I'm not a huge tofu fan but it's all in how it's cooked. I very, very rarely eat any meat substitutes but I know a lot are yummy.

One hint about tofu that works for me: buy firm tofu, slice the block in half so that your tofu pieces are thinner than normal. Press the tofu on paper towel or dish towel to get excess water out and then "fry" it in a pan to make it crispy on the edges. This is the only way I can eat tofu - well, maybe in some soups. But, if you use oil, it really adds a nice crispiness. If not, you can "fry" it dry.

Also, consider marinating your tofu. Then you can bake or fry it and use it on salads or in sandwiches.

I have never been able to eat a tofu scramble, I hate the texture, but the above works for me.

I have to say that I am not a big fan of tofu. It's just something about the texture that makes me feel like I'm eating gel. I'm weird like that, I suppose.


But I have to say, I really enjoy the Light Life food substitutes. (or is it Smart Life--I think it's Smart Life). Anyway, I tried the veggie protein that looked like ground beef and it was so yummy! I seasoned it with cumin, garlic, paprika and a little sea salt and it was great. The Morningstar veggie burgers are great, the Smart Life veggie sausages and hot dogs are wonderful...so many delicious options. I used to notice before when I was tracking my food that I was never ever getting enough magnesium in my diet. Now, ever since I've made the move to become vegetarian/vegan, I'm getting the recommended amount and then some from all the greens, beans and grains I'm eating. Yay!
