Chopped tomato,chopped sweet onion,minced garlic,Sometimes I add cucumber,other times no. Lots of chopped fresh Sweet Basil, maybe some fresh oregano and parsley. I also use dry herbs. Sea salt,pepper,salt free greek seasoning,malt vinegar and olive oil. Mix,let sit a bit so flavors can marry.

Do not refrigerate. Ref. kills the flavor of tomato.


Sometimes I chop veg. large and serve as a salad,other times I chop veg. small use as a condiment. I like to use on a salad as my dressing.

The important ing. are good vine ripened tomato and lots of fresh sweet basil. All other ing. can be fudged. I usually go with what is available in my veg. and herb garden.

I love beans. If you soak them before hand it removes the flatulence and lots of the fun. I usually have half doz. variety's on hand along with ham hocks or smoked pork to season em. I use canned too in a pinch but I rinse them well to remove the ridiculous amount of salt.

I love grilled or oven roasted veggies rolled in olive oil and seasoned up. I use one of those wok pans with the holes in on the grill and add the veggies in incremental stages based on how long they take to cook (barely cook too by the way). Fennel, parsnips, turnips, squash, sweet and hot peppers, garlic, reg and sweet potato, shrooms--oh and so awesome...beets, especially the gourmet looking ones from the farmers market.
nothing beets one of those fatting casseroles made with soup and topped with french fried onions though.

Bear - Shouldn't they be called "New Mexico Blackbeans?" :)

I like to grill portobello mushrooms and eat them in a burger. Just brush them with olive oil, coarse salt and pepper, and put them straight on the grill. And I know this is a side dish, but I love grilled asparagus. And baked eggplant strips covered with bread crumbs are delicious.

A friend at church gave me areceipe for SPIANCH SQUARES which I like. & are easy to make & I can frezze the leftover slices & take 1 out & reheat it for my VEGGIE at dinner
