don't have to much time cause i am packing for the mountains.. but like goat chesse can you use like american cheese you like, and they had some weird spinach what about the veggies we can get here.. yes we have a 4,000 square foot garden.. i like veggies straight out of the garden. last year we grew some carrots oh my word so good garden and i can most of it.. i make my own salsa, sweet relish, jellies, jams , even made chamamile jelly it tasted just like honey. put up green, bean summer squash, butter nut. this year i am having pumkins patch so i can can the pumkin and dry out the seeds and dry pack them. we dry pack, can and freese our veggies..... zucc also...

Don't just limit yourself to grocery stores. I've found great deals on quinoa, barley, and some seeds and dried spices at some discount and other stores. Some of these stores just have a tiny little "foods" corner but you can find some hidden gems if you have the couple of minutes to check them out.

I, too, live some distance from stores (I'm in the NC mountains) so I have to travel a ways to get to grocery stores. I agree with Becky that you don't have to cook foods from mediterranean countries to follow this way of life. I use a lot of local produce from farmer's markets when it's in season and keep some in the freezer over the winter. If you're growing your own garden, that's the healthy place to start. When I started this journey, I'd never heard of quinoa. Now it's a regular part of our diet. At first I thought I had to go to the health food store to get it, but soon found that it's being carried by regular grocery store chains. You may be surprised at how the "regular" stores are trying to jump on the healthy foods band wagon.

I agree with SKIPSIDE about being more specific. As for the cookbooks... I don't even follow the cookbooks. I just make sure I get all my portions correct, and that I get plenty of Omega-3's.

After all... this is NOT a diet but a way of life. We have to make it work for us. The people in the Mediterranean who ate this way ate what they had available to them. We should be able to do the same thing!

There's usually a way to alter a recipe and make substitutions and sometimes end up creating something better than the original.

We might be able to give you some ideas if you could be a little more specific about what some of the things are that you think you'll have trouble with.

as far as the pyramid goes for the mediterranean way i bought two cookbooks oh my ward. so many things i do not have in my cupboards. the closest store to buy allot of that stuff is a health food store which is real pricy 35 miles from here. my question can up sub foods for the ingredients they call for????
