1 Bean dips and spreads – Use spreads like Hummus and Fresh Shell Bean and Sage Spread on sandwiches or as a dip for pita, crackers, or vegetables.

• 2 Chickpea sandwich – This Chickpea of the Sea sandwich filling can be made with vegan mayo or a vinaigrette in place of the mayo.

• 3 Couscous – Couscous is fantastic both warm and cool; try Israeli Couscous with Chard or Couscous with Raisins, Pine Nuts, and Capers.

• 7 Eggplant spread – Use sweet, smoky Baba Ghanoush as a spread for vegetable sandwiches and wraps.

• 4 Lentils and grains – We can never get enough of this balanced and filling Lentil Salad with farro, cucumbers, and tomatoes.

They sell Bento boxes in Stainless Steel that would be the next best think. I also use glass as well.

I've been looking into the Bento Boxes/containers some are stackable in the snap Stainless steel containers.

so can eliminate bulkiness.

Once summer is over and we get our daughter off to college next week, I suspect things will get back to normal and figuring out lunches will be easier. I'm just not sure why I can't seem to pull lunches together these days.

Tomorrows lunch is spagetti and I'll throw some Nooch on it!! Hubby had dinner ready when I got home, even cooked the meat seperately and let me take my sauce out first for dinner and lunch tomorrow before adding the meat to it.

I should look into the bento boxes, although I tend to only buy glass containers these days for the most part. It's a little harder taking glass to work....and its funny because I end up with a ton of glass containers and a huge re-usable bag as my lunch box.

Veggie wraps, Celery and peanut butter or hummus. finger foods like broccoli and carrots to eat with hummus as well. Grilled or smoked tofu. Dont' forget fresh fruit as well.

Have you seen the Bento boxes/containers they have blogs on them for those that are into them and they give food suggestions too. Just an fyi on that.


Avocado sandwiches with tomato, lettuce and sprouts.

You can make a quick stir fry with veggies and brown rice (remember when making a stir fry, rice has to be tossed while cold so rice leftovers are good for making this.

I like buying frozen veggies for my lunch by the time I'm going to eat they have defrosted in my insulated lunch purse.

Just tossing a few out there off the top of my head hope this helps.

Help, I need some easy portable lunch ideas for work. I'm not doing well on bringing my lunches and need some help. Eating out is not helping me lose weight.
