Here is a recipe that I LOVE! Its actually from a Martha Stewart cook book but I made a few substitutions to make it healthier for me.
Lemon-Thyme Green Beans:

Ingredients:
*1.5 pounds green beans, ends trimmed
*3 tbsp fresh lemon juice (about one lemon)
*2 tbsp I Can't Believe It's Not Butter spray
*1 tsp fresh thyme leaves

Directions:
*In a large skillet with a tight fitting lid, bring 1/2 inch water to a boil:salt if needed.
*Add the green beans; reduce to a simmer, and cover the skillet. Steam the beans tossing occasionally, until crisp-tender, about 6-10 min.
*Pull back the lid slightly and tilt the skillet to drain the water from the beans; add lemon juice, butter spray, and thyme. Season with salt and pepper and toss to melt butter spray. Serve the green beans garnished with additional thyme if desired.
*Serves 4

I actually don't use any salt but it is so yummy! I even snack on the chilled through out the days after the dinner. I give this recipe a 4 out of 5!

I found this yummy recipe on the Better Homes and Gardens website and it looks delicious!

Ingredients
* 1 8.8-ounce package cooked brown or white rice
* 1/2 cup frozen peas
* 1 pound chicken breast tenders, halved crosswise
* 1 tablespoon cooking oil
* 1/4 cup bottled stir-fry sauce
* Packaged oven-roasted sliced almonds

Directions
1. Stir peas into rice pouch. Heat in microwave according to package directions.

2. Meanwhile, in a large skillet, cook and stir chicken in hot oil over medium-high heat for 2 to 3 minutes or until no longer pink. Stir rice mixture into skillet. Stir in stir-fry sauce; heat through. Sprinkle each serving with almonds. Makes 4 servings.

This way we're all not spending countless hours on the internet trying to find some good recipes (oh wait I do that anyways).
