I don't like peaches.

I used a single serving cup of Yoplait yogurt and about 1/4 cup Rice Krispies.

For the chicken coating, I'm not sure how much I use, it's one of those things I throw together without measuring. I usually dip my chicken in egg whites or milk to make coatings stick.

Do you like peaches? 1/2 cup of canned peaches is 50 cals, 12g carbs, but no fat and no fiber. I bet that would be great in a parfait. I might try it.

That Rice Krispies and parmesan cheese on baked chicken sounds awesome. How much RK and cheese? Do you need yogurt or something else to make it stick? I really want to try that.

I use to love yogurt parfaits for breakfast, but with the GP I can't eat granola or berries. But found that Rice Krispies cereal is a nice crunchy substitute for granola, and instead of berries, I slice up half of a banana.

Crushed Rice Krispies also make a good coating for oven baked chicken; if you can tolerate dairy, Parmesen cheese mixed with the crumbs is a good coating too.

Are there any recipes you miss or like but need modified? I can't guarantee I can help, but I might have some ideas.

I went for the ground chicken because I like chicken better than turkey. Just a few months ago they came out with 95/5 lean ground chicken and it worked pretty well for me when I tried it the other day.

I was just recently diagnosed, so I haven't had a lot of time to experiment with recipes yet, but I have found I can tolerate ground turkey quite well in place of ground beef.

I've been trying to modify a couple recipes I miss to be more GP friendly. I'm wondering if anyone else has been doing this and if you have any tips. Of course there is applesauce instead of oil in baking. I've replaced burger with ground chicken for hamburger helper. And there are so many choices of low/no fat possibilites now.

Right now I am attempting to figure out a GP sugar cookie recipe. I made a batch tonight, making a few modifications with each cookie sheet. Unfortunately, it got worse each time, not better. But I have some more ideas and will try again.
