I make a marvelous lasagna (which I've lightened up alot over the years unnoticed by family and friends).

But rather than lasagna, I prefer moussaka (which I don't make often enough).

When my sidekick cooks, I like the holiday roast lamb (usually with rosemary)
or his awesome grilled salmon which I request everytime salmon is on sale.

For more everyday.... well we do alot of variety so nothing gets repeated enough (other than the salmon). Now that the warm weather is coming on it is time to break out some long time favorites like cucumber salad - cucumber, dill, sour cream/greek yogurt, and some minor ingredients - so good as a side dish with so many different meals.

Last year I started experiementing with quinoa and other less run of the mill grains. The experiments are ongoing but one great outcome was the discovery of an awesome Morracan Quinoa recipe last spring.

Here are a few of my favorite dishes:

Roasted vegetables: Chop up a variety of vegetables that are similar in density. Marinate them for 30 minutes or so in balsamic vinegar and olive oil. Roast in a 400ยบ oven until they're done. I like it when they caramelize a little on the bottom.

Mexican shrimp cocktail: (whatever amounts you want, of the following ingredients): picante sauce or salsa, shrimp, cilantro, avocado, jalapeno, red onion. Cube the avocado, chop the cilantro, jalapeno, onion, mix all ingredients. Top with a squeeze of lime, if you want, and serve. I usually make tortilla chips to serve with this by cutting corn tortillas into sixths and baking until crisp.

I sometimes make spaghetti for my family, but I serve my sauce over cooked drained spinach or cooked spaghetti squash instead of pasta.

Some people just have the natural knack for cooking and what tastes good. Eating good is a new adventure for all of us, whether we had been doing it for years or brand new. Exploring new tastes and cooking something new is so exciting, share with us your favorite recipe and invite us for dinner in our own kitchen. emoticon
