We are going to a cookout tomorrow evening. Its a bring your own meat and side dish sort of gathering. So we're bringing chicken breasts seasoned in a montreal seasoning and a strawberry/spinach salad. We're making sure there are 2 things we can eat. The kids can have whatever they want of course. And then we just have to have the willpower to avoid anything that is not allowed on our new program.

Woo hoo!! Great ideas! We're grilling steaks, burgers and hot dogs. You're typical barbecue menu, but our side dishes are going to be healthier. A big tossed salad, with lots of veggies, beans and feta cheese. Hummus with baked pita chips. Salsa and raw veggies. For dessert, cupcakes for the kids and fresh fruit salad with low fat whipped cream for anyone watching their figures. Have a wonderful Memorial Day!

On this long weekend, we are all surrounded by FOOD choices that will not necessarily fit into our plan or that we don't want to indulge in. What are some foods that YOU are making this weekend that DO fit into healthy eating guidelines. Today we're making:
fajitas on the grill with tons of foil wrapped veggies: peppers, mushrooms, onions, carrots, asparagus and tossed with a little olive oil and fagita seasonings. Wrap them up in a low carb tortilla with some lettuce and tomatoes...delicious. For dessert: key lime tarts. I used mini cupcake liners and put a mini vanilla wafer in the bottom. Mixed lime SF jello with FF cream cheese and FF cool whip...not too bad! Garnish with a little triangle of lime and the looks beautiful too! What are some of your OWN favorites?
