There where 6 of us kids. Meat was never the main dish, What Daddy grew in the garden was. One day a week we didn't have any meat. So eating veggies was never my problem

I don't know many who are vegetarian. I'm not so much into veggies, unfortunately.

I don't know anyone who is vegetarian. I know someone that eats mostly vegetables only, but since she had her first baby she eats some meat.

I don't eat a lot of vegetables because I have problems with them and my IBS.

The Dr. said no more meat 35 years ago. For those that said being vegetarian made them hungry. Yes. Veggies take 20 minutes to digest carbs 2 to 3 hours and protein 3 to 4 hours. If all you eat is fruit and veggies you are going to get hungry. You have to eat carbs and protein and find the right balance. Not just for the right nutrition but to keep you from hitting the snacks.

I don't eat as much meat as I used to but I'm not a vegetarian. I respect those that do, as we are all trying to find balance in our diets.

I'm not a vegetarian, but the days of twenty-four-ounce Porterhouse steaks are over. Meat is almost never the main course anymore (usually a flavoring or ingredient) and vegetables have a much larger share of my diet these days. When I do go all vegetarian, it's usually a soup like vegetarian chili with a pound of hot peppers of various sorts.

I sometimes do vegetarian days. This was once a frequent habit for me but recently, it's a rare thing. I have a cousin who is a strict vegan. Other than that, most people I am close to eat meat regularly.

I do not know anyone who is a vegetarian.

We do include vegetarian meals; my son rarely eats meat, so most of his meals are vegan. (no dairy for us).

Today I made his taco soup: pinto beans, black beans, kidney beans, green chilis, diced tomatoes, and corn. For seasoning: cumin, garlic powder, chili powder, and crushed red pepper.

He told me if we added tofu it would be even healthier. He started naming off all the vitamins in that one bowl of soup. (due to his health class he's learning a lot about vitamins our body needs and what foods contain those vitamins. etc. =D

Vegetables always leave me hungry. The bulk may fill my stomach but my blood sugar knows there is very little in the way of real substance to be satisfying. I like salads and have been trying to find a variety of ways to cook other veggies but they are definitely not my favorite foods.

I have several friends who are vegan. I am not. I do love salads and occasionally have meatless Mondays. My husband is salad master in my house.

October is National Vegetarian Month & today happens to also be National Vegetarian Day & World Vegetarian Day. Are you or anyone close to you vegetarian? Do you include vegetarian meals in your eating plan? If so, what is your favorite? Do you prepare it or does someone else?
