I'd definitely make that recipe up with coconut oil or olive oil. Either way works for me. I imagine here they were wanting to play up the sweetness of the squash and roasting it with the coconut oil would preserve some of the sweetness. Coconut also has a higher smoke point than olive oil, so better for roasting (although in some ways it doesn't matter, because salmon needs to be cooked lower heat too.).

Well the whole "saturated fats is bad" is medical propaganda from the 1970's, and there's been a backlash in recent years as various cardiologists and endocrinologists and other medical sorts have been re-evaluating the actual evidence and it's more the hydrogenated type fats (crisco, that sort of thing) "trans fat" is more evil than naturally saturated "good fats" like coconut oil, palm oil, avocados, ghee, etc. It's all tied in with the KETO or to some extent the Paleo and even some of the vegan and vegetarian protocols.

There's a lot of info about all of the "why saturated fats are no longer demonized" elsewhere on the 'Net, and to a lesser extent, here on the Spark, where you can go to find out more, but I rather imagine most of us here are creatures of habit and we're good with our biblical olive oil. (which, of course, is about the best oil for our hearts, as it has the highest levels of monounsaturated fats, but because of that, it can't be used to deep fat fry foods or hot fast roasting etc... lower smoke points...).

But yea... that salmon is calling my name! Thanks for sharing the recipe!!

I don't understand the craze for coconut oil in recent years and, to the best of my knowledge, have yet to ingest any. Remember when it, along with palm oil, was demonized for being highly saturated. (Does saturation in fats come in degrees? Dunno.)

That looks really good!!! Though I'd probably just use olive oil instead of the coconut oil for the vegs - I don't think I've ever used coconut oil. Olive oil also is one of the healthier oils.

One has to really work at salmon to wreck it for my seafood palate. I'd try this for sure.
