I took some leftover brown rice from lunch yesterday brown some lean ground beef added it to the brown rice took a can of pinto beans put in a pot cut up some green peppers and onions and let them cook when they were ready i put the rice, ground beef , and beans in a pot and let them cook a little while and that was lunch.
Nothing is impossible to a willing heart.

I had KFC but ate 1/2 of the potatoes 1/2 of the macaroni and 1/2 biscuit 1 piece of chicken !

french toast: a couple of eggs, 3/4 c milk, 1 tbsp sugar, dash salt (optional), big shake of cinnamon, 4-6 left-over slices of french bread.

clean out the fridge impossible pie/quiche
when I make the soups or the quiche, I use just about any meat, vegetables, cheese, They always taste good and they are basically free so they are a good thing for me. Lynette

I can my own soup and usually have a cup of soup with 1/4 cup of oyster crackers or a salad with boiled ham diced up on it !

Today I'm either going to have a leftover pizza burger (3 oz 93% ff cooked & crumbled ground beef mixed w/ pizza sauce, basil, garlic on 1/2 a hamburger bun topped w/ reduced fat mozzarella & baked in the oven) with a green salad
or I might have a tuna fish sandwich on whole grain bread with a pickle and some baby carrots Stay strong and be blessed!

I try to have a big salad, with some protein added. Legumes, egg, chicken, tuna, lean beef added to spinach, lettuce, with apple, or other fruit, as well as any other veggie, I have around. Filling, healthy and delicious.
In a hurry... I go for plain yogurt, with fruit or honey. If I have made a big batch of soup, I will go for a bowl of that. Lentil is my favorite. IMPROVISE,OVERCOME AND ADAPT!

My usual weekday lunch is chicken and mixed greens salad or cottage cheese and tomato.
On weekends, I like to eat my largest meal of the day for lunch, usually grilled steak or roast turkey. ![]()

I made a pot of 15 bean soup last night and added a cut up chicken breast. as long as it's made a head of time, I find it much easier to eat better.

Usually I eat leftovers from the previous night's dinner, but if there aren't any leftovers, then some soup, a sandwich, or a salad. Or sometimes a combination of those...like soup and sandwich or sandwich and salad. :)
