Hi -- have always loved to cook. Then had a small stroke and for some reason lost some of my cooking skills, burned a lot of stuff. Am much better now, and back to fairly good cooking. BUT, after some 3 weeks of miserable flu I have diarrhea that would not stop. I finally decided on a process of elimination to see what I could figure out. When I told doctor the results she said I had Celiac disease and I already determined lactose intolerance. Never had the problems before. Since a total left hip replacement Aug 2007, I have steadily gained weight. Even with the 3 weeks of flu and the months of diarrhea I kept gaining. Finally, the doctor and the nutritionist yelled and educated me on the fact that I had not been eating enough and my body was storing my food into fat and not energy. So, I was given a diet sheet, 5 sheets of okay non-gluten foods, have to cross out the dairy. Have to eat the regular 3 meals plus 2-3 small snack in between. Have just started the routine, buying all the proper groceries. Had already been doing all cooking from scratch, veggies and protein, etc. But still not enough and not all the right combinations. I have a hard time eating enough because my appetite is so small since I had Chemotherapy and some bad meds with bad side effects. My taste and smell are affected so many things don't taste or smell good. There are still foods that are okay. I have to get a proper menu and the grocery list for each week. I'm having problems doing the menu for each day. Will go to library to get gluten-free books with recipes and menus. The other thing is recipes to match my problems and still taste good. Have to adapt some, but my inventive abilities are lacking some and I get so tired from my fibromyalgia that I have problems getting all the way through cooking a whole meal properly, let along figure out what to cook. I am hoping to get some good recipes from you guys, even though I may have to adapt them. Will keep up with this message board for good ideas. Echo

Tonight I made red wine and rosemary braised chuck roast with carrots, mashed potatoes and sauteed garlic and parsley green beans. Dessert is coconut cream cake. Happy VDay everyone !

I made homemade chicken pot pies from Cooking light tonight. Served it with a big salad with red bell peppers and celery, and some hot rolls. Then we had coconut cream cake so my parents could celebrate my husband's birthday.

I RUBBED A ROASTER WITH A MIX OF GARLIC, ROSEMARY,THYME,AND OLIVE OIL, THEN STUFFED IT WITH LEMON'S AND SERVED IT WITH BROWN RICE AND BROCCOLI.
SO GOOD AND PLENTY FOR ANOTHER MEAL OR TWO.

Last night a German Casserole with sauerkraut, sausage, smoked pork, new potatoes, carrots, apples and onion.

Tonight it will be Korma with Paneer and peas over brown rice and a tossed salad.

We had friends over for dinner. Appetizer was boston lettuce with marinated mozzarella, grape tomatoes, salami, basil and balsamic vinaigrette.
First course was a salad with mandarin oranges, sugared pecans, pomegranate seeds and an orange juice vinagrette. Main course was chili con carne (from last month's cooking light) served with honey corn bread. Dessert was chocolate crunchies made with corn flakes, raisins, toasted pecans and toasted coconut.

Booksandcoffee, we got 4 inches of snow. Very beautiful. We had fun romping in it with our chocolate lab.
Today we had friends over. For appetizers I made herbed goat cheese stuffed peppadews and BLTeasers. First course was garlic cream seafood soup. Main course was Grilled Veal chops with lemon caper sauce, roasted potato, carrot and parsnip coins, and sauteed broccolini with crispy lemon crumbs. dessert was chocolate crunchies.

Tonight is, Pork roast cooked in the Crock pot, as I don't have a lot of time to roast it the way I normally would, potatoes, carrots, a tossed salad, maybe some Biscuits

Dessert, I'm thinking maybe some Sugar Free Jello, or a Apple Crisp made with Brown Sugar (Splenda blend)
