" Yes I am training for a half marathon, it's not my first, I teach Zumba class a couple days a week. I am not different than a lot of people 1-2 hours of exercise a day depending on if I have class or not. Honestly, last night I thought was going to be tough. I have trouble keeping my blood sugar up sometimes through a long work out. I practiced for 45 minutes and then tought a 55 minute Zumba class. If I was going to bottom out this would be it. Nope I FELT AWESOME after class! Could have kept going!

But do you ever feel this way about others?

One of my quick fixes is to have a quick fry-up. Now, MY fry up is not chips of course!! LOL!

I will take out a bag of frozen veg from the freezer (the stir fry kind) and maybe some meat or shrimp if there is any handy and put it in a pan with some oil (I use coconut) and let it sit on med until it dethaws (walk away for 10 min) then come back and "fry" it up with lots of butter. It's a great low carb way to get veg AND lots of fat at the same time and you can "snack" on it while reading, watching TV, etc.

Darlousdasha - I think you are right about the not enough calorie thing. On days that I don't get enough protein, I also am lower on calories. We have been so busy this month that I just eat low carb, high protein(sort of) and don't know everything is low until the next day I get on the scale and I am up a bit. I plan on paying more attention every meal after our house remodeling projects are done and our company has left. Around the first of October. Until then I will just do my best.

Carbs do add up really fast. In looking back on how we have eaten over the years, people tell us all the time that we eat more healthy than anyone they know, but when you start adding up the carbs they are high. The carbs mostly came from fruit as we eat very little grain products ever.

Cassie, Those carbs add up really fast don't they? I'm thinking you're definitely not eating enough food. Maybe up your proteins. If you're doing low carb eating, you need ample protein (maybe 90-100+ grams per day) and you need to eat fat!! Yes, eat fat!! You will lose so much better if you do this. But, you also need to eat more food... you had so few calories, your body's going to "hold on"... and the weight isn't going to go down.

I'm following Protein power for Life plan and I'm supposed to have at least 34 grams protein EACH meal, plus a protein snack if I'm hungry.(On the protein, more is okay, but needs to be at least the 102 grams daily total. And 7-10 grams carbs EACH meal - or 40 Gr. per day max.. No set amount on the fat, but mine usually runs about 50-60% - or in today's case my protein is 110 grams (35.3%) my carbs are 26 grams (9%) and my fat is 74 grams (55%). My calories are 1216. There will be just a few more calories, I've already figured in my food intake for the day except for a small spinach salad I may or may not make for dinner.

I was pumped and thought I had this all figured out! Went to the grocery store last night and bought all kinds of food, prepared it all into baggies and ready for quick grab and go. Then I started adding up my carbs after I'd eaten lunch. I thought I was doing really good but I've already hit 35. I wanted to stay between 25-30! If anyones bored and wants to look at my nutrition tracker to give me some pointers, I'd appreciate it!

Have you seen the Sanford University AtoZ diet youtube? If you google it you can find the link. Let it load before you watch it! Otherwise it starts and stops a lot. It shows in there that protein almost ALWAYS comes back together no matter what kind of diet you are trying to eat and that the only meaningful difference (not in the diet PLAN but in how people are actually able to eat long term) is the FAT and CARBS. So, yes! you need to eat high fat if you are doing low carb... (and yes the study did show that Atkins was the best over all diet, especially for people with insulin resistance!!)

My biggest issue is if I start I can't stop... kuddos on only having 1 brownie!! I have the hardest time with people's "one bite won't hurt"... YES IT WILL--- Because I can't have ONE bite!! Eating fat is the BEST way to overcome that temptation!! :) I have found myself sneaking "just a titch" and next thing you know I'm sneaking 20 "titches" which is a big whompin lot! LOL!

DEMURALIST, I think 4 lbs a month is fabulous!! That's almost a lb a week and the "healthy"-est weight loss rate is reported to be 1/2 - 1 lb a week! I wouldn't say you were behind at all... and remember we all lose at our own rate!

JSTRIEKER, I use to be a vegetarian and when I would visit friends/family I would either eat first or bring a salad and/or meat substitute. I think if they are truly pulling for you (and if they aren't then shame on them!) they won't be upset if you bring your own food... lots of people with allergies or particular diets do so. You could also bring a "dish to pass" that is nice are Atkins-y that you could use as your "meal" :)

Laurie, I find that that happens to me if I don't get anough calories period... I think the body retains water and fat to keep in case it's going to get stuck in a famine or something :)

Shishycat, just google low carb receipes or go to Atkins (google the exact address) they also have a receipe section :) There are HUNDREDS of low carb receipes out there!! (I think I'm spelling that wrong... aren't I ? ;) )

To anyone who has been following this program for a while, have you ever noticed that on days you do not get on the upper edge of your protein levels you have a bad day on the scale the next day? Since I have been watching my protein levels closely this has happened to me twice. Saturday night I could not finish my dinner because I simply was no longer hungry. Ended up way low on protein but low on carbs and was up on the scale the next day.

I have been doing mostly low carb, high protein (I thought) for a long time but started noticing that even on SP guidelines I was never reaching the high end of protein and a lot of days was below the recommended amount. I have been trying to keep carbs somewhere between 30 - 50 a day, preferring to stay closer to the 30 number. Things have been going good with the exception of those 2 days my protein is lower.

Hi all - I'm new to the group, and to low-carb eating. I just finished two weeks of Induction (lost 9 pounds, yay!), and have been sticking with induction since then. Feeling a little bored with it this morning, I so I have some recipe research to do. Any suggestions?

I'm very glad to have found this way of eating and I'm looking forward to learning more about it.

I know just how you feel! I was on Atkins in 2005 a year after my daughter was born, I gained about 65lbs with her. I was on Atikins and lost about 30 lbs and stayed between 130-138 until recently I am up to 145.00 I don't like it and decided to jump back on Atkins and I am so motivated and determined, and not at all feeling like I can't do it again and this time just make it a lifestyle. I think there are so many more options and great recepies that I will not feel so depreived and I am super excited and not having one ounce of regret!! Keep up the good work I hope to be down to 125 very soon but have decided that this lifestyle works for me! I have never been a big fruit eater and love all vegetables except beets so I welcome all the healthy changes that have happened with the low carb lifestyle over the years!
I 100% agree that just one day it all makes sense!

Hi all - just checking in. I have had a great couple of weeks on plan. However, this week was a bit harder for me, especially today. However, still down almost 20 from the beginning a couple months ago, and this is the first in about 9 weeks that I have gained . . . so, I am ok with that.

My husband and I are both working like crazy right now, so life is a little stressful. All in all, things are still really good. One of the things that I am struggling with is when I get together with my family - nothing low carb nor low calories. . . other than that, I have no issues staying on plan (except this week, of course).

well, it seems my weight is fluctuating up and down five pounds same as always, but now it's fluctuating five pounds LOWER than it was a year ago and TEN pounds lower than the year before. if this keeps up I'll be to goal in about 30 years. LOL

I'm going to aim at 1 pound a month, which will double this ridiculous trend and hopefully get me more serious about doing a bit more. there's no sense aiming for a pound a week if I can't do a pound a month so, I better start where I'm at.

Been suffering hip pain for a month but the school year has started and I have to walk a block up and back to the buss stop every day. this is actually a good thing, even though I thought it was bad. the pain is much less.

Spent yesterday taking DD to college, happy and sad! 10 hours-6 on the road 4 unpacking and setting up her room. She is on the 8th floor, we used the stairs as the elevator lines were too long. Well I should say they, dd and dh, used the stairs. I watched the stuff so I only made the last trip. DD made 5 trips, DH made 3!

But I feel like this is starting to become a part of me, I ate, not sure what, but know that I made the best choices of the available, lost 1.6 pounds.

I actually have no trouble staying on plan at all. Shocking because I am pretty sure that, except for when I was vegetarian, I did not go a week on any other plan without "cheating"! Since I started in March, the only off plan I have done is the week in the hospital and ice cream-once.

My problem is that I still don't have the combination of macronutrients/carbs/calories/exercise that drop the weight at the rate that tends to be reported. (I know that "calories don't count") So I am a work in progress, but I am a firm believer in the concept and know this is it for life.

My final goal is to reach my weight by the time I attend my ds's Senior Day at church. Which is the first Sunday in May 2013. That asks for an average of 5 pounds a month for the next 2 years. I have lost the equivalent of 4 pounds a month since I started. Once school starts I will be adding a 30 minute walk in the mornings and hope that helps me feel better and tighten up the buns even if it doesn't speed up the weight loss.
