This recipe sounds interesting , but is it Beachy ? Do lentils count as beans ?
Servings: Serves 6 Ingredients Curried Red Lentil and Swiss Chard Soup 2 tablespoons olive oil 1 large onion , thinly sliced 5 teaspoons curry powder 1/4 teaspoon ground red pepper (cayenne) 5 cups vegetable broth 1 bunch (1-pound) Swiss chard , tough stalks removed, coarsely chopped 2 cups (about 14 ounces) dried red lentils 1 can (15-ounce) chickpeas , rinsed and drained 1 teaspoon salt 6 tablespoons thick Greek yogurt , thinned with 2 tablespoons water 1 red or green jalapeño chili , stemmed and thinly sliced 1 lime , cut into 6 wedges Directions Heat oil in large, heavy saucepan over medium heat. Add onion; cook, stirring frequently, until lightly golden, about 10 minutes. Stir in curry and red pepper. Add 4 cups broth and chard; increase heat and bring to a boil, stirring until chard is wilted. Stir in lentils and chickpeas. Reduce heat to low, cover, and simmer 16 to 18 minutes, stirring twice, until lentils are tender. Remove from heat. Puree half the soup (about 4 cups) in a blender or food processor; return puree to pot. Stir in remaining 1 cup broth and salt, and warm over low heat 2 minutes. Divide soup among 6 bowls. Good morning! On my way out the door for my iv meds and basically kicking around till tonight when my hubby gets off work. Packed my snacks (v8, almonds, red pepper&hummus, boiled egg) which should get me thru along with a salad from subway.
Regarding beans: the roasted rocks for a snack, adding to a salad, eating as a side with salsa mixed in, hummus which can be made out of any type of bean. Check the recipe section (ie there is a phase 1 specific thread and also a bean thread). I will be around - have my droid and my laptop (when I get to hubbys work). Have a great day! I like living. Roasted Chickpeas
Ingredients: 1 (12 ounce) can chickpeas (garbanzo beans), drained 1 tablespoons olive oil (some skip the oil) salt (optional) garlic salt (optional) ground pepper (optional) Any herb seasoning you like (optional) Directions: Preheat oven to 450 degrees F. Blot chickpeas with a paper towel to dry them. In a bowl, toss chickpeas with olive oil, and season to taste with salt, garlic salt, etc. if using. Spread on a baking sheet, and bake for 30 to 40 minutes, until browned and crunchy. Some people like to SKIP OIL. & DRY ROAST! Check and stir often for even browning. Does anyone know where the Phase 1 food list went? It use to be a sticky thread that explained the plan with all three phases of allowable foods. ![]() P.S. Um there is nothing wrong with pinto beans! You can have any kind of beans: black, pinto, kidney, etc as long as sugar free (some canned have sugar - just rinse).

I ate 1/2 cup of pinto beans on day 2 of P1. Is it the end of the world? What's wrong with pintos, anyway? I did have black-eyed peas yesterday. They were yummy.

Well best laid plans - I will officially start back on the beach tomorrow - my kitchen was just not ready until I shopped today so I'm making some beachy things and planning my week as I write this. I will have turkey breast and leek soup (no potatoes subbed cauliflower) and plain Greek yogurt for calcium. I'm psyched to do this and make some PERMANENT changes to my life!

Not a problem! *bounce* getting the grandbaby today! She called me up yesterday to talk to me..hehe. I asked if she was coming over to see me today and she screamed ya...and said goodbye to her mom and grabbed her coat. Evidently she now can say nana (for banana) which means I have some hope of her calling me noni soon.

Happy New Year, everyone.
It's cold here, too. We have sunshine, so it will be cold again tonight. We had temps down to 3 degrees. With the wind, it was -5. I like the mild temps of the coast, but not the traffic. We had high humidity, so freezing fog with it. Good night to stay home. Fireworks were earlier with some at midnight. At least they aren't firing guns in the air, which we can hear, but they aren't close to us. South Beach food all day. I've been good since Christmas, finally. Good health to all, Berta Berta

Happy New Years! We were expecting all kinds of fireworks last night and we had to laugh because it was tame (considering 3 weeks ago, it sounded like a warzone out there). We decided whomever lit them off early December decided to light ALL of their stash..lol.
Today is low key - taking Abe out for a long walk. Thinking of making some brussel sprout salad. Tomorrow we get Aliegh for the day, snot nose and all. I can't pick her up but at least my hubby is home so he can do that (and the diaper changing..lol). The poor girl and myself aren't use to the one week in between seeing each other stints. Not sure who gets more upset when we have to part, her or me..lol. I like living. Oh definitely use a flavored broth since cauliflower is so bland. You can also slant it another direction and use some curry!

it was ok, a little bland ... i know i over cooked the onions as they were too browned - I could taste it. Either too much water or not enough cauliflower. Will try again. I'm thinking of adding chicken or vegetable broth next time just for more flavor.
