All I remember was they were good. In your recipe variant, I would leave out the parsley, as that would give it a particularly sharp taste. The cheese, too, is not necessary if we're going for something more traditional.

But your notes on sulphur are interesting!

The article about the veggie latkes did say to use about 1/3 of whatever the veggie combo with the potato - as the potato starches help glue the whole thing together. I'd think the broccoli could work as long as it was smaller and there was some potato in it.

But...you bring up a point about the "too green" tasting... broccoli is one of those foods high in sulfur = which means they need to be cooked at lower temperatures for a slower time (like eggs or liver or similar high sulfur type foods.). Too high in temperature, the sulfur starts coming off and gives the food that sort of acrid taste... hard to describe ... yuckky. So maybe frying the latkes might be a bit too hot for broccoli ??

soooo, having said that, I did find a recipe for potato broccoli latkes!

I would think broccoli and cauliflower would be a good combo - or maybe broccoli with potatoes. I'm not too sure about just broccoli, though - in my imagination, it might be a bit too green tasting, if that makes sense.

Kind of reminds me of this amazing Sri Lankan dish, that was basically semi-mashed potatoes mixed with spices and chilis, then dipped in batter and deep fried! They were delicious!

But I do prefer my latkes cooked from raw potatoes - totally different flavor.

wow! sounds really good. And tasty!

One of our local Indo-pak restaurants makes a fried veggie thing that is somewhere between a fritter and a latke in shapes... seems like they must be using "yesterday's leftovers" because it's always a different veggie each time... I forget the word they used for it but it's essentially the same thing and tastes similar (especially the days when they are using potato only - but most days its a combination of veggies. Yum!
