Wishing all Greece Team members Chronia Polla, Christos Anesti. Sorry this is late but I was away for a holiday with relatives in the north of Greece, Nomos Imatheias, in Alexandria, a small town near Veria.
For Easter Sunday they eat bitsivisi. It's lamb stuffed with rice, spring onions, dill and mint. The huge baking tins are placed in a preheated outdoor oven (our relatives have one so big that several other families bake theirs there as well) which is then sealed with bricks and mud so the embers extinguish due to lack of oxygen. The lamb cooks to melting softness overnight and the oven seal is broken mid-morning. Of course we also had the usual lamb roasted on a spit, and kokoretsi.
It's nice to see different traditions from different parts of Greece. I did miss my mother-in-law's Easter koulourakia (genuine Smyrneika, my husband's four grandparents are all Mikrasiates), but she is in mourning due to recent death of her husbands so she didn't bake this year, and in Alexandria they don't do koulourakia, only tsoureki.
