The most difficult part of this Living the Good Life challenge was taking the salt shaker off the table for all three meals. I found if I put a little more pepper on my baked potato, then I could still eat it. However, I found the litte bit of salt I put on my watermelon now got moved to my "snack" food. Fortunately, I drink enough water to balance my sale intake, as my medical reports show that I'm right at the low end of normal. WooHoo!

Every week my 5% challenge has us getting team points by monitoring a variety of nutrients and networking. We have close to a dozen teams and my team seems to place in the top three regularly. In the Spring challenge, we monitored the following healthy habits and I also like to make sure I get 25-45 units of fiber each day. While 35 units is the top of my range, I drink more than my share of water to go with any access I might consume now and then. Seems that whatever challenge I accept, I tend to go a little overboard . . . duh?!? Therefore, I probably scare off a few people who wouldn't want to post the 5 recommended freggies each day. That's a shame, too! Every competition included some sort of line that says please participate only if your doctor approves.

Wk 1 Blogging (Blog 5 pts (max) and Feedback 1 pt with 10 pts max
Wk 2 Portion Control & Measures (5 pts per meal; 15 pts max)
Wk 3 Water (1 pt per cup; no max)
Wk 4 Breakfast (10 pts per breakfast; 10 pt max)
Wk 5 Track Food (track all your food; 10 pts max)
Wk 6 Freggies (1 pt per freggie; no max)
Wk 7 Thank yourself everyday (1 self goodie is a 10 pt max)
Wk 8 Get the Salt Shaker Off the Table (10 pts per meal; 30 max)

We just wrapped up our 8 weeks last Friday and I lost 7.6 lbs or -4.4% of my weight, with only 3.8 lbs left to reach my 100-lb weight loss goal. I'm a major tracker and know that this, along with the challenges, are what keep me inspired and productively losing. WooHoo!

Sweetlips - Keep working towards your goals, while you do something to provide yourself with a reward as you meet various milestones. I'm fortunate in that I have more time to spend in addressing good health and nutrition habits and am thrilled to be so close to being at goal. I just don't want to lose my momentum in reaching goal and using these good habits to successfully maintain.

Ehagfeld - I being doing the freggies, I am working hard on the exercise - losing inches, and glad for that, but not pounds. I am a bit off in my body functions, so I am working through that, but all in all I accomplished over 1,000 fitness minutes, recorded food most days and meditiated over 500 minutes - got in more than 20 servings of freggies. Yeah!!!

This has been a great month of lots of colorful freggies.

This last week, however, I found a weakness that put me over my calorie count more often than I care to admit. The culprit was mixed nuts (great protein, but higher in fat than I needed). Part of me rationalizes that while I've been eating exceptionally well, I was sometimes a bit low in fat or protein, but not enough to ring any cautionary bells. Perhaps this is why it's become such a craving. While I have overeaten them, it's been more on a maintenance level (versus simply pigging out).

Oh dear . . . I can't say that I have sweat at my fingernails either! Congratulations on a great workout. Be careful what you ask for! 8-))

I'm still working on the joy principle . . . my fitness needs to be a bit more relaxed so that I can enjoy the environment around me while still moving. When at home (since we've only had three days of summer along Lake Superior), I enjoy the balance I get with Tai Chi and walking (with Leslie). Here we are at the beginning of summer, 3 pm, and it's 47F (8.3 C) . . . burr.

I made the silly mistake of telling the trainers that they could train us harder and the other ladies agreed. Well, I did not know that there were so many ways to do bicep curls, using weight to get up off of the floor. I did not know that I would sweat on my fingernails, behind my knees and on my knees.

Understand I am not complaining!! I am red-to-go for Wednesday.

My food has been greens and a protein. I did find out that Baby Ruth candy bar, has 4 grams of protein, and 130 calories - May I have one please. emoticon

Today was a great day today. I'm actually glad to be home now. I was away from town for a wedding weekend. Today I managed more of a maintenance program as I exceeded my calories by a bit, but still ate plenty of freggies while traveling with good freggies and making smart choices at the buffet line. Continued to work in quality workout time, too.

The birthday party at the China King allowed us to pray together and make quality connections, bringing us closer together as God's Children.

Ate within my calorie range, had grains for breakfast, a swet for snack and greens and tomatoes for dinner. One apple today and I feel good - 30 min of walking and lots of smiling. Thank Ehagfeld for keeping this thread going. I am trying to knock off 5 pounds by July 1!!

Great breakfast choices, reasonable lunch, and lots of veggies at supper. Managed to do well within my calorie range but with a little odd variation (low carb with a little higher fat). Since I'm often on the lower side of recommended fat, this should be great balance.

I have been exercising at least 90 minutes a day and a couple of 2 hour days. I have a mon eat - cabbage fixed several different ways, as well as lots of fruit. I am getting my water in, and I gained 2 pounds, so I am thinking, I need more water. I had to rest today and that migjht be what my body needs.

After I was introduced to Pho, I found so many variations of it that I could make myself. The great part if that you can spice it up with whatever your favorite veggies are. I happen to like very spicy and hot, but most people I know prefer to go light on the sriracha (hot) sauce.

At the restaurant, I normally just get bean sprouts, cilantro, and lime with the sauces. I have a challenge to eat more fruits and veggies this week, so I took this time to add lots more low-cal veggies to go all out. I had 24 freggies today and was able to stay within my calorie range, but a little high in sodium, a little low (but quite manageable) in protein and fat.

The variations are as limitless as your creative abilities. It's best to first experience it in a restaurant. When you see what looks like a serving bowl to hold 10-12 servings of mashed potatoes, you've discovered the Pho Bowl. 8-)) This morning, my ten-veggie Vietnamese Pho soup (~300 calories) was enjoyed over a two-hour period while Sparking:

Pho, Vegetable and Chicken (10 Veggies)

What a great and tasty way to work in a whole days of veggies in one very satisfying soup!

32 Minutes to Prepare and Cook
(mostly prep time with about 10 minutes to cook)

Ingredients
3 cups water
1 chicken bullion cube
1/2 c carrots sliced
16 gr Pho (rice stick) noodles (1/3 pkg serving)
1 cup (97 gr) yellow squash, sliced or diced
1 cup (68 gr) pea pods
1/2 cup (25 gr) red cabbage, knife shredded
1/2 cup (20 gr) fresh spinach, knife shredded
1/2 cup (39 gr) portabella mushrooms, sliced or diced
1/4 cup water chestnuts, sliced or julienned

Garnish with
1/2 c onion quick fried in
1 t olive oil
1/4 cup cilantro, sliced or chopped

Season with
1/2 t fish sauce
1/2 T hoisin sauce
2 t sriracha (hot) sauce

Lisura -- I am just glad that your are particpating.

Ehagfeld - you go girl. I am going to have to look up the Vietnamese Pho - cause I love veggies and spices together. Right now, I 've got some fresh squash ( and garden should be yeilding by next week - the rain we had really charged the graden), mushrooms, onions, red bell pepper, garlic, so that is the dish for today.

Yesterday, I did 3 hours of exercise - boot camp with 2 hours of water aerobics - 1st hour is regular, second is called aqua boost.

Veggies and Fruit

1/2 watermelon
Strawberries
Cucumbers

Got in 20 glasses of water and good rest.

I really like this challenge but I won't be able to record because I'm going on vacation and I won't have as much access to the internet from June 21 to July 12. I will still try to do it though. I praise God for Vietnamese Pho! Made with lots of great veggies and spiced up with a blend of Asian sauces. So Yummy! If I don't add too much of a late night snack, I met my key seven nutrient levels (calorie, fat, carbs, protein, calcium, sodium, and fiber) today and am pleasantly full!

Thanks, Sweetlips! I praise God for the abundance of food my household is blessed with and the colors in the rainbow we're also given. Diversity is a major theme in my life and it shows throughout my life. I also appreciate these challenges as it has been the fuel that has allowed me to get these last fifty pounds off. Our wild strawberry plant are just now flowering, so it will be a while before we have our local strawberry festivals . . . while my Florida family celebrates in late February in Plant City! Love those farmer's markets.
