I try to find recipes for no more then 4 people and cut in half so I do not have too much left over as I am single. I do not have room in my fridge freezer to put much extra food as I shop weekly and do not drive so I can not shop more often other then fruit and vegetables at the market. I sometimes even eat the healthy packaged meals that are single size and add vegetables or salad to them. If it is something that I can put in my fridge I will have room for that. I do not find it easy to do. Any suggestions.??

have a roast cooking for today. i get home very late. so late supper. not sure what i will do tomorrow yet.

Happy sunday-
I work today and tomorrow then will get a day off after a 6 day stretch. still journaling.
am tired so not worried about exercise yet. then tues and wednesday i willl be doing some reorganizing of br and closet.

thats cool.

think i will bring a salad and turkey sandwich today.or maybe a lean cruise with the salad. not sure yet.

I tend to batch cook once or twice a week making full recipes, and then I just nuke food for lunch and dinner in no time.
My favorite strategy, though, is my lunch bunch at work. There is a group of five of us, and one person brings lunch for five on his or her assigned day of the week. All of us eat healthy homemade food, with way more variety than we would manage for ourselves, and we only have to think about it once a week. It's been the foundation of some good friendships, too.

great ideas thanks

please post more ideas and recipes

made a nice pork chop dinner. today tacos. i am going to have to do a lot of prep work and cooking for two or three days ahead as we work different shifts. mine shifts are not regular sometiimes days sometimes nights

since my son is diagnois with dietbetic i need to get with it and make sure his meals are healthy and less carbs.

I buy things in bulk and then freeze it in serving sizes for two. I'll buy 8 pounds of ground sirloin and freeze it in 8 oz packages. Works out great.

shop the "bulk" section where you can buy as much or a little as you want. If a recipe feeds 4, cut it in half and then you will only have 1 serving left over instead of 3 - then you won't get tired of eating leftovers. Then there is the freezer - if you fix something that will hold up in the freezer, just put a few individual helpings in the freezer for next month

Thanks for opening this thread. I have been looking for this type of info for several years now with out much luck beyond that already beat to death. I am particularly interested in keeping the kitchen time down and the space controlled.--Mary
