I just read in Prevention that purple ( guess they meant red) potatoes are sooo good for you! They put you in a good mood and helps those with depression and high BP. I will be posting more info soon.

Its OK to eat potatoes. Baked in their skins are good diet food I have found. I also eat new potatoes steamed in their skins. Don't forget they are carbohydrate so watch them on your nutrition tracker. I don't eat bread with potatoes as its not necessary and I am diabetic. They are great in stews and casseroles, good in Frittata and I also eat them mashed and roast as long as its in moderation. You need to track your fat you use on your tracker. That way you can eat the right amount of fat. Use olive oil or canola whenever possible. You can use a little butter mixed with olive oil for roasties, that works quite well. And I like extra virgin olive oil on my salads with a little balsamic vinegar.

This is probably already covered somewhere...but what is the advice for eating potatoes? Hubby and i are always chopping potatoes and eating baked potatoes it seems like. How much should I be eating?
