Eda - I think they might taste best warmed up. Are you cooking them overnight?
I know one recipe I saw called for low temp and a longer time in the oven.

I was kind of wondering along those lines too. The Chips probably will not fair well overnight.

The Vegetarian Pizza

Whole Wheat Pizza Crust - recipe found on Spark People
Tomato Sauce with crushed garlic and italian spices (cook until flavors meld together).
After the Crust is precooked (approx. 5 minutes) then top with the Tomato Sauce and add low fat cheese of your choice. We like a mix of cheddar and pepper jack. Then at the toppings.

Toppings

1 Small Zuchinni cut up into small pieces after scraping out the majority of the seeds.
1 Small Summer Squash cut up into small pieces after scraping out the majority of the seeds.
1 Vadilia Onion Chopped
1 Small Green Pepper Chopped
1 Small Red or Orange Pepper Chopped
4-6 ozs of mushrooms chopped (We usually use button but a variety of mushrooms would be delish).
2-3 jalapenos chopped.

Bake at 425 degrees for 8-10 minutes.

HI Sunny, I was wondering about the zuke chips..would they get rubbery after a time? I was trying to think if I prepared them the night before the fest..if they would go weird..Too could you post the recipe for veggie pizza..with the zuke? I will write later..my hubby is waiting for me to bike with him..Thanks. Sharlene

Kelly - the recipe sounds great. I also saw a great recipe on Pinterest, tried it and loved it. It was Zucchini Chips. I fixed them one night when we had a BBQ. Loved them. If you are not on Pinterest, I will look up the recipe and post it.

I have never seen Chicken Sausage but will look for it.

Let me know if you want the recipe for the Chips.

Thanks for the stuffed zucchini recipe..I am going to give it a go..the only thing I will do is use Parmesan cheese instead of the other cheese mentioned..I have it on hand. This sounds really good. Sharlene

What a coincidence. Downtown Nashville just did a tomato fest, over the week-end some locals in our community felt it was time to do something here and a zucchini fest was mentioned more than once! You have great ideas and wish you all the best because it sounds like one big blast!

Look forward to see what else is offered.

Just last week, found this on Pinterest, copied in part:
Zu-Canoes recipe on Eating Wellís web page and I had to play with it.
The idea is simple. Hollow out your zucchini into a canoe and then stuff it. Yum!
I decided to do a take on a makeover of the evil potato skins that you can find in every bar in the country. A plate of potato skins at Applebee's is a whopping 1340 calories, 94 grams of fat, and 1850 mg of sodium. Be sure to bring many friends to share this monster.
I didnít add bacon to my zucchini boats. I used al Fresco Sundried Tomato Chicken sausage as a flavorful substitute. al Fresco sausages have 70% less fat than pork sausage and are free of nitrites, nitrates, preservatives and artificial ingredients.
One link of their sausage is only 140 calories and I was able to use just one for 4 zucchini halves and it was pretty good. Not bacon good, but you wonít miss it.
If you can find chicken sausage that you like in your grocery store, give it a try. It is fully cooked and can make a fast dinner with onions, peppers, etc.
I also added cheese to the top because everything tastes better with cheese :) You donít have to add the cheese if you donít want it.
This recipe has more steps than my usual concoctions. While the zucchini is cooking in the microwave start chopping your veggies and sausage. Then, you will have to heat the filling on the stove (the sausage is already cooked so you just have to heat it through).
Finally, stuff your boat and you can start sailing.

Kellyís Note: Iím thinking grilled zucchini would be even better (maybe even try it on the Forman grill).

Stuffed Zucchini Recipe
(makes 4)
2 medium zucchinis
1 small tomato
1 chicken sausage (ex: al Fresco Sundried Tomato)
ľ cup grated cheddar cheese (optional)
Slice off the ends of the zucchinis and cut them lengthwise. Using a small spoon, scoop out the seeds and put them in a bowl.
Place zucchinis in a covered microwave-safe dish and cook on HIGH for 3 minutes to soften.
Chop zucchini insides, tomato, and chicken sausage. Heat a frying pan and add chopped zucchini insides, tomato, and sausage. Heat until hot.
Add mixture to hollowed out zucchinis and top with one tablespoon of cheese. Enjoy!
For one half zucchini with cheese = 83 calories, 4.6 g fat, 4.8 g carbohydrates, 2.8 g sugar, 7.1 g protein, 1.4 g fiber, 235 mg sodium, 2 PointsPlus

I will look through my recipes and let you know. My new favorite way to eat zuchinni is on a Veggie Pizza. It is awesome.

I am the organizer for the zucchini Fest that we have each year..I try to create a delicious dish for each category at the Fest..just to wow the judges..I love to compete. I am running out of ideas..so if you could share your favorite recipe..that would be great. The categories are..Appetizers, soups/salads, main dishes, breads, desserts. Thanks so much..Sharlene
