Opps.... I left out the red onions.

I thinly slice a seedless cucumber or two or three. Thinly slice a red onion into rings and refrigerate until ready to mix all ingredients together. Place the cucumbers in a bowl covered with salted water and let sit on the counter a couple of hours. Drain. Spoon a little light mayo to taste on the cucumbers and red onion rings. Stir well. Add a liberal amount of black pepper. Refrigerate until ready to serve.

I also like Rainbow, or broccoli/carrot slaw.My just taught me how to make my own slaw dressing.She goes light on the mayo( because I like REAL, can't get used to the taste of light or fat free.)uses vinegar, and a touch of sugar ( to cut the tartness if she accidentally puts in too much vinegar). I like to put some Crushed pineapple in mine,But mom suggested mandarin orange segments, so I'll try that next time.Poppy seeds add a nice touch too!Also , Another fave of mine, Pickled Beets!

I like to cut up cucumbers and onion, add (fat free) Italian dressing and then let them sit for a day. I also like cucumbers and lettuce with sour cream.

Charlie'sAngel: Here's What I Do when I get A Hankering for nice cool, and zesty cuke salad. And YES, occasionally, I DO! I LOVE cucumber salad,Actually , it's cuke and tomato, Salad.This is what I remember my Grandmother making, So measurements are approximate as she never really measured anything, She just KNEW,and eyeballed it.
One large cuke, for 3 or more salad bowls, OR 1 small or 1/2 a large if just making enough for one or two.
One small onion, or less depending on your preference for onions in things.But I happen to LOVE onion, too!
Handful or two of Grape tomatoes,or 1 large Regular tomato.If available ,try Campari their DELISH!. Slightly larger than a grape tomato, not as large as regular ,and so... sweet!
A light (low fat)Zesty Italian , like Wishbone, use your good sense here, BUT don't drown them in dressing!I also like to sprinkle a little extra Italian seasoning on , and maybe a sprinkle of garlic powder, and pepper.A little salt too if you want, but I am watching my intake!
Better if marinaded for awhile, So you could make this earlier in the day or day before, and refrigerate.Sorry so long!I like being helpful when I can.If you don't care for tomatoes,just use the light dressing and seasoning,or just use less vinegar,no(insult intended) with a little olive or canola oil, and sprinkle with some dill. Hope you enjoy this.

Hmm...my cucumber salad sounds like a couple other replies you've received here. Have you tried broccoli slaw? I use the prepackaged, broccoli slaw mix, some raisins, shredded carrots and walnuts...I use either reduced fat Ranch dressing or an oil and vinegar dressing...yummy

Here's four I found on spark, Charlie. They all sound good to me. Question: Have you tried the girls on Romaine lettuce, just giving them the larger firmer chunks? They might be able to eat that instead of regular iceberg lettuce.

I love cucumber salad. I use olive oil and Basamic vineger, I little bit of scollots.

I don't usually like anything creamy.

I slice cukes and an onion thin then add olive oil, seasonings salt, pepper, then sprinkle lightly
with a "little" vinegar. If you like you can also
add a sliced tomato....Enjoy, Nan

I also keep it simple w/ cucumbers. I peel and slice them, put salt in them, and let them "wilt" in the fridge. Then, we drain them and put sour cream.

As you can guess from my multiple food questions today--I'm re-vamping the menu at my house. Anyway, does anyone have a really good Cucumber salad recipe. I made one last week, that I served to the family & announced it is called 'Cucumber Surprise'! The surprise was that you could not even taste the cucumbers because they were totally water-logged in vinegar--it was terrible, but I had taken the time to chop it--so I ate it, I was alone in that, I might add.

So anyway, I need a recipe for it. Also, do you have any favorite side-salads that don't have lettuce? You know, like that carrot with raisins dish. The two year olds choke on lettuce, so I'm trying to think of stuff that is just chopped up veggies & such....but I can't even think of any names to google?????
