I use a little bit of flax oil drizzled over a head of garlic, then roast it. Once it is soft, I squeeze all the garlic out of the head, add equal parts balsamic vinegar and flax oil. I love it!

I also started using fresh squeezed lemon juice mixed with flax oil, and finely chopped garlic.

To break up the monotony of green salads, sometimes I mix the balsamic vinegar/flax oil with raspberries (if you leave them frozen and microwave them for a minute or two they mash and have juice with them). Then I toss more raspberries in with spring salad greens, purple onion and red peppers. It uses up one fruit, but satisfies the 'sweet tooth'. I have actually put one individual fat free vanilla yogurt in the dressing too and it's good.

My two favorites are balsamic oil and vinegar with italian seasoning.

and salsa with yogurt.

I no longer buy dressing as I like these better then anything sold. I was using a honey mustard recipe as well but found that it created waaaay too much heartburn.

It's amazing how this diet has changed the way that I eat. Heartburn would have been something that I lived with and took a pill for prior to feeling wonderful.

If you make your own salad dressing you can have a different flavour every time! I always have at least 3-4 different vinegars in the pantry (you can even use lemon juice or oj for your acid), that along with some evoo, a little grainy dijon to hold it together, some s+p and you have a good start. Some times I add a bit of shallots or garlic or just go with onion or garlic powder. Add fresh or dried herbs. If you want a creamy dressing use some plain yogurt or even cream or mayo. Very minimal amounts are needed because you are stretching them with the acid. Pretty soon you will have discovered your own favourite dressing.

You are allowed 1-2 tbsp of evoo a day so I guess the fat free is if you use your healthy fat allowance elsewhere. The sugar is added to cover up too much acid. The mouth feel on artificially thickened dressing is really weird once you get used to the real thing.

Even though there are contradictions, I've decided to try not to "sweat the small stuff". If I'm doing FF, I'm ahead of other options. And if I make things too difficult, I know I won't be able to stick with the main idea of the plan. Seems to work for me, and I've had good success on the diet.

I think that's one of the contradictions in this diet. We are mainly supposed to cleanse our system of processed foods and then he says to use FF products which are all chemicals. I went with a sugar free yogurt based dressing that is found in the refrgerated section of the produce dept. or I made my own with olive oil. The FF parmesan he says to use doesn't even have any cheese in it!

The condiments stated in the book for cycle 1, includes fat-free salad dressings. Do these need to be sugar free? I have been eating fat free salad dressings, but they have sugar as an ingredient. What do you think?
