Easy and Light Lemon Bars


1 box angel food cake mix
1 can lemon pie filling

simply mix together and bake in a sprayed 9X13 cake pan -- cut into bars -- and yum!

optional: sprinkle with a little 10X sugar before cutting

If you are wondering how to add more fruit to your day here is a simple recipe...this is a Walmart recipe.

Easy Fruit Smoothie

1/2 cup skim milk
1/2 cup blueberries
1 cup strawberries
6 oz. nonfat yogurt

Mix in blender until smooth.

enjoy!!!!


Here is another one, that is very healthy.

Cauliflower Mash

Steam a head of Cauliflower until tender. Mash it with
garlic and low-sodium,, fat free chicken broth.

Yummmy!!!!

I'm having a non-Superbowl Sunday. I made Cornish Hen and baked potato. I wanted to tell you how I baked this cornish hen.

I washed it off and then I rubbed inside and outside with this mixture of spices:
1Tablespoon of Sage
1 Tablespoon of Ancho Chili
1Tablespoon of Mrs. Dash Table Blend
1 Tablespoon Red Chili Pepper
1 teaspoon garlic powder
1 teaspoon onion powder

The hen, potato and green salad were great this lovely day as I have listened to classical music all day.

CHUNKY TURKEY CHILLI

You can make this easy crockpot chili with ground turkey or ground beef.
Ingredients:

* 1 pound ground turkey or ground beef
* 1/2 cup coarsely chopped onion
* 2 cans (14.5 ounces each) diced tomatoes with juice
* 1 can (16 ounces) pinto beans, drained, rinsed
* 1/2 cup chunky salsa, your favorite
* 2 teaspoons chili powder
* 1 1/2 teaspoons ground cumin
* salt and pepper to taste
* 1/2 cup shredded Cheddar or Mexican blend cheese
* 1 to 2 tablespoons sliced black olives

Preparation:
In a large skillet over medium heat, brown ground turkey and onion. Drain off excess fat. Transfer browned mixture to the crockpot with tomatoes, beans, salsa, chili powder, and cumin. Stir gently to blend ingredients. Cover and cook on LOW setting for 5 to 6 hours. Taste and season with salt and pepper. Serve with a dollop of sour cream and a little shredded cheese and black olive slices.
Serves 4.

Recipes....I just throw stuff together, but here is a simple favorite.

1 bag frozen broccoli florets
1 bag mixed frozen stir fry vegetables
1 container little shrimp
soy sauce
terriyaki sauce

Using favorite stir fry pan add water or a tablespoon full of peanut or olive oil.

Stir fry broccoli until partially cooked, add stir fry vegetables and stir fry them with broccoli until they are partially cooked. Add shrimp or other seafood and stir fry until cooked. Add soy sauce and terriyaki to taste.

Serve and eat. The whole pan is less than 500 calories.

You can add other stir fry sauces or leftovers from the fridge, but then the calorie count goes up too. Although picante and lime juice are fun for a change and low calorie.

Garden Vegetable Soup: Weight Watchers (0 point soup/ free food on Curves diet)

2/3 C. sliced carrots
1/2 C diced onion
2 garlic cloves minced
3 C. fat free broth (beef, chicken or Veggie~I use low sodium beef broth)
1 1/2 cups diced green cabbage
1/2 c green beans
1 TBSP tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 c diced zucchini
*********I vary this a bit: I use 2 tsp italian seasoning, and about 1/4 C. Tomato paste- I add garlic and onion powder; I added 2 C water and 1 packet of beef boullion crystals; I omit the zucchini and add broccoli and celery; I change it up for more flavor and more FREE Veggies I like*******

Calories: 60 (from the broth) Fat: 0 Protien: 0 Servings: 4 1-cup servings

Spray large saucepan w/cooking spray, heat. Saute carrot, garlic, onion over low heat until softened (5 min). Add everything but zucchini and bring to boil. Reduce heat and simmer covered 15 minutes. or until beans are tender. Stir in Zucchini and heat for 5 min. Serve hot.

This is a great "filler" ~ I have to play with the seasoning so I like it...so adjust it as you like with seasoning..and free veggies.

It is hard to try to find new things to eat that keep this dieting interesting. I'd like to use this section for us all to post recipes that we are using to make our journey successful! I know that there are many sites with different receipes that are "GREAT" then you try them and you are like "who the heck judged that one! yuck!" . So I'd like to see some tried and true good receipes that we've tried and love. Try to post the Calories, servings, carbs, protein and fat with each...just so we can see what could be incorporated with whatever diet we are doing. I will compile them as we go and hopefully by Christmas we have enough and I will make a mini-Quackers cookbook for all of us. So let's get to sharing those good recipes!
