thank you!

I may not be there yet but I'm closer than I was yesterday.

I got tired of starting over and working back to where I was, so I have stopped giving up!

KAIYA - peanut oil should be fine to use. Take a look at this info: culinaryarts.about.com/od/culinaryre

Keep in mind that when it comes to cholesterol, while the numbers are definitely important, the ratio is also very important. HDL helps to clean up the excess LDL in your body.

For guacamole and salsa (is great with hummus too!!) Take a Mission Carb Balance Wrap.
Slice it like a round pizza ending up with little triangles about an inch wide. Spray with olive oil spray and sprinkle with a little garlic powder. Place on a cookie sheet and bake in 425 degree oven for 5-10 minutes checking frequently until golden brown. Low fat, high fiber, low carb snack to scoop salsa, guac, hummus, anything you can think of and they are delicious!

Is peanut oil or peanut fat good for HDL? Spark has a recipe for spicy peanut chicken (with natural, sugar free peanut butter) that is amazing.

I may not be there yet but I'm closer than I was yesterday.

I read the labels on almost everything I eat and I've noticed almost nothing has trans fat anymore. Or maybe I just don't eat crappy stuff any more. I too have a good combination of good and bad. I told my Doc. red wine and popcorn. I use a ton of olive oil but I use peanut oil for popcorn and walnut for salad dressings.

I am just popping in here to remind everyone that plant foods are cholesterol-free.

Increasing good fats will help with your cholesterol. Margarine, and anything with "trans fats", will increase your bad cholesterol and decrease your good cholesterol. You can find out whether your foods contain trans fats by taking a peek at the ingredient list. It is any oil that is "PARTIALLY hydrogenated". Per our laws, companies do not have to list trans fat in the nutrition info if there is less than half a gram, so you really must check the ingredient list.

I like guacamole on fresh vegetables (red/yellow/orange pepper strips, celery, carrots, etc). I make it just by mashing up avocado with some salsa.

sliced avocado is good on a sandwich, or you can dice it up in a salad or soup

Oh.. maybe this will help. Do you like guacamole? Avocado is a great source of healthy fat.. I mash them with garlic and fat free sour cream then add some finely diced onion and seasoned salt, mmmm. I have also switched out the oils in my house, and only use smart balance oil, extra virgin olive oil, grapeseed oil, and light land o lakes butter made with canola oil. All of those fats are more healthy than crisco or vegatable oil and when I cook good healthy foods a little goes a long way and gives it great flavor.

After six months of switching out bad fat for good my husband and I both have great ranged cholesterol levels and its been consistant for about 2 years now.

I am fat :P 300+ pounds (hey i used to be 400+).. and my cholesterol is wonderful. I and my cardiologist thinks i is because of some of the things I eat.

I drink almond milk. When I want hot cocoa, 9 times out of 10 it is heated up chocolate almond milk. I eat eggs a LOT, I eat butter, no margarine (actually, amazingly, he has no issues with either of those.. it is when you swim in butter you have issues, or you eat a lot of fatty bacon/pork, believe it or not, he does NOT see pork as the 'other white meat').

I eat a lot of chicken, poor, so its leg/thigh quarters, baked. Or we boil it and make chicken salad of it, I do not eat lettuce, i eat spinich greens, turnip greens, collard greens.. according to the cardiologist and nutritionist, other then liquid, lettuce offers next to nothing in nutrients, unless you eat so much of it you just may as well sit on the toilet and pee all day.

I snack/graze all day, on nuts. nuts. nuts. you can get unsalted, or low sodium. game is actually better for you then beef! I did not know this, and.. I have salmon or some other fish, usually sprinkled on a salad at least twice a week.

He thinks it is not ONE single food or even three or four, but a combination of it all, reacting with my body, each other.. et et et.

We tend to take each food and break it down and think.. wow good for us, but as he said once, you can have eggs, and they are wonderful for you, but if you eat bacon, fry it in bacon grease, and also top it off with margarine (believe it or not, when your body breaks down most margerines, it isnt good for you after the fact).. you may as well cancel out the good in the eggs and the good in the whole wheat bread, because you dosed yourself with a whole lot of bad.

When I do want bacon, I consider ONE slice to be two. We actually purchase our bacon, then slice it down length wise. So half a slice is now one slice, and we do NOT give ourselves 'extra halfs' because oh my.. its only half. nope, if normally we would have had two slices of bacon with a meal, we now only have two half slices.. same number, different size. And we usually buy turkey bacon when we want 'more' for blt's and we use spinich or mustard greens or some other greens instead of lettuce for our sammiches.

we double up on other things though. For instance, tonight is breakfast for dinner. SOOOOOO I will have two whole wheat toast.. instead of butter, I am going to smear a bit of lemon curd. I use lemon curd because it is STRONG TASTING, so you only need a little bit, a bit of a smear and you have you a good taste.. bread with a hint of sweet lemon.. two fried eggs.. we use pam spray and a non stick skillet, and two slices of bacon (2 half slices), and.. this is where we get our extras.. slices of tomato, we have a cantaloupe we have to use before its bad, so slices of melon, and we have some apples, that jess says if we dont use up soon, we have to toss, so.. fruity breakfast.. i will probably save my apple though, if i am really hungry before bed, i can have it then.. maybe with a smear of low salt/fat peanut butter on some of the slices.

For drink, we have oranges and lemons, sooooooooo I am going to have iced water with a slice or two of peeled lemon and orange wedges :)

I know it doesnt all sound filling, but believe me you! IT IS!.. and for salads when we have em, which is a lot.. i actually squeeze one lime, one lemon and one or two orange wedges over my large salad and stir.. no fatty salad dressings, i once joked to my daughter.. no way in hell anyone in this house will get scurvy!

but yea, all these combined, helps keeps my numbers where they belong! Even though i lose weight ooooh sooooo slowly.. least as my docs say.. i am doing it healthy.

Some foods, nuts, fish have the good cholesterol in them. Almonds are on the list and I love them all natural without the smoked flavor or salt and oils. I have Google's some foods and done pretty well. Maybe Google list of foods with healthy cholesterol?
