Love to cook too.. I've been adding beans to my diet. I made a Pasta E Fagioli soup I used just a few elbow macs, lots of Kale instead of spinach, and great northern white beans. I had guests over everyone wanted seconds..

I am not a great cook, but my DH and I love to try new things, and so we both have to cut back o9n fays and carbs, so I will put my thinking cap on, I think I will make something out of the garden, tomatoes (sauce) squash, onions, garlic peppers, sounds like something I make quite often, just saute it with a bit of olive oil, some garlic and other spice, and it will go with my chicken emoticon that I am buying from Sam's

KALE -- Only good in Zuppa Toscana. UNLESS you've got the curly kind (I think it's French Kale) - that was really good, chopped, then saute'ed with onion and garlic in a non-stick pan. Don't use Pam in a non-stick pan - it leaves a permanent residue - so I spritz it with a tiny amount of olive oil; then a bit of salt & pepper. Delicious!

I have a piece of halibut to cook tonight, in wine, lemon juice, dijon mustard, capers and ghee.

I bought Kale this weekend, but haven't braved it yet. I will research today and make Kale with dinner tonight. (Any suggestions?)

One thing I have done is to add spinach to spaghetti and other pasta dishes that I make.

Good one. I add more low carb veggies to whatever I am cooking.

Since starting Spark, I think I've eaten every vegetable in the market except the hot peppers and endive (because I found out that endive is chicory and I heard chicory is bitter). Tonight, I will saute some endive.
So far, I have not met a vegetable that I don't like. I steam, saute, roast, & stir fry; then I experiment with herbs and spices. Newest for me is Summer Savory - which tastes a bit like sage & thyme. I do not like tarragon.

Perfect day for the challenge! A allergy-free food blog I follow posted a waffle contest where we use her waffle base and make a creation out of it. I've been really wanting to do it but stalling because I'm trying to think of ideas. Will be doing it today!

Good question. I am struggling right now just to make sure to add vegetables or fruits during the day. I have been experimenting with making sure I make a vegetable with dinner instead of just having the main course. It helps me get full faster and eat less of the more fattening stuff. :) Plus, I am not much of a cook as it is...

Mornin!

I am SO not a cook but I stopped using mayo on my chicken sandwiches. I now use mashed up avacado. I very rarely use syrup on pancakes and waffles. Instead I use mixed fruit, yogurt and a little peanut butter.

This weekend I will be experimenting with the wheat runner's pancake recipe on spark.

Hello team! I am so happy to see the challenges continue. It's nice to be on the receiving end of a challenge. I am still looking for sunshine to take over as leader and main challenger. However, if individuals want to provide challenges, I think this would be a great way to run the team. Let me know your thoughts.

Today, I want you to experiment with your go-to recipe. My family loves meatloaf. About a year ago, I started using half meat and half rice. The texture and taste remain the same, but the saturated fat is reduced. What will you do?
