This is low carb substitution for spaghetti noodles.

Get the spaghetti squash. It is a yellow round/oblong squash labeled
spaghetti squash.

Take a knife an pierce it a couple of times, then put it in the
microwave whole for just a minute or two. This softens it up a tiny bit
and makes it easier to cut. Slice the squash in half lengthwise. Scoop
out all the seeds. Then place the two halves face down in a microwave
safe dish with water in the bottom, cover with microwave safe cover (or
saran wrap) and microwave on high for 5 to 7 minutes depending on the
size of the squash. Start with 5 and then test it. When it is done,
take a fork and scrape out the squash into a bowl. It comes out like
stringly spaghetti noodles.

Sautee some mushrooms with a little bit of sherry, wine, or
cooking wine (1 Tbs) then add a can of fire-roasted tomatoes and a
little garlic and pour it over the squash. Yummy. You can also eat it
without tomato like sauce and just put some lemon and a little goat cheese.
