Dang - this one kind of fell flat on us, so I'm going to do a rotating sticky topic for awhile & see how that goes for us.

Chicken Marsala

3 lbs boneless, skinless chicken breast, cut into chunks or strips
1/2 cup of Marsala Wine
3-4 cloves of garlic, minced
1tsp. black pepper
1 Tbs. of Italian seasoning
1/2 C. water
1 C. fresh mushrooms sliced

Directions:
1. Preheat a very large non-stick sauté' pan over medium heat.
2. Add chicken chunks, half the garlic and half the pepper. Turn as chicken gets white on the bottom. If chicken sticks to the non-stick pan, use a small amount of water to free it.
3. Add the wine and rest of the garlic and other remaining seasonings. Cook for two minutes and add mushrooms.
4. Continue cooking until the biggest chunks of chicken are cooked.


We all love this recipe at my house. Even my very picky eater Trevor (he's 9, do I have to say more? LOL). I was floored! Its a great low calorie, low carb, low fat, low sodium main course for any dinner or lunch. The alcohol cooks off so there is no need to worry about the extra calories from that. Its quick, easy and tastes great. It tastes like you have spent all day cooking it and the magic is YOU didn't! I love it.

Lean Protein "crepes"

Ingredients:
2 egg whites
1/2 tsp Cinnamon
1/8 tsp. Vanilla extract
1 packet splenda (optional)

Directions:
1. whisk all the ingredients in a mixing bowl until fluffy.
2. Preheat a non-stick skillet pan and pour mixture like you would a pancake.
3. Cook over medium-high heat until the bottom is golden brown, then flip and repeat with the other side.
4. sprinkle with as much splenda as you like (optional)

I really like the versatile nature of this very simple recipe. You can use it as a protein portion for any meal or by itself with a different side. I not only use this as a sweet treat I also use it for a "wrap" around sautéed veggies for a lunch or dinner. I leave out the cinnamon and sweetener but still use very little vanilla extract. You could also use it for a dessert or sweet breakfast type meal. I love to use strawberries, blueberries and a dollop of cool whip. Its low in calorie, fat and carbs. It satisfies your sweet tooth or when used like I have with the veggies gives you a great lean protein to work with. Egg whites pretty much take on the taste of any season or spice you put with it so make your own variations. I'm so happy I have this to turn to when I am craving this kind of food. I hope you all like it as much as I do.

Please put TRIED & TRUE recipes here for others to enjoy. Put a short little introduction to it as to WHY it's good for dieters (i.e. Low-Fat, Low-Carb, High Fiber, etc.), the NAME of the recipe, list the quantity & ingredients, number of servings and all other known information. Please ONLY recipes you have TRIED yourself!
