Hi CAHIBOMOM - we went out for the Thai dinner but I do cook Thai at home sometimes. I usually have the green, the red and the yellow Thai curry paste from Trader Joes - just need one of them along with whatever else you want to add and some coconut milk.
I do cook every week day....a lot of Indian(I am from India)but we also Chinese, Thai, Mexican and of course Italian. Weekends are for eating out!!

The dinner you made does sound delicious!!

I felt the need to come back and tell you that I actually cooked dinner tonight. Yep...Miracles still occur.

Tonight's menu included:
Grilled Salmon
Steamed Asparagus w/blue cheese & pine nuts
Spinach Salad topped with diced apple, cranraisins, red onion, zucchinni, and sliced almonds.

I know... you wish you'd been here! It was good... you would have loved it.

No dinner today. Just one meal actually - brunch at a high-falutin' hotel near us. 2 hours of lingering over Bloody Mary's (I really like them :-), omelets, lobster and shrimp, desserts that added calories just looking at them, a variety of cheeses (did I ever mention I'm a cheesaholic?), and plenty of other things that I didn't even have. With the Lap-Band, I can only eat so much at a time - normally a 30-minute period, so having 2 hours to indulge was kinda like having all my meals at once. When all was said and done:

- I didn't get enough fiber
- I had too much fat
- I had too much sodium.

Hmmmm.... might these possibly be items on the next challenge?? :-) :-)

On the bright side, it was the ONLY meal/food I had today. So I was in my calorie range.

4GAYATRI - Was that homemade Thai? (Got a recipe?) My husband & I were introduced to Thai food two years ago, and enjoy it. But, admittedly, we don't eat it much since we have finicky kids.

Tonight... yes, we went out again. (It's still the weekend.) We had a gift certificate to Olive Garden, so off we went. But, beforehand, I checked out their menu/calories on line, and found that the grilled salmon fit in my calorie range for the day. I ate salad, no dressing, no croutons & no breadsticks. Just in case... I'm headed to the treadmill for so cardio.

I've got to start planning meals out. It would make it alot easier. Plus, we have the challenge of working around the two oldest kids' sports schedules. Sitting down to a family dinner is getting almost impossible most nights right now.

Had Thai for dinner....tried to make it as healthy as possible (Mixed Vegs+Tofu+Brown Rice).

LOL - I'm glad you're all using my birthday as a reason to celebrate.

I'm just passing through (before I pass out) ... and just saw this one new topic. But I have comments and sparkgoodies and birthday thank-you's to send out as well as a blog to write. All will be done tomorrow.

For now, I was taken out for BBQ tonight - Dinosaurs BBQ in NYC (and Syracuse). I ordered the sampler platter - ribs, brisket, and sausage. And we shared appetizers including wings, fried-green tomatoes, deviled eggs, and spiced boiled shrimp.

What I actually was able to eat was: 1 shrimp, 1 wing, 1/2 egg, 1 slice of fried tomato, i bbq rib. That was all I could hold.

Oh yes, there were 3 bloody mary's (it's not a drink, it's tomatoes marinated in alcohol :-)

And a small slice of birthday cake.

All in all, it was about 1200 calories for dinner (less if I exclude the bloody marys), about 1700 for the day. And enough leftovers for 3-4 more meals!!

Have a great night all. To all the people in this fantastic team who wished me a happy birthday - THANK YOU!!! I indeed had a fantastic birthday. I've never felt so alive. And this was after living a half-century of life already!!

Have to admit... I'm going out. It's Alan's birthday, and it's time to celebrate. (I'll use any excuse...My SPage confirms it. Going out on the weekends is commonplace with our family.)

It's MEXICAN tonight. BUT....I've planned for it. I've got room on my calorie counter, AS LONG AS I STAY AWAY FROM THE CHIPS & SALSA.
