I love Indian food but have never attempted to make it. Lentil salad is cooling in the fridge right now. I'm making some sort of Mediterranean couscous recipe tonight with sweet potatoes, zucchini, etc.

We did pretty well this week and last on stir fry with tofu, Tikka Masala with tofu (I broke down and bought a premade jar of it last week), and vegetarian bean burritos. I can definitely eat more meatless meals than my man, but if we ate separate meals, he would sustain on hamburgers. I've got to cook him something with meat that is a little healthier than that.

I'll give the enchiladas a try soon -- yum.

Black Bean burgers are fantastic.... you can probably find a recipe or buy premade ones in the freezer section......

A couple weeks ago we made Lentil Curry.... It had diced potatoes, carrots, lentils, onion.... And the easiest part is the curry paste.... We love Indian food but getting the spices just right can be hard...

Another yummy veg dish we make is bean enchiladas.... black beans, Fat Free refried beans, diced or stewed tomatoes.... We spend a little more to get the Carb Balance tortillas.... then cover with enchilada sauce and some 2% Cheese.....

For a breakfast idea you should try the Veg. Quich to Go Cups from the recipe section. They are awesome!

The nice thing about lentils is you don't have to soak them like some other beans, so not too much planning ahead.

Every once in a while, I sneak in a meatless meal on my family... I usually rely on beans & cheese to get in protein. I'm very lucky as my family isn't picky at all. Dh doesn't care for a lot of fish, but he does like shrimp and so do the boys so well do a boiled shrimp night about once a month - too expensive any more often than that.

I think I'd search the SP receipes for ideas, some are really good!

My boyfriend and I are going to cut back on eating meat, and to start, we are going vegetarian two days a week. I'd like to come up with some high protein meals to try (rather than relying on meatless pasta dishes those two days). Any suggestions/recipes? We are not too picky except I don't really like seafood. I had a delicious lentil salad a few months back at a Mediterranean restaurant that I'd like to replicate, so even if the meal is a little exotic, I'm okay with that.
