You can also do a search in the SparkRecipes.com for Mediterranean Way and you will find Mediterranean recipes... and my cookbook over in the "Cookbooks" area to the right after your search.

Just a thought. Have you ever signed into the SparkRecipes.com? That might be the problem.

I never heard of pomegranate molasses! But it sounds good!

Hey, if you are a good baker, you can cook! Baking takes precise measurements to make the item turn out. Cooking can be 'freelanced' and still turn out! I never follow a recipe to the letter! If it calls for something and I have it ... I throw it in without much measuring. If I see a recipe that I think I would like but don't have all the ingredients... I think about what else might work in it's place. Cooking is supposed to be fun! Don't stress out on putting a recipe together. Roll with it! Have fun! Baking ... now that is another story all together... be precise!

This is not supposed to be confusing! You have to make it work for your lifestyle. Look at the pyramid and go from there. Exercise daily, servings of bread, beans, olive oils daily, weekly foods of chicken, fish, eggs & sweets, 1 serving of beef a month, etc. It's easy to make it work into your lifestyle. It shouldn't be difficult. That's what makes this way of eating so easy.

I read the ingredients right out of the cookbook to you all no test i was just major confused and over whelmed when i bought the two cookbooks have any of you ever saw the lady let me see if i get it right everyday italian she is a chef and cooks the mediterranean way. she is on the cooking channel or used to be. she is from italy. or her family is.. anyway i watched allot of her shows and she does allot of substitutions too ....just me ginger

Becky, thanks for the substitutions. Some of these I've never heard of myself, but I know several I can find at my local grocery store. I have a recipe for preserved lemons and would like to try it someday!! I love lemons!!

I don't use the Mediterranean Cookbook. I know you are thinking, "What?" That's right. I just try to eat healthy and balanced following the Mediterranean Pyramid.

Most cookbooks are filled with items that only gourmet cooks would use.

Here's my substitute list:

Borlotti beans = any great white bean
Calasparra rice = brown rice
Arborio rice = small white rice ( I eat this it's very nice.)
Bocconcini = substitute with mozzarella cheese
Burghul = is cracked wheat - substitute with any whole wheat
Cannelloni beans = They are white kidney beans. I love these mixed in a salad. Substitute with red kidney beans.
Capers = (my favorite thing) caper is the pickled bud of the caper plant. They taste like olives. Substitute with green olives.
Cedro = not familiar
Chorizo = spanish sausage, substitute with any sausage
Feta cheese = (love this), substitute with any soft cheese
Frisee = endive, substitute with any lettuce.
Haloumi cheese = substitute with mozzarella.
Melokhia = Not familiar with this herb
Nigella seeds = substitute with sunflower seeds.
Kefalotyri cheese = another cheese like mozzarella
Polenta = substitute with cream of wheat
Corn meal = no substitution, stands alone used in things like corn bread.
Pancetta = substitute with thin bacon.
Pecorino cheese = hard cheese substitute with parmesan
Pomegranate = (love this) substitute with grape or cranberry
Molasses = (love this) no substitution.
Porcini mushrooms = substitute with any button or portabella mushroom
Preserved lemons = condiment no substitution.

Hmm. Was this a test? LOL!! Most of the items you listed are gourmet items. This is why I don't use a cookbook.

I'm just over the state line from you in western NC and some of these items are at Ingles:arborio rice, cannellini beans, capers, feta cheese, polenta, molasses, porcini mushrooms, prosciutto, provolone are items I've bought or looked at in Ingles. They may have some of the other items, too. How far are you from Knoxville? I'm sure there are specialty food stores there that would carry many of these items. My DH and I make a trip down the mountain every couple of months to Greenville, SC where they have Trader Joe's and Whole Foods- both which carry most of these items. We stock up on these specialty foods when we're able to get them. Otherwise, we do what people in the Mediterranean area do- we eat what it available locally and is healthy.

what are these items and what can we sub for them that we have access to here in east tenn area . 1.) bortonni beans, calasparra rice,arborio rice,bocconcini, burghul, cannellini beans, capers,cedro,chorizo, feta cheese,frisee,haloumi cheese,melokhia, nigella seeds,
