Tonight, I cooked some brown rice and asparagus. So, tomorrow's lunch will be that and some other veggies tossed in there.

For lunches I usually eat what I cook the kids--so that makes me more accountable for them eating healthy too. We have a lot of grilled chicken and things like that cooked in the oven. Then I pair it up with vegetables and fruit. It is pretty good for a lunch. Better than bologna and cheese like they had today because we had a birthday party.

I have recently noticed how expensive eating healthy is as well. Never thought about it until recently when I realized how bad of shape Ive gotten into. I however eat lunch alone and hate cooking just for one person. My husband is asleep because he works nights and my older child is at school, so I usually make me a salad. Little bit of lettuce, sometime cucumber and tomato, and 2 slices of that really really thin ham cubed up. I mix and match it so its not the same flavors every day, sometimes add a couple olives or a small sprinkle of low fat cheese. Hope this helps.

I am a stay at home mom and I am finding it difficult to make easy but healthy lunches for myself. I also try to be conscious of price when making food, and I find it is hard to eat healthy on a budget.


Any suggestions for yummy healthy meals for 1 that don't cost a fortune?


P.S. Anyone else notice that on the meal plans they suggest cantaloupe a lot? I love cantaloupe but its such a pain to cut up...
