I hope everyone is hanging in there. It's December, can you believe it? Christmas is almost here and we just finished Thanksgiving. How did everyone do at THanksgiving?

I had my 2nd meatless Thanksgiving as I was a new vegetarian last Thanksgiving and my first vegan Thanksgiving. It went well and I didn't miss meat or anything. By usuing Earth Balance butter and veggie broth for the stuffing I got to eat all the normal sides. It was so good.

I have a party on December 18th a few hours from me in the evening. It's a family party at my Brother and Sister In Law's house where Santa will visit. We will be getting there around 5pm and leaving our house probably around 2 or 3pm, so I have to make sure I have enough food to satisfy me for dinner. I'll most likely make some hummus, roasted artichoke and garlic dip (from Eat Drink & Be Vegan), some olive tempanade and I'm either going to try to make some homemade crackers or bring some vegan ones. I think I may bring some roasted chickpeas as well, but I'm not 100% postitive on that. I think I'd like to make some kind of a salad too. Another sister in law makes a really good quinoa pasta dish for me that is super yummy - maybe something like that. I have to be careful though, It all has to be re-heatable by microwave or ready to serve cold.

Then Christmas, I'll bring some things to my MIL's house (again a few hours from us). I did this last year, but I was eating eggs and dairy then. This year I'm sure nothing they make will be vegan so I have to bring everything from the sweet potatoes and mashed potatoes for me - or just come up with some other things I will eat.

I've made the barley casserole before. I need to make it again. It was pretty good. I think it was a little dry if I remember right, but it was good!!

I just passed my one year vegetarian and 6 month vegan mark - YEAH!

I'm making the barley casserole today. I think I will freeze half so that I can have that as my main dish for me for Thanksgiving. Its only me and my hubby for the holiday and he is a meat lover....so I make him a ham dish. I love this casserole! emoticon

I need to up my greens! Ever since I went apple picking I have been eating lots of apple dishes like apple pie and apple cobbler. Although I make them myself and make sure they are as healthy as possible, i have been replacing my greens with sweets! As a result of this, I haven't gained any weight (or not enough for my clothes to fit differently), I'm not losing weight either. Time to get back on track!

Day two of working on eating cleaner. So far so good. Just had a nice lunch of romaine, tempeh, sunflower seeds, chia and a homemade dressing based on Alicia's Caesar dressing.

Sounds absolutely delish!!! What a great birthday party!!


I just got back from vegas this past weekend. My mom and I ate such wonderful food. I love that she is so helpful in making sure I ate vegan and she loved all the wonderful food we ate.

Friday when I got there we ate at a place called Sammy's and shared a Thai pizza (hold the cheese and chicken), baba ganoush with flatbread and a beet salad hold the cheese. For dinner we were so stuffed and ate late after the flight so we skipped dinner.

Saturday we ate lunch at the cheesecake factory. We split gaucamole and chips and the Thai lettuce wraps with no chicken. For dinner we ate at Carrabas and I had a pasta dish with angel hair, olive oil and garlic sauce, olives, mushrooms, sundried tomatoes and artichokes.

Sunday we ate at an Indian buffet that had everything marked as to what was vegan, vegetarian, etc. It was great!! For dinner my mom and I split the veggie mushroom sandwich without cheese at Bahama Breeze.

Monday we had a mediterranean platter at a local Greek restaurant, which was super yummy. We subsituted the one thing that had dairy in it for more hummus. The falafels here were out of this world. For dinner we had vegan sushi (the avocado mango sushi rolls were out of this world) along with veggi fried rice that was the best fried rice I've ever had.

Tuesday we had guacamole and chips and sweet potato fries at The cheesecake factory for lunch and then went back to the Sushi restaurant for dinner for more of the avocado mango rolls and fried rice. It was so good!

I left on Wednesday and got lucky to order a veggie burrito with black beans, and guacamole for the plane from inside the terminal.

I just love that it is really easy to eat this way and so tasty!! Going on vacation has turned out to be super easy this summer!!!

Melanie.. all the meals you had sound delicious! I hope you had tons of fun on your trips!

Anyways...
I am so excited to tell everyone about my mom's birthday which we celebrated last week! I threw a "Kind Diet" birthday dinner for her where all of the meals I made were from "The Kind Diet"! I also gave my mom a copy of the book as a gift :)

For the meal we had:

*Sicilian Collard Greens with Pine Nuts and Raisins (p.126)
This is a must have! The entire family loved it, including my "All-Meat-And-Potatoes" boyfriend"

*Risotto with oyster Mushrooms, leeks, and Peas (p. 228)
This is another must have...so delicious!

*Fruity French Lentils (p.245)
I added blueberries to this recipe! Everyone enjoyed this, and it was a nice recipe to have on a hot day. Very fresh, fruity, and fun!

*Maple-Roasted Lotus Root, Sunchokes, and Leeks (p.269)
I made this recipe without the sunchokes. This is one of my favourites. These are so delicious I can eat them like candy!

*I also made a giant garden salad with mixed greens, sliced almonds, and strawberries on top! Yum!

...and for dessert

*Crocodile Crunch! (p. 200)
This recipe was a huge hit!..especially with the kids! Everyone loved this recipe so much they literally licked all of their bowls clean. I actually have pictures of this that I plan to post sometime on my SparkPage.

This meal turned out to be a huge hit! And.. my mom has now become vegan! I am so excited for her and I hope she enjoys living kind as much as I do!

Doing good yesterday and today. I had gained a few pounds in the last week and a half and 3 pounds came off after being really good yesterday, so it must have been mostly water weight.

I made a wonderful vegetarian lasagna last night. Hubby and son loved it. Breakfast this morning was Overnight Oats and lunch was vegan sushi (miso soup, seaweed salad and a brown rice avocado cucumber roll). Super yummy lunch!

Wow - It's Monday already. What happened to the weekend. We had a lovely visit to the Jersey Shore this weekend. The waves were INSANE yesterday! They were double the height of Saturday.

I took my food and thank goodness because it was nothing but meat, meat and more meat. Along with pickled eggs, potato salad, etc. The only thing I could eat that was already there was the water, soda and chips. My food is always quite the conversation piece when we are with my husbands family, lol.

This week I leave for Vegas on Friday to visit my family. I'm looking forward to it. It's my first visit back home to Vegas as a Vegan. I've done a ton of research and I'm sure it will be smooth sailing. My mom is really great, and was even on the phone with me last week while at a restaurant asking if something was Vegan (to the waiter), lol.

So what is everyone else up to this week? What did you do over the weekend.

Friday - YEAH!

I hope everyone is having a good day. We are headed to the Jersey Shore this weekend. My Mother In Law rented a condo for the week, so we are headed up for the weekend. Son starts school on Monday, so we can only stay a few days.

I'm planning on cooking up some tempeh (for sandwiches and salads), some chickpea salad for sandwiches, making over night oats for breakfast on Sunday, bringing some goddess dressing, chia and sunflower seeds for the salad and some extra vegenaise for the tempeh sandwiches. I'm also going to bring some crackers and olive tempanade, and maybe try to make a dessert I can eat.

What is everyone else's plans?

I agree - Please don't be shy everyone! I feel like I'm talking to myself somedays, lol

For lunch today I went out to our local Thai restaurant near my work.

I had vegetarian lemongrass soup, vegetarian thai dumplings (I ask everytime I go if there is egg in the wrapper and they assure me no, they ask me about no egg in my main dish all the time so I'm assuming they are strict here -keeping fingers crossed) and vegetarian pad thai no egg (and I'm always told they don't use fish sauce in their vegetarian versions.
I also ordered a Thai iced tea with coconut milk instead of regular half and half (I get soy milk at the Thai restaurant near my house). So yummy, although there wasn't enough tofu in my pad thai, lol.

I'm already over my calories for the day. I didn't eat breakfast (I know .....shame on me but I knew I was going and we went early at 11:30am). For dinner I'm hoping I can keep it light. I also need to lay off the high sodium dishes. I've had too much soy sauce the past few days.

Oh and I guess I should tell you about my yummy lunch yesterday. We went to a vietnamese place I used to frequent prior to becoming vegan and I ordered a bowl of rice noodles (Bun) that normally is topped with meats or fried spring rolls. I had it topped with 2 tofu rolls that were covered in the rice paper wraps that aren't fried (like summer rolls). Instead of the Nauc Mam sauce that usually contains fish sauce he made me a soy sauce with vinegar type sauce, but I actually asked for hoisen sauce and mixed some of the soy sauce mixture in. Next time I'll just ask for hoison. I liked it best without the soy sauce - too salty. Next time I go I think I'm going to order just the tofu summer rolls and try the vegetarian papaya salad.

I usually just make extra at dinner then pack it for lunch, along with a salad with sunflower seeds on it, and a piece of fruit. If I was lazy the night before and didn't cook dinner I usually try to come up with something using the leftovers in my fridge... brown rice with black beans and peas was one I did the other day. If I'm pressed for time however, I often end up making a Tahini sandwich. I spread the tahini on sourdough bread, sometimes sprinkle sunflower seeds onto the Tahini, then load the sandwich up with lettuce, alfalfa sprouts, a tomato slice, and sometimes sliced dill pickles. Yum!

I also highly recommend Clean Food, it's a great cookbook. I also really love Real Food Daily (Alicia recommended it and it's a definate winner).

I'm about to buy 3 new cookbooks. Veggie Burgers every Which way, The vegetarian family cookbook and the 30 minute Vegan (Asian Inspired Version).

Lotus is something I want to try. I haven't before.

Oh - I'm in love with Vegan Overnight Oats. I've seen them on blogs for a long time now, different versions of them.

I've been using oats, chia seeds, a smashed banana, almond milk and vanilla extract. Then I add peanut butter or almond butter in the morning and sometimes a splash of maple syrup......but usually just the nut butter.

You eat them cold..........and yowza are they good. The chia seeds are incredible and turn it into also a pudding like texture.

I'm thinking about getting that book too. I went to my local indigo bookstore and they did not have it, but said that they could order it for me.

I recently purchased the book "Clean Food" by Terry Walters. It has some good info that supplements what Alicia mentions, but it is packed with really great vegan recipes that are arranged by season so that you can eat according to the season (book assumes you are living in a temperate climate and not in the tropics). In the book she never declares herself as a vegan or says that she is macrobiotic, however,from looking at the recipes I would say she is!

P.s. I was able to find lotus root from my local Asian market. They do not always carry it so I buy it when I see it. If you have a local Asian market you should ask if they ever carry it. Make sure you buy ones that look somewhat golden on the outside. The first one I ever bought was brown, and since I did not know what it was supposed to look like I did not know that it was bad... then I cut it open and saw mold! Yuck! ..but now I know :)

I absolutely do not know where to look for lotus root! I've been wanting to try the lotus root recipe for a while now.

I have to confess that I have been off my vegan/vegetarian diet for almost 3 weeks now. The decision was completely economic. I was broke and had to eat things I knew would fill me, since I was only eating about once or twice a day. As a result, I feel like crap all over again. But some positive things have happened. I got a pretty awesome raise at work so once I pay off my bills, I can start shopping at Whole Foods again for all my healthy delicious stuff. Now that summer is edging to a close again, I can also start using the stove more. It's absolute murder to cook, even on the burners, in my third floor apartment. One night two weeks ago, I nearly fainted from how hot my kitchen was while I cooked dinner. I resolved to keep the oven off until the weather officially cools.

Jessica Porter, who helped Alicia with the recipes for "The Kind Diet" also has a cookbook called "The Hip Chicks Guide to Macrobiotics" that looks pretty good. I haven't bought it yet but I intend to. Will keep you guys posted.

Wow! It sounds like you did have a busy summer! I'm glad that you were able to continue eating vegan foods while you were away! And it is great that you are going to start back up with your weight loss program! Maybe include more superhero recipes in your diet? emoticon

Ok - Recommited today to try to get into gear to lose weight again. I've been maintaining for a while and that is good.......but it's time to get serious now.

Had a yummy salad for lunch. Romaine, tomatoes from my garden, chia seeds, pine nuts, homemade dressing and some grilled tempeh.

Sorry I've been MIA lately. It's been a busy summer.

First was my daughter's graduation from High School, I had weekend in Lancaster at someone's house so I could be with my mom who was visiting, then we took my daughter to Missouri for her Summer Welcome at the college she is attending. Then we had a camping trip with a trip to the In-Law's for a christening of my Nephew (and a catered event where the only thing vegan was the salad). Then we went to Florida (Sea World, Universal Studios and Disney) for two weeks and then next weekend we take my daughter back to Missouri for College.

It's just been nonstop all summer.

But - The best thing is I was able to eat completely vegan during all of it. Through the camping, the traveling and even at Disney!! Disney is actually a great place for vegan's! I had no problem eating at all, including tons snacks (like a vegan root beer float, lots of iced drinks, kettle corn, candied nuts, etc.) it was great!

I'm hoping we can get more dialogue going here!

Oh - and it's been 3 months now since I've been Vegan and almost 9 months since I became a vegetarian!

Yesterday I went to lunch at a local thai place. I've pretty much been eating vegan there for while. Years ago I started ordering the tofu in my pad thai and vegetarian (which is vegan) soup and appetizers (also vegan). I then veganized my pad thai when I went vegetarian and stopped having egg in the dish.

The one thing that was difficult for me to give up was the thai iced tea. I really crave them, and I know its the sugar that I crave.

So..........yesterday I asked her what kind of dairy they put in the thai iced tea. It was half and half. I asked her if they could put coconut milk in it instead. She said sure. Apparently the sugar is in the tea already and they just add the half and half. It tasted exactly the same. The only difference was mine had a slight film from the coconut milk (the half and half left my friends glass clean and it was smoother without the film). Mine had a film left around the glass. The film didn't taste different. It just had a slightly different feel when drinking it, but nothing bad or anything. It allowed me to get that sweet taste I craved yet keep it vegan.

Now I'm not sure about the sugar being vegan, but honestly I don't know if I'll ever worry about that. Baby steps right.

Made the Athena barley with kalamta olives and tomatoes from the Real food daily cookbook that Alicia recommended on her website. It was so good. My son wanted to eat the whole bowl. They had their own "barbeque", but after trying my food they want me to make it for dinner! It's a side dish, but I think it makes a perfect meal. It's got barley as a grain, lots of fresh veggies, lemon juice, fresh herbs and kalamata olives and olive oil for health fats. Very yummy!

Yep- I agree, the book makes it great for not feeling guilty and allowing yourself to start again where you left off. Each meal you don't eat without meat is great and it all adds up! Keep up the good work. Luckily I've kicked the meat habit. It's almost been 6 months, and I can safely say now I will never eat meat!! Cheese, eggs and milk is another story.

So today I went to the farmers market. Got there late and there wasn't much left, but it's early in the season and there really wasn't much there anyway. I bought 5 herb plants that I now need to figure out where to plant and a bunch of green onions. The person I bought them from isn't organic, but uses no pesticides. It's a small local farm and I love supporting that.

I also went to whole foods. Some new things I picked up is brown rice vinegar, tamari, wakame and a bunch of other stuff I usually buy. All was vegan and I bought some items to make my vegan Bow ties with broccoli pesto. I'm so sad I couldn't find whole wheat bow ties, but once in a while as a splurge, white pasta won't kill me.

Also when I didn't have the wakame I used Nori instead. Wasn't bad, but I bet the wakame will be even better. I couldn't find any barley miso paste. Will need to look out for that. May have to try online.

I've used the miso a few times. I was supposed to buy some wakame to make with the miso but I didn't pick any up so I've been using kale and collards. I made tempeh once but didn't really dig it. I'm sure it's because I didn't add enough flavor.

I'm really enjoying the recipes in the book too. I've eaten meat three times this week, which kinda sucks but I know I can always start again.

I had a 2 day vegan run, but I've had cheese the last two days. The nice thing about Alicia's book is that you don't have to feel bad because your flirting. Just pick yourself up and dust yourself off.

Tomorrow I have plans to mke a really good looking vegan dinner I found in the current vegetarian times.

It's called Bow ties with broccoli pesto.

The scale went down this week and I'm on a good path again. YEAH!

I can't wait to try the plums. I still have to try the vinegar I got. I also need to try the tempeh and miso in my fridge. I just have no idea where to start, lol.

Need to work on that :)


I'm also trying to incorporate more veganism into my diet. Doing so-so. Home is pretty easty, and eating out sometimes is easy. I did have pizza with cheese yesterday, so it's a work in progress. Step by step and day by day.

I found the plums and I bought some of the vinegar too. I used a little on my baked sweet potato and was pleased with the taste. I like sour/salty foods. emoticon

Yes- I was just there yesterday and they had some by Eden Foods. It was in the section with the japanese foods, like nori, soya sauces etc. I didn't buy the plums, but I did pick up a bottle of the umeboshi plum vinegar. I figured it was a start. Now I just have to figure out what to do with it, lol. It was made by Eden foods too. Neither were organic, I would love it if they were.

Does anyone know if they sell umeboshi plums at Whole Foods?

I asked about them at the supermarket and no one had a clue what I was talking about. I thought I might have more luck with Whole Foods.

I have to find saffron. That seems to be something I can never find. Christmas went well. I brought roasted carrots, parsnips, beets and sweet potatoes. I also brought the stuff to make an organic green bean casserole (not vegan), and made it at my Brother in Law's house next door to my Mother in Law. I had tons of good vegetarian things to eat and it was a wonderful day.

So, last night I made Moroccan Couscous with Saffron. This recipe is amazing! The Rustic Pasta was my daughter and I's favorite but it has been replaced. We are going to try the Chocolate Peanut Butter Cups this weekend for a treat. I hope everyone has a great weekend!

Tuesday will be 3 weeks without meat. I have veggies roasting in the oven from a local CSA from my sister in law's over abundance of veggies. I have butternut squash, apples, red beets, parsnips and carrots. I'll make some quinoa to eat too. What a yummy easy dinner that is so healthy.

Day 3 meat free is going well. I had a falafel sandwich at a pizza restaurant today. It was so good!! It was a falafel, Israeli salad and tahini dressing - so yummy!
