Well...
It is surprisingly good to cut tomatoes in half, top heavily with cheese, and then sprinkle on some crushed pork rinds or nuts. Broil until cheese melts.

And are you asking about starting with fresh artichokes or canned? Whole, or quartered? If fresh, check out the Internet on how to prepare artichokes for eating if you don't already know how.

As it is, bacon and artichokes make fine additions to a hearty salad you can eat for dinner. You can wrap artichokes in bacon and broil them. You can dice them, saute them, add some shrimp, sherry, & diced tomato and heat until the shrimp is cooked, then eat as is or as a topping for spaghetti squash.

Bacon, artichoke, and tomato sound like ingredients for making something Italian. What about something sorta like a frittata (add egg)? Or by making large sheets of "egg noodles" (simply spread beaten egg out very thinly on a greased cookie sheet and bake until firmly set. Store airtight in freezer), you could make something akin to lasagne.
