Thanks Michelle,

You are exactly who I was hoping to hear from and the recipe sounds like exactly what I need. I have everything on hand already except for the black beans and cilantro, but I am sure if I don't make it to the store it will still be just as good. I am definitley going to give it a shot and let you know how it goes.

I made this one at my last Mexican-themed dinner and it turned out great.

Fiesta Rice

Ingredients
2 teaspoons olive oil
1 (10-ounce) package frozen whole-kernel corn, thawed
1 tablespoon butter
1 cup chopped green onions
1 1/2 cups uncooked brown rice
1 teaspoon ground cumin
1 teaspoon minced garlic
2 cups fat-free, less-sodium chicken broth
1/8 teaspoon freshly ground black pepper
Dash of salt
1 (14.5-ounce) can diced tomatoes with chiles, undrained
1 (15-ounce) can black beans, rinsed and drained
1/2 cup chopped fresh cilantro
1 tablespoon fresh lime juice


Preparation
Heat oil in a medium saucepan over medium-high heat. Add corn to pan; cook 10 minutes or until corn starts to brown, stirring occasionally. Remove from pan. Set aside.
Melt butter in pan. Add onions; sauté 5 minutes or until tender. Stir in rice, cumin, and garlic; cook 1 minute. Add chicken broth, black pepper, salt, and diced tomatoes to pan; bring to a boil. Cover, reduce heat, and simmer for 45 minutes, stirring occasionally. Remove from heat; stir in reserved corn and beans. Cover and let stand 10 minutes. Stir in cilantro and juice.

Yield
8 servings (serving size: 1 cup)

Hi everyone,

I am planning a mexican style dinner tonight, and trying to keep it healthy. I think I have it all under control, but my nutrition tells me that I am way to far under calorie goals, so although I wasn't going to have a spanish rice, I am thinking I can afford it now, but I was wondering if anybody had ideas on what type of veggies to put in it to up my intake of those a little. I know lots of time mexican style rice has some veggies in ti, but I am using a prepackaged store bought brand, and would just like to add a bit more to it.

Also, if you have done this before or have any ideas, please tell me if I should use canned, fresh, or frozen (or if it even matters) and when I would put them in the pan to cook with the rice.

Thanks in advance for your help.
