I get in lots of fruit, because of my sweet tooth, but could do much better about the veggies.

Farmer's market is tomorrow on my way to work, so I'll see what looks good there.

Netter61, bake eggplant by using a eggplant parmigiana recipe and usually add zucchini in with it. Use lite ingredients. Just layer panco breaded eggplant and zucchini strips or circles with marinara sauce, lite baking cheese, sometimes use low fat ricotta and end top of dish with low cal mozzarella shredded. Last time did not bread the squash. Sprinkle one layer or two with Italian herb blend. Always spray a lite olive oil spray on bottom of baking dish.
Cabbage- I cook down some sausage of choice or lean beef, drain of any fat. Sauté onion in pan with 1tabelspoon of butter, cut up cabbage and add in onion, meat, 1-2 teaspoon of lite soy sauce, add enough water or broth to cook down. Usually have this dish with some baked root veggies that were lightly seasoned and baked. (Parsnips, Beets, potatoes, onions, Carrots) change it up how you like.

Thanks LeeAnthony! I didn't think of the cabbage! I need to try eggplant again - didn't work so much the first time. Do you have a favorite recipe for either of these items?

Netter61...try red/purple looking cabbage and eggplant, maybe if you can find purple carrots or peppers? For fruit, plums, grapes. Fun to see what you can find.

For myself, Fruits are not much of a problem and plums, peaches and nectarines are coming in now. Veggies, love green beans, squash varieties, zucchini, beets, corn, Tomatoes and broccoli, onions, garlic, greens of all kinds! Farmers markets are full of all these now! Just have to watch how I prepare them.

One recipe I have is called Summer Garden Casserole; slice up a couple each of Zucchini, yellow squash, enough Tomatoes for 2 cups, fresh green onions/scallions chopped,then to taste shake Mrs. Dash original blend or garlic herb blend and 1-2 tablespoons of Butter. Bake at 350 degrees F or microwave until bubbly. Can cook on stovetop too. Usually don't need to add liquid but add water or tomato sauce if tomatoes are on dry side.

I've been trying hard to get more fruits and veggies in. I've pretty much got the fruit down with no problems but getting more veggies in during the day is my stumbling block. I definitely try to have several servings for dinner but want to include more during the day for my lunch and snacks.

My workplace just had a Colorful Choices challenge where we tracked our fruit/veggie servings over 8 weeks. I'm proud with what I accomplished - over 400 points where most items gained me a point, certain items gained me 2 points.

Another challenge starts next week where we'll be tracking fruits/veggies again - along with several other activities. I'm on board because of the fruit/veggie tracking. Now I just need to find some more blue/purple items to try!

I defo need to work on my fruit intake. Its terrible! I just don't like fruit very much, of any variety. I like peaches though, and nectarines. Will have to get some of that to eat =) As a diabetic I find it a pain in my rear end to get fruit that will not spike my blood sugar, and that usually means berries and i'm not a major fan of said berries.

I'm a vegetarian/vegan so yes:) But I need to eat more variety. I tend to eat the same foods all the time.
