Thank you for the encouragement for Kefir - I have it in the summer when a lady at the Farmer's Market bring raw goat's milk kefir, yogurts and cheeses - but I miss it in the winter and she does not sell from her home so l hope to learn more from her this summer - but for the present, will ask about Kefir grains at local health food store and see if I get any encouragement. So much of this is just knowing what to ask for and I find them most helpful thus far. Interesting that I have long been a customer there in a basically "hippie" culture clientel but I am an open, loving person and they have never been offended or given offence with our aried backgrounds.

yes kombucha made with apple juice is great.
if you let it go too far then you also have your own apple-cider vinegar, about which there are spposed many health benefits.

I quite like making and having Kefir.
It can be made in just over 1 day on your bench top.
Just add either a starter sachet(from a health-food shop) or 1/2 cup of prepared Kefir to 1 litre of milk into a large jar, mix and leave with a loose lid for about 28 hours.
It should then thicken and can be kept in the fridge.
Have a cupful each day
When there is 1/2 cup left, use this to start of your next batch in a clean jar

I usually just use tea/sugar.... but I would think sugar water would work... don't know how it would taste though. One thing I have done is to add the scoby to apple juice (I have a lot of apples since I have a dozen trees and do a lot of apple juice). I don't do sugar then. It is excellent.

Good plan - so I divided it into two glass jars, adding turbinado sugar and put cloth cover held in place with rubberband and set in the cupboard room temperature and in simi-dark. Will let you know if I get any skoby with just sugar or with tea and sugar added to commercial raw Kombucha, trying to build my own scoby.

That should work Linda
Or you could try dividing your mix
Add some sugar to 1 batch and cover with cloth as you were going to
The other half could be added to some sweet tea(1/2 cup sugar per litre), or apple juice, covered also
Be prepared to wait up to 2 weeks

Richard you are an encouragement!! I will try the use of lemon juice after I finish off the organic lemons I purchased last week in bulk,


I found raw kombucha at our local grocer today too - so do I leave it room temp and cloth cover rather than the sealed jar - it came in 16 ounce glass jar - also, should I add some raw sugar for it to feed on trying to build my first soby.

In Australia we have 2 major supermarkets
Each sells their own version of lime or lemon juice in squeezable bottles.
Although I have a supply of these at home, I have not used them lately.
Some time back I had spectacular success with weight loss.
I used to keep a 2-litre plastic bottle in the fridge and made sure I drank it each day with a squirt of lemon juice in each cup.
This was far more economical than buying fresh lemons and also negligible waste.

OK, Monday I will check locally for scoby or unpasteurized kombucha.

Next question - how many of you are drinking lemon water on daily basis - two online DRS [Weil and Jockers] that I read encourage it warm each morning before eating other foods and both ran articles recently to add some ginger to it and maybe a little honey too. So I'm curious about you-all. I have been doing plain lemon in warm water this last two weeks - some days a bit of honey and some days a bit of stevia and dash of sea salt. [Juice of 1/2 or 1 lemon per 8-16 oz warm but not boiling water so as not to harm the Vit..C]

I grew my own scoby (I see that I doubled the "o"... should have rechecked my post). I bought a bottle of kombucha with active cultured and added it to strong tea with sugar. Let it sit for a while in my pantry.

The soup had parsnip, celery and carrot in it, along with a mixed pack of soup grains.

I bought my first scoby off ebay, it came in a ziplock bag.

If you go to a healthfood store and buy some UNPASTEURISED Kobucha and then add this to sweet tea or fruit juice a new scoby should grow. It may take up to 2 weeks depending on how old the original Kombucha was.

Now I just buy a 2litre container of apple juice, take out 1/4 then add scoby and some Kombucha tea. Leave the lid loose.

I start drinking this after a new scoby forms and whilst it is still fizzy and slightly sweet.

Too bad you don't live closer... I would give your a scooby. I have loads. I'm always offering to give it away, but no one wants it. I've never made it with spearmint/peppermint. I have loads of the stuff. I just spent most of the day going over my mint patches. I will have to use it in my kombucha.

What do you all know about KOMBUCHA? I have had a started in the past but it went bad on me and never have gotten another ...saw a Yogi brand Green Tea Kombucha and got a box.
Says it has herbs Organic green tea leaf, Organic lemongrass, Organic spearmint leaf, Organic Kombucha and natural passion fruit flavor and Natural Plum flavor.Made some this morning with 1tsp local honey for sweetener -- not bad!!! kind of a musky flavor but I can grow to like it. Claims to supply Anti-oxidants. Caffeine 30mg per cup compared to 90mg per cup of coffee.

Sounds good -what veggies do you add?

I just put some pinto beans to soak - dear husband loves them! Will put them in crockpot tomorrow morning - I save out some very plain ones in 1/2 cup portions for future meals and then hubby has his with a bit of bacon bits and ketchup.

I haven't posted a while, but wanted to check in to see how things are going. There was a bunch a cheese here this past month and I added it back to my diet. I'm stubborn and like when I gave up bread/pasta.. I am fighting this....

Well, I ended up with sore joints again. Drat. I could hardly sleep due to the pain and going up and down the steps wasn't pleasant either...so I am back to no dairy again. Perhaps this time I will believe my body. I love cheese, but I love being painfree better.

I'm concentrating on greens for a while. Finding and making recipes that incorporate them. If anyone has a recipe with greens that has no dairy and, of course, gluten would be appreciative if shared.

Just thought I would make mention of an ancient easy diet.
It is the 1 my SIL used to use whenever she wished to lose weight.
You could call it "The Simplicity Diet"
This dates back to about 1978.
It just consists of eating salads and steak.
In this era people could vary the protein sources rather than only having meat

Notice my weight tracker! I am below 170# for the first time in recent memory! The 165# listed as goal is just a start. I haven't been that low in many, many years, so I picked that as a short term goal. GOD first led me to gluten free, then dairy free, soy free, limited nightshades and now to LOW CARB! HE knew I couldn't do that all at once. I finally know that my body is super carb sensitive! I just lost a pound in 4 days! THAT never happens for me. I'm in full-on fat burning mode now! AND... I'm not hungry all the time as I always was when "dieting" before. In fact, we forgot to eat our fat bombs last night. What little I lost in food options has more than been made up for in HEALTH!

Don't get me started on SLEEP! I have had insomnia my WHOLE adult life! I thought retiring from a stressful job would help... NOPE! Then I found out I had sleep apnea and got a CPAP... that helped a little, but not fully. Then I thought changing my diet again, and again, and again.... would help... NOPE! I just tell people... the first 5 yrs are the hardest, after that, you don't stress in the night as the clock ticks by. You realize you'll get through the day like you always do. Maybe after more of these toxins leave with the fat... I'll sleep better... STAY TUNED!! LOL

Cynthia - thanks for letting me know the NSV - I actually think non-scale victories are much more important and am glad your health journey is getting better.

Richard - that smaller size is coming.

Debbie - I agree the elimination diet is the only way to know what works for each of us. My DH has a major doctor's appointment next month and I'm hoping to ask for a recommendation on both diet and sleep.

For the first time, my size is smaller at this higher weight! It was all about the edema of my abdomen with the inflammation. THAT is now obvious! The trick is... finding what is inflammatory to YOU. You can't really do that without an elimination diet... as my husband will now attest to! I am so shocked he is on board with the whole KETO + anti-inflammatory diet! He said again today how good he feels and that it is worth the lifestyle change. We hauled 2 more boxes of food to the pantry today. Now I just have to find a home for all my gluten free flours!

Congrats Debbie on not being able to take your pants any further.

Kaligirl...NSV means nonscale victories. I was thinking about the last time I had a thyroid storm and realised that it has been a while... a few months maybe and even that wasn't that bad. So my NSV would have to be that I am more steady... jeez, that's an understatement. Not feeling as you are dying as your heart is racing and your thoughts are so jumbled you can't even verbalize just how bad it is, that is a NSV.

NSV= Non Scale Victory... must have learned it on another team here!
After my cat started coveting my coconut fat bombs... I looked it up. It's good for dogs and cats in moderation based on size.

Richard - how wonderful to have fresh olive oil!

Debbie - sounds like you too have excellent access to EVOO. Not sure what NSV is, but I can relate to gravity having more 'pull' on my body. Hope you find some new clothes that fit.

I read an article on what 'people' food is good for dogs and surprise, surprise; what's good for us is good for them...

Headed out to a funeral. I just found out I only have 1 pair of dress pants that fit! I make many of my own clothes and I had taken the others in after the last round of weight loss. There is no more "take in" left! The whole proportion is off! I'm going to scout the local St. Vincent's Thrift Store on the first monday of a month soon to find some replacements. Everything in the store is 1/2 off that day! I can afford a couple pair of pants at a couple dollars a piece! Tops still seem to fit ok. They were pretty snug before, then fit ok and now have some room between me and the top! Another NSV!!

I found a good company out of California too... and the good news, I can get it and the local "W" discount store! I checked out a lot of articles and web sites to find one here that I can actually trust and afford! LOL

We are fortunate in Australia.
Previously it was possible that imported olive oil could be blended, part-rancid or misleadingly labelled.
These days olives are grown aplenty here and we now have strict standards defining such things as cold-pressed extra virgin and light.
Olive oil can be important in helping stabilise blood-sugar and is an important ingredient of The Mediterranean diet.

It sounds like your sesame seed oil is as good as it can get.
Glad that you are exercising - it actually does help with weight loss as muscle burns more calories than fat, but you are doing it for the right reason - the way it makes you feel.

I'm not a carb counter (may turn into one, once I start planning our meals to reduce inflammation) but glad it's working for you.

I'm reading through Deb's research today. Thank you for sending me the PDF. It was another busy day yesterday dealing with family health issues... so I am taking today for a breather...right, I am expecting another call today and will probably be rushing to my parent's house...sigh. I wish I could talk them into moving here.

I find that below 30 carbs works best for me. I do exercise, but not because I think it will make me lose weight faster. I just like the feeling and look of muscle. I also feel better after I exercise.

I buy my sesame oil in a specialty Chinese grocery store and it is in a can...so no light can get to it. It also says that it is pure sesame oil... not a mixture of canola or other oils with it. My other main fats are of course coconut oil and ghee. I never haved like olive oil, much to the horror of an Italian friend of mine. He even gave me a bottle of the "good stuff" he gets from home (he owns a restaurant in town and goes to Italy a couple of times a year to do his shopping and visit family). I didn't like his "good stuff" either. There isn't much I don't like... so it's surprising.

Deb..congrats on the loss of weight and inches. I could stand to lose a few inches off the hips. Work in progress.
